This is a quick and easy recipe that tastes really good. To add a little more to this soup add one small (7 to 8 ounce) can creamed corn and omit the egg.

1 tablespoon cornstarch
1 egg, lightly beaten
2 tablespoons chopped green onion

Steps:

  • In a medium stock pot, mix cold chicken broth with cornstarch. Slowly heat over medium heat, stirring frequently.
  • Pour beaten egg into soup, and stir once around stock pot very gently, in order to break up egg. Remove soup from heat immediately, divide into four portions and garnish with green onions.

1 ½ pounds lean ground beef
2 large potatoes, sliced
2 stalks celery, sliced
salt and pepper to taste
2 onions, thinly sliced
1 (15 ounce) can peas
3 small carrots, sliced
1 (10.75 ounce) can condensed tomato soup
1 ¼ cups water

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • Place a the potatoes in a layer to cover the bottom of the slow cooker. Sprinkle the celery over the potatoes, and cover with a layer of ground beef. Season each layer with salt and pepper. Throw in the carrots, onions and peas. Mix together the tomato soup and water, and pour over the top. Cover, and set to low for 6 to 8 hours.

A hearty soup for a wintry day and a perfect candidate for slow-cooker or crock pot. This is an heirloom recipe from The International Jewish Cook Book, 1919. If keeping kosher, do not use ham. Substitute wheat berries, brown rice or barley if you don't have access to green kern and eliminate overnight soaking.

1/2 cup green kern
2 lbs of soup meat (beef, chicken, turkey, or ham)
1 carrot, peeled and chopped
1 onion, peeled and chopped
1 stalk celery, chopped
1 sprig parsley, minced
1 -2 tomatoes, skinned and cut into chunks
1 potato, peeled and cut into chunks

Steps:

  • Soak green kern in a bowl of water overnight.
  • Put on soup meat, add carrot, onion, celery, parsley, tomatoes, potato (this is a very flexible recipe -- any vegetable you have on hand will work just fine).
  • Cover tightly and let simmer over a low heat three or four hours.
  • Put the green kern on to boil in lightly salted water.
  • As it boils down, keep adding soup stock from the kettle of soup on the stove, always straining through a fine sieve, until all has been used.
  • Serve hot as is or strain and garnish with toasted croutons or toasted rye bread.

From the Pennsylvania Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Overnight soaking time not included in preparation time. Substitute wheat berries, brown rice or barley if you don't have access to green kern and eliminate overnight soaking.

Steps:

  • Soak kern overnight; drain well.
  • Add water and salt; simmer until tender, about 8 hours.
  • Add onion, garlic, carrot and pepper after two hours of cooking.
  • Add soup stock from time to time as the water evaporates.
  • Add any remaining stock at the end of cooking.

1 tablespoon olive oil
1 tablespoon water
1 lb boneless skinless chicken thighs, cut into bite size pieces
1/2 teaspoon sweet paprika

2 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can pink beans or 1 (14 1/2 ounce) can black beans
1 (28 ounce) can diced tomatoes with juice
1/4 cup tomato sauce (optional)
1 cup frozen corn kernels
1 -2 tablespoon chopped canned chipotle chile in adobo
1 teaspoon adobo sauce (optional)
salt
1/4-1/2 cup fresh cilantro, chopped
1/2 lime, juice of

Steps:

  • In a large sauce pan or soup pot, cook onion 2 or 3 minutes in oil; add water and garlic cooking an additional minute.
  • Stir in paprika and oregano into the onions; add chicken, cook until done.
  • Add chicken broth, chipotles, tomatoes, corn, beans and chipotles.
  • Bring to a boil, reduce heat, and simmer for 30 minutes.
  • Stir in chopped cilantro and lime juice and heating through 1 minute.
  • Add salt to taste.

3 (3 pound) whole chicken
4 cups diced celery
2 cups chopped onion
1 teaspoon salt
3 cups all-purpose flour
3 cups frozen corn
salt to taste
ground white pepper, to taste
1 tablespoon dried parsley

Steps:

  • Place chicken, celery and onion into a large stock pot and cover with water. Bring to a boil, then simmer for 2 hours or until chicken has fallen from the bone.
  • Remove chicken from the pot and set aside to cool. Remove 2 cups of the chicken broth and set aside to cool also. When chicken is cool enough to handle, remove and discard skin and bones. Chop chicken meat and return to the stock pot.
  • In a food processor, combine the flour with 1 teaspoon of salt. Put the lid onto the processor and slowly pour chicken broth through the opening in the lid while the machine is processing, until the dough forms a ball. You may not need to use all of the reserved broth. Remove dough from the food processor and set aside to rest for 20 minutes. Return any unused broth to the stock pot.
  • On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut into thin strips and then cut the strips into pieces to form short thin noodles. Bring the broth back up to a boil and add noodles and the corn. Cook for another 10 minutes or until noodles are firm. Add salt and pepper to taste. Serve hot garnished with parsley flakes.

1 cup all-purpose flour
1 egg
½ cup water
1 pinch salt
1 large potato, diced
1 onion, diced
½ pound bacon, chopped
3 cups milk
1 cup heavy cream
salt and pepper to taste

Steps:

  • In a medium bowl, combine flour, egg, 1/2 cup water and salt to form a dough. Cut into thin strips or small pieces.
  • Bring a large pot of water to boil. Stir in dough, potatoes and onion. Cook 20 minutes, until potatoes are tender. Drain.
  • While pasta and potatoes are cooking, cook bacon in a large skillet over medium heat until crisp. Save drippings.
  • Return pasta and potato mixture to large pot over medium-low heat, and combine with bacon, a teaspoon of bacon grease, milk, cream and salt and pepper. Adjust bacon grease to taste and milk or cream to cover. Simmer 20 minutes, without boiling. Serve hot.

1 pound Gruenkern (green wheat kernels), rinsed and soaked overnight (see note)
4 pounds of beef short ribs
2 beef bones
2 onions, chopped
3 carrots, chopped
2 teaspoons kosher salt, plus more to taste
1/2 teaspoon freshly ground pepper

Steps:

  • Put all the ingredients in a pot and add 12 cups water. Bring to a boil over medium heat, periodically skimming the foam that comes to the top. Reduce heat and simmer 2 hours and 15 minutes.
  • With a slotted spoon, take out the meat and bones and allow them to cool. Meanwhile, skim the fat off the soup. Scoop out any marrow from the bones and return it to the pot.
  • Separate the meat from the bones, discarding fat and gristle. Chop the meat into 1/2-inch cubes and return it to the pot. Season to taste with salt and pepper.

6 tablespoons vegetable oil
8 (6 inch) corn tortillas, coarsely chopped
6 garlic cloves, minced
1/2 cup chopped fresh cilantro
1 onion, chopped
1 (29 ounce) can diced tomatoes
2 tablespoons ground cumin
1 tablespoon chili powder
3 bay leaves
6 cups chicken broth
1 teaspoon salt
1/2 teaspoon ground cayenne pepper
5 boneless chicken breast halves, cooked

Steps:

  • In a large stock pot heat oil. Add tortillas, garlic, cilantro and onion. Saute for 2 to 3 minutes.
  • Stir in tomatoes and bring to a boil. Add cumin, chili powder, bay leaves and chicken stock. Return to a boil, reduce heat to medium and add salt and cayenne. Simmer for 30 minutes remove bay leaves and stir in chicken. Heat through and serve.

8 ounces carrots, diced
8 ounces celery
8 ounces onions, diced
1/2 teaspoon garlic powder or 1 garlic clove, diced
1/8 teaspoon salt
1/4 teaspoon pepper
1 tablespoon corn oil
4 (15 ounce) cans chicken broth
1 (15 ounce) can tomatoes, diced (optional)
1 (10 ounce) can Rotel tomatoes & chilies, diced
1 (1 1/4-1 1/2 ounce) packet taco seasoning (I use McCormicks)
10 (8 inch) corn, tortillas (NOT FLOUR, cut into small pieces, about 1-in x1-in)
12 ounces chicken meat, poached, diced
1 cup milk or 1 cup sour cream
12 ounces monterey jack cheese or 12 ounces Mexican blend cheese, shredded
corn tortilla chips, broken into small pieces for garnish

Steps:

  • Saute carrots, onions, celery in corn oil, garlic, salt and pepper until tender.
  • Add chicken broth and bring to boil.
  • Add tomatoes, Rotel, taco seasoning, and chicken.
  • Cut Tortillas into small pieces and add to broth mixture.
  • Let boil for 45 minutes or until tortillas are thoroughly incorporated into soup stirring occasionally to keep from sticking.
  • Reduce heat and add 8 oz. cheese. Simmer for additional 10 minutes.
  • Add milk and simmer for additional 10 minutes.
  • If thicker soup is desired, add more diced tortillas and let incorporate into soup.
  • Garnish with shredded cheese and broken tortilla chips.
  • Substitutions: 1 cup Masa Harina (Masa Flour) for 1 10 ct. package of corn tortillas.
  • Mix masa with 1 cup cold water, then add masa flour mix into soup. If thicker soup is desired, add more masa/water mix.
  • If you don't want to use the seasoning packet, substitute 1/2 teaspoons cumin + 1 tsp, chili powder.
  • You can also use grilled chicken fajita meat for poached diced chicken.
  • NOTE: If you use FLOUR tortillas, as some people have, you WILL end up with a "TORTILLA MESS", this recipe is for CORN tortillas. Don't go blaming me and giving me a bad review because you used the wrong stuff.
