Time 3h30m

Yield 8

Number Of Ingredients 14

2 cups penne pasta
¼ cup red wine vinegar
1 tablespoon lemon juice
2 cloves garlic, crushed
2 teaspoons dried oregano
salt and pepper to taste
⅔ cup extra-virgin olive oil
10 cherry tomatoes, halved
1 small red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cucumber, sliced
½ cup sliced black olives
½ cup crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Rinse with cold water and drain well in a colander set in the sink.
  • Whisk together the vinegar, lemon juice, garlic, oregano, salt, pepper, and olive oil. Set aside. Combine pasta, tomatoes, onion, green and red peppers, cucumber, olives, and feta cheese in a large bowl. Pour vinaigrette over the pasta and mix together. Cover and chill for 3 hours before serving.

KITTENCAL'S CREAMY GREEK FETA SALAD DRESSING

Kittencal's Creamy Greek Feta Salad Dressing image

Plan ahead the dressing needs a few hours chilling time before serving, you may want to adjust some ingredients after you make this, I would suggest to start with the stated amounts and add in more after mixing, you may use 3 tablespoons freshly grated parmesan cheese in place of the feta cheese --- if you are not a lover of garlic then I suggest to pass this by! --- servings are only esitmated.

Provided by Kittencalrecipezazz

Categories     Salad Dressings

Time 5m

Yield 4-6 serving(s)

Number Of Ingredients 11

1 -2 medium garlic clove, minced
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar
2 tablespoons olive oil
1 teaspoon Worcestershire sauce
1 tablespoon corn syrup (or to taste, no substitutes, sugar or honey will alter the flavor and make it too sweet)
1 1/2 teaspoons dried oregano (can use more)
1 teaspoon dried parsley
1/4 cup crumbled feta cheese
salt & freshly ground black pepper

Steps:

  • In a food processor or blender process all ingredients together except the salt and pepper until blended and smooth.
  • Add in a little more crumbled feta cheese if you prefer a chunky-style dressing.
  • Season with salt and black pepper.
  • Refrigerate for at least 2 or more hours before serving.

KITTENCAL'S GREEK FETA SALAD DRESSING

Kittencal's Greek Feta Salad Dressing image

Plan ahead this dressing has a 24 hour chilling time to blend the flavors, don't even think about serving this right away! this must be made on a food processor for the feta to combine properly --- the success of this dressing will highly depend on the quality of olive oil, oregano and feta cheese that you use I recommend purchasing those ingredients in a Greek grocery store --- cooking time is 24 hour refrigeration time ---- also see my highly-rated recipe#66596 --- and my mayonnaise-based recipe#359292

GREEK SALAD DRESSING

Greek Salad Dressing image

Make your own Greek dressing with this simple recipe. It's healthy and delicious. Drizzle this bold Greek vinaigrette on your homemade salads-it will keep in the fridge for one week! Recipe yields about 3/4 cup.

Provided by Cookie and Kate

Categories     Salad dressing

Time 5m

Number Of Ingredients 8

½ cup extra-virgin olive oil
¼ cup red wine vinegar
2 medium cloves garlic, pressed or minced
2 teaspoons honey or maple syrup, to taste
½ teaspoon dried oregano, to taste
½ teaspoon fine salt
Freshly ground black pepper
Pinch of red pepper flakes, for heat (optional)

Steps:

  • In a liquid measuring cup or small bowl, combine the vinegar, garlic, honey, oregano, salt, several twists of black pepper, and a pinch of red pepper flakes (if desired). Whisk until blended.
  • Slowly drizzle in the olive oil while whisking. Stir until the mixture is fully blended.
  • Taste, and adjust as needed-add another teaspoon of honey if the mixture tastes too acidic, or another 1/4 teaspoon oregano for more herbal flavor. If the mixture is overall too bold for your liking, dilute it with a splash of olive oil, or if it's just not quite right yet, add more salt and pepper.
  • Store leftover dressing in the refrigerator, covered, for up to 1 week. It will separate over time, so just whisk it back together before serving (if the olive oil solidifies a bit in the refrigerator, don't worry, that's normal-just let it warm up for about 5 minutes at room temperature or microwave for 10 to 20 seconds).

  • As said before, the secret to make a delicious Greek salad is in the ingredients: juicy tomatoes, crisp cucumber, creamy feta cheese, good quality extra virgin olive oil and some tangy black olives will really make a difference.
  • To make this Greek salad recipe (Horiatiki), start by preparing your vegetables. Wash thoroughly and strain the vegetables. Cut the tomatoes into wedges, slice the onion into thin rings, cut the cucumber in thick slices and place everything in a large bowl. Don’t forget to add the olives as well.
  • Season with salt and pour over the extra virgin olive oil and vinegar. Toss everything together, so that the flavours mix. Be careful not to add too much salt, as the feta cheese and the olives are salty enough.
  • Greek salad (Horiatiki) is always served with feta cheese on top, a drizzle of olive oil and dried oregano. Enjoy your delicious Greek salad as a side dish or as a light summer meal with lots of crusty bread aside!

  • PASTA: Bring water to a rolling boil and generously salt the water (See Note 1) before adding in the pasta. One tablespoon fine sea salt to about 16 cups of water is a good guide. Once the salt has been added, wait for the water to come back to a boil, and then add in all the pasta. Cook pasta to al dente according to package directions (if using Barilla Mini Farfalle, this is 7 minutes). Drain and rinse in cold water until cool.
  • VEGGIES: Meanwhile, prep the veggies. Halve (and pit if needed) the olives, dice the red onion and green pepper (See Note 2), cut the cucumbers into half moons (See Note 3) and halve the cherry tomatoes. Mince the parsley and crumble or cut the feta into small cubes. Add all of these ingredients to a large bowl and then stir in the completely cooled pasta.
  • DRESSING: Combine all of the dressing ingredients in a mason jar. Shake thoroughly to combine, making sure no honey or Dijon is stuck on the bottom. Use a spoon to stir, and then shake again if needed. Refrigerate until ready to use. To serve, shake dressing again, right before adding to the salad and then drizzle over salad. Toss, add in feta, and toss again. Chill for 30 minutes to an hour before serving. At serving time, gently toss salad again and taste to adjust any seasonings as needed.

Blend/process until smooth and creamy. Add 1 tablespoon milk and blend again. Check consistency and, if a thinner dressing is desired, continue adding 1 tablespoon milk at a time -- blending in between -- until preferred consistency is reached.
  • Adjust seasonings to taste, transfer dressing to a bowl or jar, tightly cover, and refrigerate for a few hours before serving (which allows time for the flavors to blend). If the consistency of the dressing is too thick after chilling, thin it out with a splash of additional milk.
