BARBECUE GREEN BEAN BAKE
This recipe was given to me at a Bible study picnic by a dear lady who loved to make up her own recipes. I've shared it with many friends, including missionaries who have taken it to other countries!

Steps:
- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Saute onion in drippings until tender. Add the ketchup, brown sugar and Worcestershire sauce; cook and stir until mixture comes to a boil., Place green beans in a greased 1-1/2-qt. baking dish; top with onion mixture and bacon. Cover and bake at 350° for 30-35 minutes or until beans are tender.

HOMEMADE BARBECUE SAUCE
This is good for baking chicken or ribs in. Easily doubled or tripled for your needs. Vegetables are also really good cooked in this sauce.

- In a medium nonporous bowl, combine the butter or margarine, onion, green bell pepper, water, ketchup, mustard powder, salt, celery seed, brown sugar and lemon juice. Mix well and use on your choice of meat.

BARBECUED STYLE GREEN BEANS
Found this in an old cookbook of mine. I tried this with a combination of ketchup, and BBQ sauce, and we liked the results.

Steps:
- Brown bacon in skillet until crisp, and then break into pieces, reserving 2 tablespoons bacon drippings.
- Saute onions in the bacon drippings.
- Combine ketchup, barbecue sauce, brown sugar, worcestershire, and salt, and stir into bacon and onions.
- Pour mixture over green beans, and mix lightly.
- Bake at 350 degrees for 25-30 minutes, or until beans are tender.

GREEN BARBECUE SAUCE
This Tex-Mex twist on traditional barbecue sauce combines tangy green tomatoes and crisp tomatillos for a tongue-tingling flavor sensation. You have to try this over your favorite recipe for barbecue chicken or shrimp. Better still, you can make this up to 1 week ahead. Recipe is from Southern Living.

GREEN CHILE SAUCE

- Preheat the oven to 400 degrees F. Toss the poblanos, tomatillos, jalapeno, onion, garlic and canola oil on a baking sheet and season with salt and pepper. Roast, turning once, until the vegetables are golden brown and soft, about 20 minutes.
- Let the vegetables cool slightly, then peel the garlic. Transfer the vegetables to a food processor, add the cilantro and process until smooth (add water to adjust the consistency, if necessary). Add the honey and more salt and pepper, if needed.
GREEN CHILE SAUCE

- In a small Dutch oven over medium-high heat, add the oil. When hot, add the onions and jalapeno and saute until just starting to caramelize, 4 to 5 minutes. Add the garlic and cook 1 minute more.
- Reduce the heat to medium, sprinkle the onion mixture with the flour and stir constantly until lightly browned, about 2 minutes. Add the reserved liquid from the chiles, 1 cup water, the vinegar and salt and stir until the liquid is smooth and all the flour is dissolved.
- Add the chiles and pepper and simmer for 5 to 6 minutes. Puree in a blender, or with a stick blender, and add the lime juice. Adjust to taste for salt and pepper. Refrigerate for up to 1 week.

- In blender, blend the green tomatoes, onions and garlic into a puree. Add this to a saucepan over medium heat. Bring the mixture to a boil, then lower the heat and keep it simmering for around 25 minutes, stirring occasionally. When stirring, take care as the hot sauce may splatter. After 25 minutes, remove it from the heat.
- Working in batches, push the cooked puree mix through a sieve, to remove the seeds and the skins of the tomatoes. Take your time pushing the sauce through to ensure only the seeds and toughest bits skins are left behind and nothing else.
- Add the puree back into the saucepan along with the vinegar, sugar, salt, molasses and spices and place the pan over low heat. Keep stirring regularly and simmer the sauce for approximately an hour and a half until it reduces and thickens.
- Wash preserving jars with warm soapy water. Rinse off all soap residue and dry the jars. Leave the sauce to cool before pouring into the clean jars.

- Ignite the charcoal in the Big Green Egg and heat, with the grid, to a temperature of 170°C. Meanwhile, peel the shallots and the garlic. Dice the shallots and finely chop the garlic. Remove the stem and seeds from the chilli pepper and crush the lemon grass. Cut the ginger and the stem ginger into slices.
- Heat the olive oil in the Green Dutch Oven on the grid. Add the shallots and garlic and cook until the shallots are translucent. Stir the dry spices (curry powder, paprika powder and mustard seed) into the shallot mixture and fry for approx. 2 minutes until the spices become fragrant. Stir in the cut ingredients (red chilli pepper, lemon grass, ginger and stem ginger), the sea salt, the brown sugar and the tomato purée and cook for 3-4 minutes. Add the liquid ingredients (pear juice, ketchup, sushi vinegar, black pepper sauce and Worcestershire sauce) and add the cardamom pods and star anise. Remove the pan from the EGG. Remove the grid, sprinkle a handful of Cherry Wood Chips on the charcoal embers and place the ConvEGGtor. Replace the grid and put the pan back on it. Close the lid of the EGG and heat to 120°C. Let the sauce simmer for about 20 minutes until it reaches the desired thickness. Sieve the BBQ sauce and scoop it into a clean container that can be closed. Let cool and close
