1 teaspoon grated orange zest
1/2 cup dried cranberries
1/2 cup real bacon bits
2 tablespoons honey

Steps:

  • Cook the green beans according to package directions, adding the orange zest during cooking; drain. Add the cranberries, bacon and honey; toss to combine.

1 1/2 lbs fresh green beans
1/2 lb bacon, cut up while raw
1 red bell pepper, diced
1/2 red onion, diced
1/4 cup brown sugar
1 pinch salt and pepper

Steps:

  • Blanch green beans.
  • Remove from boiling water and place in ice water to stop the cooking.
  • Fry bacon pieces.
  • When bacon is done, remove 3/4 of the fat from the pan.
  • Add the blanched green beans to the bacon; saute 1 minute.
  • Add red bell pepper and red onion; saute 1 minute.
  • Add brown sugar; stir.
  • Add salt and pepper.
  • Stir.
  • Tastes great reheated in the microwave!

4 cups fresh green beans (about 12 ounces)
1 tablespoon olive oil (or orange flavored olive oil)
1/4 cup fresh cranberries, chopped
1 1/2 teaspoons sugar
2 tablespoons orange juice
2 tablespoons pecans, chopped

Steps:

  • To toast nuts, bake uncovered in ungreased shallow pan in 350°F oven about 10 minutes or until golden brown.
  • Steam green beans 5 to 7 minutes or microwave on high about 4-5 minutes, stirring occasionally; drain.
  • Meanwhile, heat olive oil in a small nonstick skillet over medium heat.
  • Add cranberries, sugar and orange juice.
  • Cook, stirring gently, until cranberries are soft and liquid is syrupy.
  • Stir in chopped nuts and toss mixture with green beans.
