MOM'S GREEN RICE
MY MOTHER-IN-LAW always served green rice with her chicken casserole. She was a great cook, and the local newspaper featured her several times as "cook of the week". - In a skillet, saute onions in butter until tender. stir in the broth, rice, green pepper, parsley and pepper; bring to a boil. Remove from the heat; pour into a greased 1-qt. baking dish. Cover and bake at 350° for 25 minutes or until rice is tender. Top with cheese if desired; bake 3 minutes longer or until melted.

- In a blender, combine cilantro, parsley, onion, garlic, and 1 3/4 cups water. Season with salt and pepper and blend until smooth, 15 seconds.
- In a medium saucepan, heat oil over medium-high. Add rice and stir to coat. Add herb mixture and bring to a boil. Reduce to a simmer, cover, and cook until water is absorbed, about 15 minutes. Remove pan from heat and let sit, covered, 5 minutes. Add lime juice and fluff with a fork. Serve rice with lime wedges if desired.

GREEN RICE

- Preheat the oven to 350 degrees F.
- Pour the Tomatillo Salsa into a food processor or a blender. Add the poblano chiles, lettuce leaves, cilantro, scallions, garlic, water, and salt and process until liquefied. (If using a blender, work in batches.) Set aside.
- Heat the vegetable oil in a medium skillet over medium-low heat. Saute the rice, stirring constantly, until golden and crackling, about 5 minutes. Pour in the reserved green puree and stir to combine. Transfer to a 4-quart baking dish or casserole. Cover with foil and bake until the liquid is absorbed and the rice is tender, 30 to 35 minutes. Stir with a fork and serve hot.
- Place the tomatillos, jalapenos, and water in a blender or food processor fitted with the metal blade. Puree just until chunky. Then add the remaining ingredients and puree about 2 minutes more, or until no large chunks remain. This salsa keeps in the refrigerator, in a covered container, about 3 days.
GREEN RICE HOT DISH
You betcha it 's a hot dish! The history of the "hotdish" goes back to when budget-conscious farm wives needed to feed their own families as well as congregations of the first Minnesota churches. This filling side resembles a quiche and is packed full of flavor. Evaporated milk, which is thicker and richer than regular milk, helps give this dish its creamy texture. Perfect for cold winters, when you just need something warm and tasty in your belly.

- Preheat the oven to 350°F. Coat a 9 x 13-inch casserole dish with cooking spray.
- Put the rice, cheese, evaporated milk, onion, parsley, eggs, garlic, olive oil, salt, and pepper into a large mixing bowl and stir well. Pour the mixture into the prepared casserole dish. Bake for 50 minutes or until the casserole is set and the top is brown and a little crunchy.
- Vegetarian friendly!

GREEN RICE

- Heat oil in a pan, fry leek gently for 8 minutes
- Stir in the rice, gently fry for 2-3 minutes
- Add stock 300ml at a time, when absorbed add the next batch
- With the last batch of stock add broccoli, peas and beans
- When they are all tender, stir in most of the cheese, sprinkling the remainder on th finished dish
- per serving: 452 kcals, 10g fat, 4g saturated fat
GREEN RICE
Steps:
- Put the rice in a large bowl and cover with cold water. Toss the rice with your hands a few times to remove the starch, and drain. Repeat this process five times. Set aside.
- Pour 3 1/2 cups water into a small pot with a dash of salt and bring to a boil. Meanwhile, put the saffron in a small bowl with 2 tablespoons of water. Stir and set aside.
- Heat a large pot over medium-high heat and add the oil. Add the leeks and sauté for 5 minutes. Add the rice, saffron water, and lime powder or whole preserved lime and cook, stirring often, for 2 minutes. Pour the boiling water over the rice, bring the rice to a boil, then decrease the heat and simmer, covered, for 20 minutes. Turn off the heat and let the rice stand, covered, for 5 minutes, then fluff with a fork. If the whole lime was used, discard.
- Transfer the rice to a large bowl and fold in the parsley, cilantro, dill, and most of the pistachios. Season with salt. To serve, pile the rice on a platter and scatter a few pistachios over the top.
HAMBURGER RICE HOT DISH

- Put the oil in a deep skillet or large saucepan over medium-high heat. When it's hot, add the onion and garlic and cook, stirring, until softened, about 5 minutes.
- Add the rice and cook, stirring, until glossy, about 1 minute. Add the stock or water and a good sprinkling of salt and pepper and bring to a boil.

RICE COOKER GREEN RICE
This recipe is adapted from Ingrid Hoffmann's Green Rice recipe (foodnetwork.com) so that it will work in a rice cooker. It has great flavor with just the right amount of heat. I now use this recipe instead of the standard red rice with Mexican dishes. It is great as a side dish with almost any Mexican food. The hub and I have even put left over rice in lightly-fried tortillas to make rice tacos that were out of this world. Note - I use sushi grade rice almost exclusively in my cooking becuase I love the stickier texture. Accordingly, I have not tried making the recipe with standard or brown rice. You may need to adjust the amount of chicken stock, especially if using brown rice. This recipe is very easy to double or triple when feeding a crowd. It is also a tried and true pot-luck pleaser!

Steps:
- Cut chiles into large pieces. Remove seeds and veins for a milder rice, or leave them in for a much spicier rice. I usually remove seeds but leave veins.
- In a blender, combine chile pieces, 1/2 cup chicken stock, garlic cloves, cilantro leaves and salt. Blend until smooth. Add more chicken stock if necessary for easier blending.
- Meanwhile, heat oil in a small skillet over medium heat. Saute onion until soft. Add rice and stir for another minute.
- Pour rice/onion mixture into rice cooker. Add chile puree and remainder of chicken stock. Give a quick stir and set rice cooker to the cook setting.
- When cooker cycle ends, fluff rice. Some rice may be crusty on the bottom of the cooker pan - this is the tastiest stuff. The rice may need to steam a few extra minutes on the warm cycle until it reaches your desired consistency.
- Season to taste with salt and pepper and lime juice if desired. You can also garnish with sliced green onion.

- Place oil, green onion, parsley, and spinach in a large microproof casserole: Cover and microwave on High 100% power 4-6 minutes.
- Or until the veggies are softened stirring once during cooking time.
- Stir in the stock, rice, salt, pepper.
- Cover and microwave on high 100% power 20-25 minutes or until the rice is softened.
- Stir at least once during cooking time.
- Let stand, covered for 5 minutes to allow all the moisture to be absorbed.

- Heat olive oil in a large skillet over medium heat. Saute the white parts of the green onions with the jalapenos for 5 minutes; do not brown.
- Stir in the sherry, rice, salt and pepper. Pour in the broth and water; bring to a boil. Cover, reduce heat to low, and cook until rice is tender and liquid is absorbed, about 20 minutes.
