Pan-Fried Mahi Mahi with Mushrooms and Wild Rice image

This is the recipe I created when I could add fish to my recent detox diet.

1 tablespoon coconut oil
2 (4 ounce) mahi mahi fillets
1 cup fresh spinach leaves
4 medium mushrooms, sliced
1 tablespoon green onions, chopped, or to taste
3 cloves garlic, minced, or to taste
1 tablespoon chopped fresh basil, or to taste
sea salt to taste
1 cup hot cooked wild rice

Steps:

  • Heat oil on a griddle over medium heat. Add mahi mahi fillets to one side of the griddle and cook until it flakes easily with a fork, about 12 minutes, turning halfway through.
  • At the same time, saute spinach, mushrooms, green onions, and garlic on the other side of the griddle. Add basil and salt to the vegetables and fish.
  • Serve over wild rice.

3 tablespoons olive oil, divided
4 mahi mahi or salmon fillets (6 ounces each)
3 medium sweet red peppers, cut into thick strips
1/2 pound sliced baby portobello mushrooms
1 large sweet onion, cut into thick rings and separated
1/3 cup lemon juice
3/4 teaspoon salt, divided
1/2 teaspoon pepper
1/4 cup minced fresh chives
1/3 cup pine nuts, optional

Steps:

  • In a large skillet, heat 2 tablespoons oil over medium-high heat. Add fillets; cook until fish just begins to flake easily with a fork, 4-5 minutes on each side. Remove from pan., Add remaining oil, peppers, mushrooms, onion, lemon juice and 1/4 teaspoon salt. Cook, covered, over medium heat until vegetables are tender, stirring occasionally, 6-8 minutes., Place fish over vegetables; sprinkle with pepper and remaining salt. Cook, covered, until heated through, about 2 minutes longer. Sprinkle with chives and, if desired, pine nuts before serving.

One 8-ounce fillet mahi-mahi, or any other firm white fish
Adobo seasoning, to taste, or garlic, salt and pepper
4 tablespoons olive oil
8 ounces peeled plantains
Vegetable oil, for frying
3 garlic cloves, chopped
3 ounces chicken chicharones
1/2 cup passion fruit juice
1/4 cup plus 2 tablespoons Chardonnay, or dry white wine
1/4 ounce fresh cilantro
3/4 cup (1 1/2 sticks) butter, cubed

Steps:

  • Rub mahi mahi with adobo and 1 tablespoon olive oil and set aside.
  • Heat vegetable oil in a large heavy skillet until it reaches 365 degrees F. Cut plantains into small medallions, and then deep-fry until fully cooked, about 3 minutes. Remove from oil and let drain on a paper towel-lined plate. When drained, place plantains in a mortar.
  • Combine garlic and chicken chicharones with the plantains in the mortar and mash them together until mixed. Set mofongo aside.
  • Heat 3 tablespoons olive oil in a medium skillet over medium-high heat. Add fish and cook for 4 minutes on each side, or until cooked through. Remove fish and let it rest on a plate. Add passion fruit juice and wine to skillet and let reduce over medium-high heat for a few minutes. Whisk in butter, a few cubes at a time, until the sauce thickens.
  • To serve, place mofongo in the center of the plate with mahi-mahi on top. Cover with the beurre blanc.

Just a simple recipe I came up with on the spur of the moment. Serve with steamed broccoli and you have an easy, not-too-fishy tasting meal. Prep time includes one hour of marinating.

1/2 cup olive oil
1 tablespoon fresh lime juice
1 teaspoon garlic salt (or to taste)
1 teaspoon black pepper (or to taste)
6 mahi mahi fillets
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup red wine
1 tablespoon garlic powder
1 tablespoon soy sauce
4 cups cooked wild rice

Steps:

  • Combine and mix together olive oil, lime juice, garlic salt, and black pepper in a bowl.
  • Dip each fish fillet in the olive oil mixture, making to sure to coat each fillet entirely.
  • Set coated fillets aside and allow to marinate at room temperature for an hour.
  • After 45 minutes, combine soup, red wine, garlic powder, and soy sauce in a sauce pan.
  • Mix together well and allow to simmer, stirring occasionally to prevent sticking.
  • While sauce is simmering, place fish fillets on the grill and cook 4-5 minutes per side, turning only one time.
  • Place each grilled fillet atop a bed of wild rice and top with the sauce.

2 tablespoons cooking oil
1 teaspoon minced ginger
2 teaspoons minced garlic
2 green onions, chopped
1/2 cup chopped onion
1/2 cup diced celery
1/2 cup frozen peas and carrot, thawed
1/2 cup cooked small shrimp
1/4 cup diced cooked ham
4 cups cooked wild rice
2 tablespoons oyster sauce
2 teaspoons sesame oil
1 pinch white pepper
1/4 cup chicken broth
1 egg
2 teaspoons cooking oil

Steps:

  • To make golden egg threads, heat a small nonstick frying pan over medium heat until hot.
  • Add 2 tsps.
  • cooking oil and 1 lightly beaten egg; tip the pan to spread the egg thinly over the bottom of the pan.
  • Cook the egg until barely set; turn once and cook the other side about 30 seconds.
  • Remove and let cool.
  • Cut into thin shreds.
  • Heat a wok over medium high heat until hot.
  • Add the cooking oil, ginger, and garlic and stir fry for 10 seconds.
  • Add the green onions, onion, celery, peas and carrots, shrimp, and ham and stir fry for 2 minutes.
  • Reduce the heat to medium low.
  • Add the wild rice, egg shreds, oyster sauce, soy sauce, sesame oil, white pepper ant the chicken broth.
  • Toss to mix well.
