Steps:

  • Preheat the oven to 425 degrees. Slice the baguette at an angle 1/2-inch-thick. Brush both sides of the bread with olive oil and sprinkle one side with salt and pepper. Bake for 10 minutes, until lightly toasted.

In Greece they make this dish with rusks - twice-baked breads made of different types of flour, including barley, wheat, chickpea flour and rye. You can make your own rusks by drying out thick slices of whole grain bread in the oven. It's a good way of preserving bread before it goes stale or moldy, but it does take about eight hours. For a quicker version, toast thick pieces of bread - or just look for rusks in a local Greek market.

4 thick slices whole-grain country bread
1/4 cup finely chopped red onion
1 pound ripe, locally grown tomatoes
1 tablespoon sherry vinegar or red wine vinegar
1 tablespoon capers, rinsed
1 garlic clove, minced or puréed
1 tablespoon chopped fresh dill or parsley
2 tablespoons plus 1 teaspoon extra virgin olive oil
1 to 2 ounces feta, crumbled (optional)
2 teaspoons dried oregano

Steps:

  • Toast the bread and set aside, or dry it in a very low oven (a pilot light provides sufficient heat, if you have one) for 8 to 10 hours. Sprinkle rusks with a little water to reconstitute.
  • Place the onion in a bowl, and cover with cold water. Allow to sit for five minutes, drain, rinse and dry on paper towels. Cut the tomatoes in half at the equator, and grate on the large holes of a box grater set in a wide bowl. Combine the grated tomatoes with the vinegar, capers, garlic, onion and dill or parsley. Season with salt and pepper.
  • Drizzle 1 teaspoon of the olive oil over each of the toasted bread slices or rusks. Top with the tomato mixture. Sprinkle on the cheese and oregano, drizzle on the remaining olive oil and serve.

1 loaf (18 inch) baguette French bread (8 oz), cut into 1/2-inch-thick slices (about 30)
3 tablespoons olive oil
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped yellow bell pepper
3 tablespoons finely chopped red onion
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/2 teaspoon chopped fresh oregano leaves
1/2 teaspoon chopped fresh thyme leaves
1/4 cup reduced-fat balsamic vinaigrette
20 pitted kalamata olives, finely chopped (1/3 cup)
1/4 cup crumbled feta cheese (1 oz)
3 tablespoons finely chopped fresh parsley, if desired

Steps:

  • Heat oven to 375°F. In 15x10-inch pan with sides, place bread slices in single layer. Using pastry brush, lightly brush tops of slices with about 2 tablespoons of the oil. Bake 8 to 10 minutes or until lightly browned and crisp.
  • Meanwhile, in 10-inch nonstick skillet, heat remaining 1 tablespoon oil over medium-high heat 1 to 2 minutes or until hot. Add bell peppers, onion, garlic, salt, oregano and thyme. Cook 3 to 5 minutes, stirring occasionally, until vegetables are crisp-tender.
  • Transfer vegetables to medium bowl. Add vinaigrette and olives; stir until vegetables are coated.
  • Top each bread slice with 1 teaspoon vegetable mixture. Sprinkle with cheese and parsley.

1 tsp (5 mL) lemon pepper
1 tsp (5 mL) dried basil
1 tsp (5 mL) garlic powder
10 oz (300 g) 1 package of frozen chopped spinach, thawed and squeezed dry
14 oz (398 mL) 1 can of pasta-style or Italian seasoned diced tomatoes
½ cup (125 mL) shredded mozzarella cheese
2 Flatbreads, naan bread or baked pizza crusts(12 in/30 cm)
1 ¼ cup (300 mL) seasoned crumbled feta cheese (200 g package)
½ cup (125 mL) sliced pitted ripe olives

Steps:

  • Pan-fry beef, lemon pepper, basil and garlic powder in non-stick skillet over medium-high heat for 8 to 10 minutes, breaking up with back of spoon, until browned and completely cooked. Drain. Stir in spinach, tomatoes and mozzarella cheese. Remove from heat.
  • Lay flatbreads on ungreased pizza pans. Spread beef mixture over flatbreads; sprinkle with feta cheese and olives.
  • Broil 4 to 6 inches (10 to 15 cm) from element for 5 minutes or until hot and starting to brown on edges. Let stand for a few minutes before cutting into small wedges or triangles for appetizers.

really good quality country bread, like a sourdough
extra virgin olive oil
sea salt or kosher salt
dried Mediterranean oregano

Steps:

  • Slice the bread 1 inch thick; grill on the bbq or under the grill in the oven until golden and crusty outside, but still soft and chewy inside- this takes about a minute per side, but it really depends on your grill temperature; drizzle with the olive oil and sprinkle with sea salt and oregano, to taste; enjoy!
  • I haven't really put down the number of servings cause you can make as many as you like, but count on a couple of slices per person cause they're so delicious.
  • Note: you can do a variation on this by rubbing a cut garlic clove on the grilled bread before adding the remaining ingredients.
