1/2 cup plus 2 Tbsp. prepared GOOD SEASONS Italian Dressing Mix, divided
1-1/4 lb. boneless skinless chicken breasts, cut into strips
1/2 cup dried cranberries
1 bag (10 oz.) salad greens
1/2 cup chopped toasted walnuts

Steps:

  • Cook chicken in 2 Tbsp. of the dressing in large skillet on medium-high heat 8 to 10 min. or until cooked through.
  • Add cranberries; cook until heated through, stirring occasionally.
  • Toss with remaining ingredients. Serve immediately.

2 tablespoons honey Dijon mustard
1/4 teaspoon pepper
2 cups cubed rotisserie chicken
1 cup shredded Swiss cheese
1/2 cup chopped celery
1/2 cup dried cranberries
1/4 cup chopped walnuts
1/2 teaspoon dried parsley flakes
8 lettuce leaves
16 slices pumpernickel bread

Steps:

  • In a large bowl, combine the mayonnaise, mustard and pepper. Stir in the chicken, cheese, celery, cranberries, walnuts and parsley., Place lettuce on 8 slices of bread; top each with 1/2 cup chicken salad. Top with remaining bread.
