OLD-SCHOOL GREEN BEAN CASSEROLE RECIPE

Steps:
- Preheat oven to 350°F. Squeeze green beans lightly in hands to remove water.
- Heat 2 tablespoons of the butter in a Dutch oven over medium-high. Add mushrooms and shallot, and cook, stirring often, until mixture is deeply browned and caramelized, 8 to 10 minutes. Transfer mixture to a plate, and without wiping out Dutch oven, add remaining 6 tablespoons butter to Dutch oven.
- Melt butter over medium-high; whisk in flour, and cook, whisking constantly, 1 minute. Gradually add milk, whisking until smooth. Cook, whisking, until thickened and bubbly, about 4 minutes. Remove from heat, and whisk in Parmesan cheese, kosher salt, and black pepper until melted and smooth. Stir in green beans, mushroom mixture, and water chestnuts; spoon into a lightly greased 13- x 9-inch (3-quart) baking dish.
- Bake in preheated oven until bubbly around edges, 15 minutes. Remove from oven; top with fried onions or shallots. Return to oven; bake until topping is golden brown, 15 minutes.

- In a medium sized mixing bowl, add the Mushroom Soup
- Add the milk.
- Add the Black Pepper.
- Add the Green Beans.
- Add 2/3 cup of the Onions.
- Stir mixture well.
- Spoon into a 1 ½ quart casserole dish.
- Bake at 350ºF for 25-30 minutes, or until the bean mixture is hot and bubbling.
- Gently stir the bean mixture, sprinkle the remaining onions on top.
- Bake another 5 minutes, or until the onions on top are golden brown.
- Remove from oven and serve warm.
- Enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- Place green beans and soup in a large microwave-safe bowl. Mix well and heat in the microwave on HIGH until warm (3 to 5 minutes). Stir in 1/2 cup of cheese and heat mixture for another 2 to 3 minutes. Transfer green bean mixture to a casserole dish and sprinkle with French fried onions and remaining cheese.
- Bake in a preheated 350 degrees F (175 degrees C) oven until the cheese melts and the onions just begin to brown.

SOUTHERN GREEN BEAN CASSEROLE
Green bean casserole is one of my favorite foods and something I always look forward to as the holidays approach. Recently, I've discovered that I can cook it more than twice a year- just because it goes nicely with dinner! This Southern-style recipe is not your typical green bean casserole, but I promise it won't disappoint- mainly because of a lot of wiggle room to account for individual taste. (Note: this recipe makes 12 servings, so it's great for gatherings, but you can easily half all of the ingredients for your typical family dinner)

- Preheat oven to 350 degrees.
- Saute onion with garlic and bacon.
- Cut bacon into 1/2 inch pieces.
- Empty 4 cans cut Green Beans into 9 x 13 casserole dish.
- Combine 2 cans condensed Cream of Mushroom soup with milk, salt, pepper, brown sugar, onion and bacon.
- Pour soup mixture over Green Beans and mix well.
- Bake at 350 degrees for 30 minutes or until heated through.
- Stir and top with 1 cup French's Fried Onions.
- Return to oven and bake 5 more minutes or until onions are golden.

ABSOLUTELY DELICIOUS GREEN BEAN CASSEROLE FROM SCRATCH
No cans here! Fresh mushrooms, onion, and herbs with frozen green beans, sour cream, and cheddar cheese make this a delightfully tasty twist on the traditional casserole. I developed this recipe, longing for a 'no cans' version of the classic dish. I made this one year for my husband's family at Christmas time, and now they ask for it every year! My husband asks me to make it for dinner throughout the year.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place green beans into a saucepan and fill with about 1/2 inch of water. Bring to a boil and steam until beans are tender but still bright green, about 5 minutes. Drain and toss with the mushrooms. Set aside.
- Melt the butter in a large skillet over medium heat. Add the onion and parsley; cook and stir until onion is tender. Whisk in flour until blended, then mix in the lemon zest, salt, and pepper. Gradually whisk in milk, stirring constantly, so that no lumps form and then stir in sour cream. Warm over medium heat until the sauce begins to bubble. Dump in the green beans and mushrooms, stirring to coat.
- Remove from the heat and toss briefly with some of the Cheddar cheese and French fried onions, saving some of each to sprinkle over the top. Spoon into a 1 1/2 quart casserole dish and top with the reserved onions and cheese.
- Bake in the preheated oven until the cheese melts, about 15 minutes.

- Preheat the oven to 350°F and lightly spray a 9X13-inch baking dish with nonstick cooking spray.
- In a large skillet, cook the bacon over medium low heat until crisp. Remove to drain on paper towels, then crumble. Drain away all but about 2 tablespoons of the bacon grease, then return the pan to medium heat. Add the onions and cook, stirring occasionally, about 5 minutes or until translucent. Add the mushrooms and cook, stirring occasionally, for 5 minutes or until the mushrooms are golden brown. Add the garlic and cook for 1 minute. Stir in the undiluted mushroom soup and add the crumbled bacon back. Stir to combine. Stir in the milk and cheese. Stir until the cheese is melted. Add salt and pepper to taste. Fold in the green beans until well combined.
- Pour the mixture into the prepared dish. Top with the fried onions. Bake, uncovered, for 30 minutes or until the casserole is hot a bubbly.
