¾ cup butter, softened
1 ½ cups sugar
3 eggs
1 teaspoon vanilla extract
½ cup milk
1 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 tablespoon cinnamon
4 apples, peeled and cut into ¼-inch (6.3mm) thick slices, recommended: granny smith or pink lady
1 cup butter, melted
1 cup brown sugar

Steps:

  • Preheat oven to 350°F (180°C) and grease a 9-inch (23cm) cake pan.
  • In a bowl, cream together the butter and sugar.
  • Whisk in the eggs, vanilla and milk until fully incorporated.
  • Add the flour, baking powder, salt, and cinnamon. Whisk until combined.
  • For the sauce, melt butter in a saucepan over medium heat, and stir in the brown sugar. Bring to a boil and continue to stir for 30 seconds, or until vigorously bubbling.
  • Pour the sauce into the greased cake pan.
  • Arrange the apples on top of the sauce in a circular pattern. Pour cake batter on top of apples and smooth the top of the batter.
  • Bake for 45-55 minutes, or until the cake is done (the top will spring back when gently poked).
  • Cool for 10-15 minutes and loosen the sides of the cake by running a butter knife around the edge.
  • Place a plate upside down on top of the pan, then invert the pan, flipping the cake onto the plate.
  • Garnish slices with vanilla ice cream or whipped cream.

Steps:

  • Heat oven to 350°F. In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar and walnuts over butter; stir to combine. Sprinkle chopped apples in pan.
  • Mix cake as directed on box for 13x9-inch pan, using water, oil and eggs. Pour batter over apples and walnuts in pan.
  • Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack 2 minutes; run knife around sides of pan to loosen cake. Place heatproof serving plate upside down on pan; turn plate and pan over. Remove pan. Serve cake warm.

3 tablespoons ground cinnamon, divided
5 medium apples - peeled, cored, and sliced
4 cups all-purpose flour
1 ½ cups unsweetened apple juice
1 ½ cups white sugar
1 cup butter, softened
4 eggs
½ cup milk
1 tablespoon vanilla extract
2 teaspoons baking powder
2 teaspoons salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cover the bottom of a 10x15-inch baking pan with brown sugar and 2 tablespoons cinnamon. Layer apple slices on top.
  • Place flour, apple juice, white sugar, butter, eggs, milk, remaining 1 tablespoon cinnamon, vanilla extract, baking powder, and salt in the bowl of a stand mixer fitted with the paddle attachment. Mix until completely smooth, 5 to 10 minutes; the longer you mix, the fluffier the cake will be.

5 apples, peeled and thinly sliced
2 ½ cups white sugar, divided
¼ stick unsalted butter, melted
½ cup brown sugar
¼ cup raisins
1 ½ cups olive oil
1 ½ teaspoons ground cinnamon
5 eggs, separated
3 cups all-purpose flour
2 apples, grated
1 tablespoon baking powder

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line an 11-inch round baking pan with parchment paper.
  • Combine sliced apples, 1/2 cup white sugar, butter, and brown sugar in a large bowl. Mix together gently, being careful not to break apple slices. Pour sugary juice from the apple mixture into the prepared baking pan. Arrange sliced apples on top in a circle. Sprinkle raisins on top of apples and pour any remaining juice over all.

1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 350°F. Spray a 9-inch round cake pan with oil. In a medium bowl, whisk together flour, baking powder, and salt. In another medium bowl, whisk together 2/3 cup sugar, honey, eggs, melted butter, and milk. Whisk egg mixture into flour mixture until just combined.
  • In a small, heavy saucepan over high heat, combine remaining 2/3 cup sugar and 3 tablespoons water. Cook, swirling pan occasionally (do not stir), until mixture is deep amber, about 5 minutes. Remove from heat; stir in room-temperature butter. Immediately pour into prepared pan.

1 cup dark-brown sugar
4 apples (about 1 3/4 pounds), peeled, cored and cut into 1/4-inch wedges
1/2 cup sugar
1 egg
3/4 cup dark molasses
1 cup buttermilk
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon cinnamon
Very softly whipped cream

Steps:

  • Preheat the oven to 325 degrees. Grease the rim of a 10-inch cake pan with 1 tablespoon of the butter and then place it in the pan. Set the pan over very low heat and melt the butter across the bottom of the pan. Add the brown sugar and distribute evenly.
  • Make circles of overlapping apple slices on top of the brown sugar. Chop any remaining slices and place them in the gaps.
  • Using a mixer, blend 1/2 cup of the butter and the sugar on medium-low speed. Increase the speed to high and cream until light and fluffy.
  • In a medium bowl, whisk together the egg, molasses and buttermilk. In a separate bowl, sift together the flour, baking soda, salt, ginger and cinnamon. Alternate mixing the flour and molasses mixtures into the butter mixture, adding the next once the last has been incorporated.
  • Pour the batter into the pan. Bake for 45 to 50 minutes. Let cool on a rack for 10 to 15 minutes, then turn out onto a platter. Serve warm or cool with very softly whipped cream.

2 tablespoons plus 1 teaspoon unsalted butter
5 McIntosh apples (1 3/4 pounds), peeled, cored, and cut into 8 wedges each
1/2 cup plus 3 tablespoons sugar
1 large egg
1/2 cup buttermilk
1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/2 teaspoon baking powder
1/4 teaspoon salt
Butter-flavored vegetable spray

Steps:

  • Heat oven to 350 degrees. Lightly spray an 8-by-1 1/2-inch round cake pan with vegetable spray and set aside. In a large nonstick skillet, melt 1 teaspoon butter over medium-high heat. Add the apples, cut side down, and sprinkle them with 3 tablespoons sugar; cook until the apples are tender and caramelized, 4 to 5 minutes on each side. Remove from heat.
  • Arrange the apples, cut side down, in the prepared cake pan so that they fit snugly together. Fill in any cracks with small pieces of apple, so that the batter wont leak through. Set pan aside.
  • Melt remaining 2 tablespoons butter; set aside. Break egg into a food processor; process for about 5 seconds, then while processor is running, add melted butter and buttermilk through the feed tube.
  • In a small bowl, whisk together flour, remaining 1/2 cup sugar, spices, baking powder, and salt. Add dry ingredients to mixture in food processor. Cover and pulse until batter is combined, about 20 pulses.
  • Pour the batter over sliced apples. Using a spatula, spread batter to completely cover the apples. Bake until cake is golden brown and a tester inserted in the center comes out clean, 40 to 45 minutes. Remove from oven and place on a wire rack to cool for about 15 minutes before inverting cake onto a serving plate.
