- Place artichokes and olives in a food processor; cover and pulse until finely chopped. Unfold 1 pastry sheet on a lightly floured surface; spread half of the cream cheese over half of pastry. Top with half of the artichoke mixture. Sprinkle with half of the Parmesan cheese. Fold plain half over filling; press gently to seal., Repeat with remaining pastry, cream cheese, artichoke mixture and Parmesan cheese. Whisk egg and water; brush over tops. Sprinkle with sesame seeds. Cut each rectangle into sixteen 3/4-in.-wide strips. Twist strips several times; place 2 in. apart on greased baking sheets., Bake at 400° for 12-14 minutes or until golden brown. Serve warm, with tzatziki sauce if desired.

SESAME CARROTS
Steps:
- Special equipment: a mortar and pestle or spice grinder
- For the gomasio: In a dry saute pan set over medium heat, cook the sesame seeds until toasted a light brown. Remove to a mortar and pestle or spice grinder. Add the sea salt and crush until about half the seeds are crushed.
- For the carrots: Using a vegetable peeler, shaved the carrots into ribbons. In a large bowl, mix the carrot ribbons with the sesame oil, black sesame seeds, coriander and 1 tablespoon of the gomasio.
- For the sauce: In a small bowl, combine the yogurt, mayonnaise, sriracha and curry powder. Mix well then smear on a plate. Top with the carrot ribbons and garnish with more gomasio.
GREEK CARROT BREADSTICKS WITH SESAME SEEDS

Steps:
- Add the flours, baking powder, salt, paprika and turmeric to the bowl of a stand mixer and whisk until incorporated.
- Peel and grate the carrots and add them to the dry ingredients. Stir to distribute evenly.
- Add the wine, olive oil and sunflower oil to the dry ingredients. Using a dough hook, mix all the ingredients on low speed until the mixture comes together to form a ball. Cover the dough and let it rest for 15 minutes. The dough should feel lightly oily and be very easy to handle.
- Preheat the oven to 360°F.
- Divide the dough into quarters. Sprinkle the sesame seeds on a baking sheet and set it aside.
- Working with one of the four quarters of dough at a time, take a small piece of dough, about the size of a walnut, and roll it on a clean surface to form a rope about 10" long. Once each quarter of the dough is rolled into about 10 ropes, pick up each one and re-roll it gently on the sheet pan with the sesame seeds.
- Place the sticks on two parchment paper-lined sheet pans and bake for 25 minutes, or, until the bottoms of the breadsticks are lightly brown. Move to a rack and let them cool!
SESAME ONION BREADSTICKS

- In a large skillet, heat butter over medium heat. Add onions; cook and stir until tender. Stir in paprika; cool completely. , On a lightly floured surface, roll dough to a 16x14-in. rectangle. Spread onion mixture down 1 half of the rectangle. Fold dough lengthwise in half over onion mixture, forming a 16x7-in. rectangle; seal edges., Cut dough lengthwise into thirty-two 1/2-in.-thick strips. Twist each strip 2 or 3 times. Place 2 in. apart on greased baking sheets. Cover with kitchen towels; let rise in a warm place until almost doubled, about 45 minutes. Preheat oven to 375°., Brush breadsticks with beaten egg; sprinkle with sesame seeds. Bake 13-16 minutes or until golden brown. Remove from pans to wire racks to cool.

Steps:
- Remove greens from carrots and then remove and discard as much of the stems as possible, keeping only the leaves. Chop leaves to about 1/2 inch. Reserve carrots for another use.
- Bring a large pot of lightly salted water to a boil; parboil greens for 2 minutes then strain and shock in ice water. Drain and squeeze dry. Place in a new bowl of cold water and refrigerate for 8 hours, or overnight, changing water 1 to 2 times during the process to help eliminate extra bitter flavor. Drain and squeeze again.
- Mix sesame seeds, vinegar, sesame oil, soy sauce, and sugar together in a medium bowl. Toss in carrot greens and almonds and mix well.
- Cover greens and refrigerate to marinate at least 1 hour before serving.

GLAZED CARROTS WITH TOASTED SESAME SEEDS
This is a very simple recipe that will teach you how to master the technique of glazing a vegetable, which is a great way to add a lot of flavor, color, and texture.

- Prepare the carrots, onion, and garlic as indicated above.
- In a medium saute pan over medium to medium-high heat, saute onion and carrots in 1 Tbsp. of the olive oil for 3 minutes, or until softened. Do not brown. Add the garlic.
- When the onions start to sweat, add the carrots and stir. Add the orange juice and allow to simmer and lightly reduce with carrots/onion/garlic mixture. Add the carrot juice, and water if necessary, to ensure that the level of liquid is almost to the top of the vegetables. Return to a simmer. Lightly season with salt, pepper. Drizzle in honey, add butter, and simmer, uncovered, until carrots are tender and liquid has reduced to a sauce consistency, about 15 minutes.
- Remove garlic clove. Taste for seasoning and doneness; add splash of water and 1 Tbsp. olive oil and stir. Swirl carrots in the pan, and allow water to reduce. The final consistency should be thick and glossy, almost creamy, but not dry. Meanwhile, toast sesame seeds in a dry pan with a light drizzle of olive or sesame oil for about 5 minutes, flipping or stirring, until lightly toasted in color. Set aside. (This can be done in advance.) When the carrots have reduced fully, sprinkle the sesame seeds onto carrots and stir.
- Pour carrots into a serving bowl and enjoy.

- Bring honey to a boil in a heavy saucepan or Dutch oven over medium heat, stirring with wooden spoon. Add sesame seeds, lemon juice, cinnamon, cardamom, and coriander, tossing to combine until light and golden.
- Turn the dough onto a cookie sheet lined with half of the parchment or wax paper and fold the other half over the dough. Roll out dough between papers to a 1/4 inch thinness. Allow to cool.
- Using a ruler and a pizza cutter or sharp knife, cut the dough through the papers into bars or squares of your favorite size. To serve, peel papers off and enjoy your sesame bar!

- In the bowl of a tabletop mixer that is fitted with the dough hook attachment add all of the starter ingredients and whisk together with a fork. Set aside for 8-10 minutes. Once a foamy cloud forms on the surface of the liquid, the yeast is active.
- Combine the bread and all-purpose flour along with the salt in a large mixing bowl and whisk together.
- Add all of the flour mixture to the mixer along with the olive oil. Knead on low speed for 8-10 minutes.
- Add 2 tablespoons of olive oil to a large bowl and transfer the dough to the bowl. Toss to coat and cover the bowl with plastic wrap. Set aside in the warmest part of your home until doubled in volume. About 1 and ½ - 2 hours.
