400g French green beans, trimmed, rinsed, and dried (90 green beans)
125g prosciutto (9 slices)
3 tsp extra virgin olive oil
Freshly cracked black pepper, to taste

Steps:

  • Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper.
  • Wrap a slice of prosciutto around 10 green beans *(see first note) before placing them spaced apart on the baking sheet in a single layer.
  • Drizzle a small amount of olive oil over each prosciutto wrapped green bean bundle. Then sprinkle black pepper on top of each bundle.
  • Place in the oven for 12-15 minutes until the prosciutto is crisp and the green beans are tender-crisp.

Steps:

  • In a large skillet over medium heat, melt 1 Tbsp of the butter. When the froth beings to subside, add the prosciutto and shallots. Cook until the prosciutto is crispy, about 3 minutes. Remove the prosciutto and shallots from the pan.
  • Add the remaining 2 Tbsp of butter and let it melt. Add the green beans and saute until tender and just a little browned, 4 to 5 minutes.
  • Add the prosciutto and shallots back to the pan and toss to combine. Season to taste with salt and pepper.

  • Heat oven to 400º F. Toss the green beans, onions and prosciutto with the olive oil; season with salt and pepper; pour onto a rimmed cooking sheet. 2 lb green beans trimmed
1 1/2 tsp freshly grated lemon zest
1/4 c blanced almonds
freshly ground pepper
1/4 tsp of salt divided
2 tsp minced thyme leaves
4 clove garlic minced
2-3 oz prosciutto thinly sliced, cut into ribbons
2 1/2 tsp extra-virgin olive oil divided
1 tsp lemon juice

Steps:

  • 1. Bring a large pot of water to a boil. Add beans, return to a boil, and simmer until crisp-tender, 3 to 4 minutes. Drain.
  • 2. Heat 1/2 tsp oil in a large nonstick skillet over medium heat. Add prosciutto; cook, stirring, until crispy, 4 to 5 minutes. Drain on a paper towel.
  • 3. Wipe out the pan; heat the remaining 2 tsps oil over medium heat. Add the beans, garlic, sage, 1/8 tsp salt and several grinds of pepper. 3 cloves garlic, pressed
1 1/2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary

2 ½ teaspoons oil, (divided)
2 ounces prosciutto, (cut into thin ribbons)
4 garlic cloves, (diced)
2 teaspoons fresh sage, ((1 teaspoon dried sage))
¼ teaspoon salt
freshly ground pepper, (to taste)
¼ cup pine nuts, (toasted)

Steps:

  • Over medium-high heat, toast the pine nuts in a dry skillet (do not add oil), stirring frequently, so they don't burn. This process should take about 5 minutes, and they should be golden and fragrant. Set aside.
  • Prepare beans by washing and trimming the ends and then cutting to the desired length.
  • Bring a large pot of water to a boil. Add beans, return to boil, and simmer until crisp-tender, 3 to 4 minutes (less time for crunchier beans). Drain the beans and, rinse with cold water, set aside.
  • Heat ½ teaspoon oil in a large skillet over medium heat. Add prosciutto; cook until crispy, 4 to 5 minutes. Drain on a paper towel-lined plate.
  • Using the same pan you cooked the prosciutto in (pour out any excess oil from the prosciutto), heat the remaining 2 teaspoons of oil over medium heat. Though it may look complicated, this recipe is quite easy to prepare. To save prep time, look for bags of prewashed, pretrimmed beans in the produce section. If you can't find the slender haricots verts, you can use regular green beans-they'll just need to cook a few minutes longer in step 1. You can blanch the beans and prepare the dressing the day before, but wait to combine them; the acid will discolor the beans.

3 (8-oz.) pkg. fresh haricots verts (French green beans)
Cooking spray
3 1/2 cups stemmed and thinly sliced fresh shiitake mushrooms (about 4 oz.)
7 tablespoons extra-virgin olive oil, divided
3/4 teaspoon kosher salt, divided
1/2 teaspoon black pepper, divided
4 teaspoons fresh lemon juice
5 prosciutto slices (about 2 oz. total), cut in half lengthwise

Steps:

  • Preheat oven to 450°F. Bring 4 quarts water to a boil in a large Dutch oven over medium-high. Add green beans, and cook until crisp-tender, about 4 to 5 minutes. Drain beans, and plunge into a large bowl filled with ice water to stop the cooking process. Drain beans, and dry thoroughly with paper towels.
  • Line a rimmed baking sheet with aluminum foil; lightly coat with cooking spray. Toss together mushrooms, 3 tablespoons oil, 1/8 teaspoon salt, and 1/8 teaspoon pepper in a bowl; arrange evenly on prepared baking sheet. 4 ounces prosciutto, cut into small pieces
3 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
1/4 cup minced red onion
1/4 cup grated Pecorino Romano cheese (omit for dairy free)
Celtic sea salt
Freshly ground black pepper

Steps:

  • Bring a medium pot of water to boil. Fill a large bowl with water and ice cubes. Place green beans in boiling water and cook for 1 minute, until bright green. Drain and quickly pour beans into ice water (this will stop the cooking process). In the now empty pot, add prosciutto and cook over medium heat, until golden brown on the edges and crispy. Drain beans. Add olive oil, lemon juice, onion, cheese and prosciutto to green beans. Toss well. Season to taste with sea salt and black pepper. Serve.

1/2 pound prosciutto

  • One doesn't want to wade too deep into canape land, but I would feel I was doing less than my duty if I didn't faithfully report my other most-relied-upon-starter-stand-in: beans wrapped in prosciutto. I saw these little bundles of green beans tied around the middle with Parma ham in an Italian delicatessen and went straight back home and made my own.
  • Top and tail some green beans and cook them in boiling salted water. Remember that the beans need decent cooking, not mere dunking in hot water. Drain them, wait for them to cool, dip them in balsamic vinegar, then cut raggedy thin slices of Parma ham in strips and tie them round the bean-bundles.

3 slices Parma prosciutto
Kosher salt and freshly ground black pepper
2 pounds Blue Lake green beans, stems removed
2 tablespoons extra virgin olive oil
1 shallot, minced

Steps:

  • Preheat oven to 350ËšF. Separate prosciutto slices and lay flat on a cooling rack over a baking sheet pan. Bake until crisp, about 10 minutes. Let cool on rack. Crumble into bite-size pieces. Set aside. Bring a large pot of well-salted water to a boil. Add the green beans and cook, approximately 2-3 minutes or until just tender. Remove beans with a slotted spoon and place in an ice water bath to cool. Drain beans into a colander. In a large heavy-bottomed sauté pan over medium heat, sauté the shallot in the olive oil until translucent. Add the green beans and toss to coat. Toss beans with crispy prosciutto, season with salt and pepper and serve.

I found this on the Eating Well website amonst their diabetic friendly recipes. I haven't tried this one yet but it sounds like a real winner.

2 lbs green beans, trimmed
2 1/2 teaspoons extra virgin olive oil, divided
2 ounces thinly sliced prosciutto, cut into ribbons
4 garlic cloves, minced
2 teaspoons minced fresh sage
1/4 teaspoon salt, divided
fresh ground pepper
1/4 cup toasted pine nuts (see Tip)
1 1/2 teaspoons freshly grated lemon zest
1 teaspoon lemon juice

Steps:

  • Bring a large pot of water to a boil. Add beans, return to a boil, and simmer until crisp-tender, 3 to 4 minutes. Drain.
  • Heat 1/2 teaspoon oil in a large nonstick skillet over medium heat. Add prosciutto; cook, stirring, until crispy, 4 to 5 minutes. Drain on a paper towel.
  • Wipe out the pan; heat the remaining 2 teaspoons oil over medium heat. Add the beans, garlic, sage, 1/8 teaspoon salt and several grinds of pepper. Cook, stirring occasionally, until the beans are browned in places, 3 to 4 minutes. Stir in pine nuts, lemon zest and the prosciutto. Season with lemon juice, the remaining 1/8 teaspoon salt and pepper.
  • Tip: To toast chopped nuts & seeds: Cook in a small dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.

8 thin slices prosciutto or deli ham, julienned
2 teaspoons olive oil
1/2 cup white wine or reduced-sodium chicken broth
1/4 cup lemon juice
2 tablespoons butter
1-1/2 pounds fresh green beans, trimmed

Steps:

  • In a large nonstick skillet coated with cooking spray, cook prosciutto in oil over medium heat until crisp. Remove to paper towels with a slotted spoon; drain., In the same skillet, combine the wine, lemon juice and butter. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until sauce is reduced by half., Meanwhile, place beans in a large saucepan and cover with water. Bring to a boil. Cover and cook for 4-7 minutes or until crisp-tender; drain. Add beans to skillet; toss to coat. Sprinkle with prosciutto just before serving.

Prosciutto wrapped green bean bundles are rolled with fresh rosemary and grated parmesan cheese for an extra delicious crowd pleasing side dish!

8 slices prosciutto
1 lb green beans (tops and bottoms cut and discarded )
1 tbsp extra virgin olive oil
2 tbsp fresh rosemary (finely chopped)
1/4 cup grated parmesan cheese

Steps:

  • Assemble the green bean bundles. Preheat the oven to 425 degrees. Lay a slice of prosciutto on your work surface. Place 8-10 green beans in the center of the prosciutto slice. Brush the green beans with olive oil. Sprinkle 1-2 tbsp of grated parmesan cheese over the green beans, then top with a pinch of rosemary.
  • Wrap the green beans. Grab the edge of the prosciutto and tuck it over the green beans. , then roll it tightly. Place the green bean bundles on a parchment paper lined baking sheet seam side down,
  • Bake the green bean bundles. Place the baking sheet on the middle rack in the oven and bake for 10-12 minutes.
  • Serve. Top the green bean bundles with more parmesan cheese, serve, and enjoy!

1 clove garlic (up to 2 cloves), peeled and minced or pressed
1 1/2 springs (for garnish)
1 lb slender green beans ends removed

  • 1. In a 10 - to 12 inch nonstick frying pan, sauté chopped prosciutto over medium-high heat until crisp, about 1 minute. Remove from pan with a slotted spoon and set aside. 2. Add garlic, chopped rosemary and 2 tbsp. water to pan, Sauté until garlic is fragrant, about 30 seconds; do not scorch. 3. Add beans and 1/3 cup water and sprinkle with sale. Cover and cook just until beans are tender to bite, about 3 minutes. Uncover and sauté until liquid has evaporated. 4. Arrange beans on a platter, sprinkle with chopped prosciutto and garnish with rosemary spring. Season to taste with salt and pepper.
