Atsara (Papaya Relish) image

This Filipino relish is made normally with very fresh green papayas. Sauerkraut can also be used.

4 cups grated fresh green papaya
¼ cup salt
1 carrot, peeled and sliced
1 red bell pepper, sliced into long strips
1 (2 inch) piece fresh ginger root, peeled and sliced
2 green chile peppers, sliced into thin rings
1 (1.5 ounce) box raisins
1 cup white vinegar
1 cup water
1 cup white sugar
1 teaspoon salt

Steps:

  • Toss the grated papaya with 1/4 cup salt together in a large bowl; allow to sit for 1 hour. Drain the liquid from the papaya and rinse thoroughly. Place the papaya in the middle of a large piece of cheesecloth and squeeze to drain as much liquid from the papaya as possible.
  • Combine the papaya, carrot, red bell pepper, ginger, green chile peppers, and raisins together in a clean large bowl; mix. Transfer the mixture to clean, dry jars with lids.
  • Stir the vinegar, water, sugar and 1 teaspoon salt together in a small saucepan; bring to a boil for 5 minutes. Pour the vinegar mixture into the jars, making sure the vegetables are completely submerged in liquid. Allow the vegetables to marinate in the liquid at least 1 day before using. Store in refrigerator between uses.

Shredded green papaya is paired with Vietnamese coriander and a garlicky lime-and-chile dressing in this refreshing salad.

1 fresh red Thai chile, finely chopped
2 tablespoons Asian fish sauce
2 tablespoons sugar
Juice of 1 lime
2 pounds green (unripe) papaya, peeled and seeded
12 sprigs fresh Vietnamese coriander, leaves and stems separated and stems coarsely chopped, plus sprig for garnish

Steps:

  • Make the dressing: Stir together chile, fish sauce, sugar, lime juice, and 3 tablespoons water in a medium bowl.
  • Make the salad: Thickly shred papaya with a mandoline or box grater. Transfer to a large bowl. Stir in coriander leaves and chopped stems. To serve, drizzle salad with dressing, and toss to combine. Garnish with a sprig of coriander.

In Isan (and the rest of Thailand), green papaya salad is called som tum, with "som" meaning "sour" and "tum" referring to the pounding sound of the large pestle used to crush ingredients. It is eaten by itself as a snack, or with marinated grilled beef and chicken.

1 large or 2 small cloves garlic, peeled
1/4 teaspoon salt
1 tablespoon dry-roasted salted peanuts, more for garnish
2 fresh bird chilies or serrano chilies, sliced
1/2 teaspoon raw sugar or white sugar
1 tablespoon dried shrimp (optional)
2 tablespoons fresh lime juice
1 to 2 tablespoons fish sauce (nam pla), to taste
2 plum tomatoes, 1 large round tomato, or 8 grape tomatoes, coarsely chopped
1/2 pound long beans, trimmed and cut into 1 1/2-inch lengths (optional)
1 small to medium green (unripe) papaya (see Note)
Lettuce for serving (optional)

Steps:

  • In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.
  • Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.
  • Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.

1 cup vinegar
24 cups papayas, shredded

Steps:

  • Heat all of the above ingredients except papaya.
  • Pack papaya in jars as tightly as you can.
  • Pour hot liquid over making sure to"burp" out any air bubbles.
  • Wipe rim of jar and put lid on.
  • Keep out of direct sunlight and preferably in garage, it will take 1 1/2-2 months to ferment.

1 tablespoon onion, chopped
4 small mushrooms, sliced (optional)
1 tablespoon fresh flat leaf parsley, chopped (optional)
1 cup papaya, grated (or tiny julienned)
4 tablespoons spaghetti sauce (more or less to taste, your favorite or try mine Spaghetti Sauce With Meat or from a jar if you must)
1 teaspoon parmesan cheese, grated
salt
pepper

Steps:

  • Heat your pan/skillet.
  • Add oil, onion and mushrooms. Cook for a moment.
  • Add green papaya. Cook for a minute or two.
  • Add spaghetti sauce. Stir it all around and cook for another minute or two.
  • Add parsley if you want. Stir.
  • Plate.
  • Top with Parmesan. Salt & Pepper.
  • Enjoy!
  • If there are other veggies you want to add, go for it.
