LAMB SHANKS WITH CAPERS AND OLIVES

Lamb Shanks with Capers and Olives image

Number Of Ingredients 10

2 tablespoons olive oil
4 small lamb shanks, well trimmed
salt and freshly ground black pepper
1 medium onion, chopped
3/4 cup dry white wine
1 cup peeled, seeded, and chopped fresh or canned tomato
1/2 cup chopped pitted black olives, such as Gaeta
2 cloves garlic, finely chopped
2 tablespoons capers, rinsed and chopped
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • 1 In a Dutch oven large enough to hold the shanks in a single layer, or another deep, heavy pot with a tight-fitting lid, heat the oil over medium heat. Pat the lamb dry and brown it well on all sides. Spoon off the excess fat. Sprinkle with salt and pepper. 2 Scatter the onion around the lamb and cook until the onion is wilted, about 5 minutes. Add the wine and cook 1 minute. Stir in the tomatoes and bring to a simmer. Reduce the heat to low and cover the pan. Cook 1 to 1 1/2 hours, turning the shanks occasionally, until the meat is very tender when pierced with a knife. 3 Add the olives, garlic, capers, and parsley and cook 5 minutes more, turning the meat to coat with the sauce. Serve hot. From "1,000 Italian Recipes." Copyright 2004 by Michele Scicolone. Used with permission of the publisher, Wiley Publishing, Inc. All Rights Reserved.

BRAISED LAMB SHANKS WITH GREEN OLIVES AND APRICOTS

Braised Lamb Shanks With Green Olives And Apricots image

Provided by Tyler Florence

Categories     main-dish

Yield 4 servings

Number Of Ingredients 19

4 lamb shanks, about 8 ounces each
Kosher salt and freshly ground black pepper
6 sprigs fresh thyme, plus 2 sprigs
2 sprigs fresh rosemary
1 lemon, zested in big strips
2 garlic cloves, halved
1/2 teaspoon whole cloves
2 cinnamon sticks, plus 2 sticks
1 teaspoon whole black peppercorns
2 bay leaves
1 tablespoon sugar
1 bottle full-bodied red wine, such as Cabernet Sauvignon
1/4 cup all-purpose flour
3 tablespoons olive oil
2 cups lamb or chicken stock
1 cup pearl onions, peeled
3 carrots, coarsely chopped
12 large green Spanish olives
12 dried apricots

Steps:

  • First off, you want to marinate the lamb shanks for a few hours to really penetrate the deep flavor; the wine also tenderizes the meat. Put the shanks in a large glass bowl and season with salt and pepper. Break up the thyme and rosemary with your hands to release the oils and toss them on top of the lamb. Add the lemon peel, garlic, cloves, cinnamon, peppercorns, bay leaves, and sugar. Pour in the bottle of wine, cover and refrigerate for 4 to 6 hours.
  • Line a few layers of paper towels on the counter. Pull the lamb shanks out of the wine marinade (reserving it for later), and lay them out on the paper towels, cover with more paper towels and pat the meat dry really well. Put the flour in a large shallow platter and season it with a fair amount of salt and pepper. Dredge the lamb shanks in the seasoned flour; tapping off the excess.
  • Preheat the oven to 350 degrees F.
  • Place a large Dutch oven or other heavy-bottomed pot over medium-high heat and add the oil. Sear the lamb shanks, turning carefully with tongs, so all sides are a brown caramel color. Drizzle with a little more oil if needed. Do this in batches if the shanks are big and look crowded in the pot. Strain marinade reserving the wine. Add the wine, remaining 2 sticks of cinnamon, remaining 2 sprigs of thyme and the stuff from the marinade. Cook until slightly reduced, about 5 minutes. Pour in the stock and add the onions, carrots, olives, and apricots; bring to a boil. Cover the pot. Place in the oven for 2 1/2 to 3 hours.
  • Transfer the lamb shanks to a large platter. Spoon the onions, olives, and apricots over them. Strain the braising juices and season with salt and pepper. Pour the sauce over the platter and serve with some crusty bread.

BRAISED VEAL SHANKS WITH GREEN OLIVES AND CAPERS

Braised Veal Shanks with Green Olives and Capers image

Categories     Olive     Braise     Veal     White Wine     Winter     Capers     Gourmet

Yield Serves 6

Number Of Ingredients 22

For Braised Veal Shanks
3/4 cup unpitted brine-cured green olives (preferably cracked)* rinsed well
5 pounds 2-inch-thick veal shanks (6 to 8 shanks), each tied securely with kitchen string to keep meat attached to bone
all-purpose flour for dredging
2 tablespoons olive oil
1 tablespoon unsalted butter
1 medium-large onion, halved lengthwise and sliced thin
2 large garlic cloves, minced
1 anchovy fillet, chopped
five 3- by 1/2-inch strips fresh lemon zest
1 1/2 tablespoons drained bottled capers
1 tablespoon finely chopped fresh rosemary leaves or 1 teaspoon dried, crumbled
1 1/2 cups dry white wine
1 1/2 cups low-salt chicken broth
Accompaniment: gremolata (recipe follows)
Garnish: dried caper berries**
For Gremolata
1/4 cup finely chopped fresh parsley leaves
1 tablespoon freshly grated lemon zest
1 1/2 teaspoons minced garlic, or to taste
*Cracked unpitted brine-cured green olives are available at specialty foods shops and Mediterranean markets.
**Drained caper berries are available at specialty foods shops.

Steps:

  • Make Braised Veal Shanks:
  • Preheat oven to 425°F.
  • Pit 1/4 cup olives and chop fine. Lightly crush remaining 1/2 cup olives with side of a large knife.
  • Pat veal shanks dry between paper towels and season with salt and pepper. Dredge top and bottom (not side) of each shank in flour, knocking off excess. In a 12-inch heavy skillet heat 1 tablespoon oil and butter over moderately high heat until foam subsides and brown tops and bottoms of shanks in batches, about 2 minutes on each side. Transfer shanks as browned to a flameproof roasting pan.
  • Wipe out skillet and add remaining tablespoon oil. Heat oil over moderate heat until hot but not smoking and cook onion, stirring, until golden. Add garlic and anchovy and cook, stirring, 1 minute. Add chopped olives, zest, capers, rosemary, and wine and boil 5 minutes. Add broth and crushed olives and bring to a boil.
  • Pour broth mixture over shanks and cover tightly with foil. Braise shanks in oven 2 hours, or until meat is tender. Shanks may be prepared up to this point 2 days ahead and cooled, uncovered, before chilling, covered. Reheat shanks before proceeding.
  • Reduce oven temperature to 325°F.
  • Transfer shanks with a slotted spoon to another roasting pan or deep oven proof platter and keep warm, covered, in oven. Strain cooking liquid through a sieve into a 1-quart glass measuring cup and reserve solids, discarding zest. Let liquid stand until fat rises to top and skim and discard fat. (There should be about 1 1/2 cups liquid. If necessary, in a saucepan boil liquid until it is reduced.) Add reserved solids to liquid and pour over shanks.
  • Serve shanks sprinkled with gremolata and garnished with caper berries.
  • Make Gremolata:
  • In a small bowl toss all ingredients together well. Makes about 1/3 cup.

SAUTéED LAMB CHOPS WITH RAMPS, ANCHOVY, CAPERS AND OLIVES

Sautéed Lamb Chops With Ramps, Anchovy, Capers and Olives image

Wild spring ramps are an earthy aromatic twist to this otherwise traditional approach to lamb chops. But you can just as easily use minced garlic or young green garlic shoots from the farmers' market. Any of these pungent alliums harmonize with the other bold ingredients. The anchovy mellows, melting into the chunky sauce, and the flavorful, meaty olives, briny capers and crushed red pepper keep everything lively, along with a squeeze of lemon.

Provided by David Tanis

Categories     dinner, steaks and chops, main course

Time 45m

Yield 4 servings

Number Of Ingredients 15

8 lamb chops (about 2 pounds), trimmed
Salt and black pepper
2 teaspoons roughly chopped rosemary
2 tablespoons extra-virgin olive oil, plus more as necessary
1 large shallot, diced
4 anchovy fillets, rinsed and patted dry
6 wild ramps, white part finely chopped and green tops reserved, or 2 teaspoons minced garlic
1 tablespoon small capers or roughly chopped larger capers
1/4 cup coarsely chopped pitted olives, a mixture of black and green
1/2 teaspoon crushed red pepper, or less to taste
1/2 cup white wine
1 cup hot chicken broth
2 tablespoons lemon juice
1/2 teaspoon lemon zest
2 tablespoons roughly chopped parsley

Steps:

  • Season chops on both sides with salt and pepper, sprinkle with rosemary, and set aside for 15 to 20 minutes.
  • Put a large sauté pan or skillet over medium-high heat. Add olive oil and swirl to coat bottom of pan. When oil is hot, add chops in one layer, without crowding. (If necessary, use two pans or work in batches.)
  • Cook chops until nicely browned on first side, about 4 to 5 minutes. (Maintain brisk heat, but adjust if they seem to be browning too quickly.) Flip chops and cook to medium-rare, until red juices rise on surface, 2 to 3 minutes more. Remove chops to a serving platter and keep warm.
  • Return pan to stovetop over medium-high heat. Add a little olive oil if pan looks dry, then add shallot and cook until lightly browned, about 2 to 3 minutes. Add anchovies, mashing them with the back of a spoon, to combine.
  • Add chopped ramps (or garlic, if using), capers, olives and red pepper and stir to incorporate shallot mixture. Raise heat to high and add white wine. Cook rapidly until reduced by half. Add chicken broth and simmer until slightly thickened, about 5 minutes. Stir in lemon juice and zest and turn off heat.
  • Meanwhile, roughly chop reserved green ramp tops, if using, and mix with chopped parsley. Stir parsley mixture into sauce. Spoon sauce generously over lamb chops and serve.

SEARED LAMB CHOPS WITH ANCHOVIES, CAPERS AND SAGE

Seared Lamb Chops With Anchovies, Capers and Sage image

The dish comes together in minutes but tastes as if you'd spent hours over the stove fussing and fine-tuning. And because the salted fish and olive oil meld into a smooth sauce, you can serve the dish to people who think they don't like anchovies, then tell them when only the lamb bones remain.

Provided by Melissa Clark

Categories     dinner, easy, quick, weekday, main course

Time 35m

Yield 2 servings

Number Of Ingredients 10

6 baby lamb chops (1 1/4 pounds)
Salt
pepper
3 tablespoons extra-virgin olive oil
3 anchovy fillets
3 tablespoons drained capers
15 sage leaves
1/8 teaspoon red pepper flakes
2 garlic cloves, finely chopped
Lemon wedges, for serving

Steps:

  • Rinse the lamb chops and pat them dry. Season them with salt and pepper, and let rest for 15 minutes.
  • Over medium-high heat, warm a skillet large enough to hold all the chops in one layer. Add the oil and when it shimmers, add the anchovies and capers. Cook, stirring, until the anchovies break down, about 3 minutes.
  • Arrange the lamb chops in the skillet and fry, without moving them, until brown, about 3 minutes. Turn them over, and toss the sage leaves and pepper flakes into the pan. Cook until lamb reaches the desired doneness, about 2 minutes for medium-rare.
  • Arrange the chops on serving plates. Add the garlic to the pan and cook for 1 minute, then spoon the sauce over the lamb. Serve with the lemon wedges.

LAMB SHANKS WITH PEPPERS AND PROSCIUTTO

Lamb Shanks with Peppers and Prosciutto image

Number Of Ingredients 11

4 tablespoons olive oil
6 small lamb shanks, well trimmed
salt and freshly ground black pepper
1/2 cup dry white wine
2 sprig fresh rosemary, or 1/2 teaspoon dried
1 1/2 cups Meat Broth
2 red bell peppers, cut into 1/2-inch strips
1 yellow bell pepper, cut into 1/2-inch strips
1 tablespoon unsalted butter
2 ounces sliced imported Italian prosciutto, cut into thin strips
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • 1 In a Dutch oven just large enough to hold the lamb shanks in a single layer, or another deep, heavy pot with a tight-fitting lid, heat the oil over medium heat. Pat the lamb shanks dry. Brown them well on all sides, turning the pieces with tongs, about 15 minutes. Tip the pan and spoon off the excess fat. Sprinkle with salt and pepper. 2 Add the wine and cook, scraping up and blending in the browned bits at the bottom of the pan with a wooden spoon. Bring to a simmer and cook 1 minute. 3 Add the rosemary and broth and bring the liquid to a simmer. 4 Partially cover the pan. Reduce heat to low. Cook, turning the meat occasionally, until the lamb is very tender when pierced with a fork, about 1 1/4 to 1 1/2 hours. 5 While the lamb is cooking, in a medium saucepan, combine the peppers, butter, and 2 tablespoons of water over medium heat. Cover and cook 10 minutes, or until the vegetables are almost tender. 6 Add the softened peppers and the prosciutto to the lamb along with the parsley. Cook uncovered over medium heat until the peppers are tender, about 5 minutes. 7 With a slotted spoon, transfer the shanks and peppers to the warmed platter. Cover and keep warm. If the liquid left in the pan is too thin, raise the heat to high and boil until reduced and slightly thickened. Taste and adjust the seasoning. Pour the sauce over the lamb and serve immediately. ROSEMARY BRAISED LAMB SHANKS

Rosemary Braised Lamb Shanks image

Lamb shanks are slowly simmered with fresh rosemary, garlic, tomatoes, and red wine. Great served with polenta, or my family's favorite--roasted garlic mashed potatoes--as you need something to soak up the wonderful sauce. A fantastic dish for company, as all the prep work is done at the beginning, and then you just have to wait.

Scatter capers, olives, and rosemary over lamb (or pour rosemary-wine mixture evenly over lamb) and add the wine (the rest of the wine if whirling some with rosemary); stir around shanks to scrape up browned bits.
