HEALTHY GREEK COLESLAW
Skip the heavy mayonnaise dressing, this style coleslaw is tossed with a lemony Greek dressing.

Steps:
- Add shredded cabbage and drained and rinsed chick peas to a large bowl.
- Dice the English cucumber and red onions and add to the bowl with the cabbage along with sliced kalamata olives, cherry tomatoes, and chopped peperoncini. Toss gently until mixed well.
- Pour about 1/2 cup Greek vinaigrette over the vegetables and toss again, adding more vinaigrette if needed.
- Top with crumbled feta cheese and serve.

Steps:
- Add 1/4 teaspoon salt to the grated cucumbers, mix lightly and set aside for about 10 minutes.
- In a large mixing bowl, add the olive oil, mint, garlic, lime juice, remaining 1/4 teaspoon salt and black pepper. Mix well and let sit for about 5 minutes.
- Squeeze out the excess juice from the grated cucumbers and add the cucumbers to the dressing. Mix well.
- Add the yogurt and fold gently into the dressing. Keep aside 1 tablespoon each of the red and green bell peppers for garnish.
- Add the rest of the peppers to the yogurt mixture and mix gently.
- Garnish with sprigs of fresh mint.

LAHANOSALATA (GREEK CABBAGE SLAW / SALAD)
This is a very fresh-tasting cabbage salad - very unlike the slaws you're probably used to. Comes together in no time at all (especially if you use one of those bags of slaw mixes).

Steps:
- Core the cabbage and shred as for making traditional coleslaw.
- Put the cabbage and carrot in a large bowl. Toss well.
- In a small bowl mix the olive oil, lemon juice and garlic (if using).
- Add salt to taste.
- Just prior to serving, pour over the salad and toss to coat.
- Adjust seasonings and olive oil or lemon juice as needed.
- Note: This is really lovely served with a generous hunk of feta cheese - either crumbled in, or served alongside so you can nibble on pieces of creamy cheese between bites of crispy salad.

- Add the shredded cabbage to a large bowl. Sprinkle the salt over the cabbage, and work the salt into the cabbage with your hands. Let the mixture rest for 30 minutes. This will remove water from the cabbage, which can make for a soggy coleslaw.
- Meanwhile, make the dressing. Whisk to combine all the dressing ingredients in a medium-size bowl.
- Pour the salted cabbage into a colander and rinse with fresh water. Place the cabbage on one half of an absorbent dish towel (you may want to layer two dish towels), layering a portion of the dish towel over the cabbage. Press on the top of the towel to remove water from the cabbage. I prefer to squeeze the dish towel, with the cabbage inside, over the sink.
- Rinse out the large bowl, and return the cabbage to the bowl, along with the remaining coleslaw ingredients: carrots and onions.

- Finely shred the cabbage and place in a bowl. Cut off the tips of the carrot. Peel and discard its outer skin and grate it using a box grater. Place in the bowl.
- Cut off the stem and bottom of the tomato and cut in half. Then cut each half into thin slices. Place in the bowl as well.
- Cut the onion and bell pepper into thin slices as well and place in the bowl with the remaining ingredients.
