I had these beans at a dinner party. I'm so glad the hostess was willing to share the recipe. A very unique and different way to serve fresh green beans.

1 pound fresh green beans, trimmed
2 tablespoons olive oil
1 onion, chopped
1 clove garlic, chopped
1 tablespoon chopped fresh parsley
1 (14.5 ounce) can diced tomatoes including juice
1 tablespoon white wine vinegar
1 teaspoon ground cumin
1 pinch white sugar, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil
1 clove garlic, chopped

Steps:

  • Bring a pot of lightly-salted water to a boil; stir in the green beans and return to a boil. Reduce the heat to medium, and cook the green beans until just tender, about 8 minutes. Drain.
  • Heat 2 tablespoons of olive oil in a large skillet over medium heat; cook and stir the onion, 1 clove of garlic, and parsley in the hot oil until the onion is translucent, about 5 minutes. Stir in the tomatoes, wine vinegar, and cumin; bring the mixture to a boil, reduce heat to medium-low, and simmer for 30 minutes to thicken the sauce. Transfer the sauce to a bowl.
  • In a clean skillet, heat 1 tablespoon of olive oil over medium-low heat; cook and stir 1 clove of chopped garlic in the hot oil until fragrant beginning to brown, 2 to 3 minutes. Return the cooked green beans to the skillet; cook and stir to reheat the beans and coat them with oil. Pour the sauce over the beans and stir to coat. Serve hot.

2 pounds fresh green beans, trimmed and cut in half
1 tablespoon olive oil
1 medium onion, chopped
2 garlic cloves, minced
2 cans (15 ounces each) tomato sauce
1 teaspoon sugar
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place green beans in a steamer basket. Place basket in a large saucepan over 1 in. of water; bring to a boil. Steam, covered, 8-10 minutes or until crisp-tender. Transfer to a serving bowl., Meanwhile, in a small saucepan, heat oil over medium-high heat. Add onion and garlic; cook and stir until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, 15 minutes. Drizzle over beans.

1 garlic clove (minced)
1/2 cup onion (diced)
3 roma tomatoes (diced and seeded)
1 (4 ounce) can black olives, sliced (drained)
1/4 teaspoon oregano
2 (10 ounce) packages French style green beans (thawed & drained)
salt and pepper
5 ounces feta cheese (crumbled)

Steps:

  • Saute onion and garlic in olive oil for a minute or so, be careful not to burn.
  • Stir in diced tomaotes,olives & oregano; cook over med. heat for 3 minute.
  • Add drained green beans, simmer for another 5 minutes.
  • Right before serving, crumbled feta cheese on top.

2 lbs fresh green beans or 2 lbs other long string beans
2 cups tomatoes, peeled and finely chopped
2 onions, finely chopped
1 cup olive oil
1 green pepper, thinly sliced
1 bunch fresh parsley, finely chopped
2 -3 garlic cloves, finely chopped
1/4 cup water
sea salt
fresh ground pepper

Steps:

  • Wash the beans, cut off the tips and remove the stringy piece of fiber along the seam. Rinse the beans.
  • In a soup pot, sauté the onions in olive oil with a wooden spoon until they turn translucent.
  • Stir in the garlic and sauté a few minutes more. Add all the remaining ingredients and the water. Stir well, reduce heat, and simmer covered for 50 minutes or until the beans are tender. (Add more water if needed during cooking - boiling water.).
  • Serve warm. On the side, consider tzatziki or feta cheese, and certainly some great country bread.
  • Note: This serves 4 as a main dish, 6-8 as a side. For a more substantial dish, add 4 medium potatoes, peeled and cut into large chunks.
