1 (16 ounce) package dry fusilli pasta
1 bunch Swiss chard, stems removed
2 tablespoons olive oil
½ cup oil-packed sun-dried tomatoes, chopped
½ cup pitted, chopped kalamata olives
½ cup pitted, chopped green olives
1 clove garlic, minced
¼ cup fresh grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Stir in pasta, cook for 10 to 12 minutes, until al dente, and drain.
  • Place chard in a microwave safe bowl. Fill bowl about 1/2 full with water. Cook on High in the microwave 5 minutes, until limp; drain.
  • Heat the oil in a skillet over medium heat. Stir in the sun-dried tomatoes, kalamata olives, green olives, and garlic. Mix in the chard. Cook and stir until tender. Toss with pasta and sprinkle with Parmesan cheese to serve.

1 pound penne
3 cups baby spinach
3 cups baby arugula
1/2 cup fresh basil leaves
1/3 cup fresh mint leaves
1/4 cup fresh flat-leaf parsley leaves
1 teaspoon red pepper flakes
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cloves garlic
1/4 cup olive oil
4 tablespoons salted butter
2 tablespoons all-purpose flour
1 teaspoon mustard powder
2 cups whole milk
1/4 cup half-and-half
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 cups grated white Cheddar
2 cups grated fontina
1/2 cup grated Monterey Jack
4 tablespoons salted butter, melted, plus a touch more for buttering the pan
1/2 cup panko breadcrumbs
2 tablespoons fresh parsley, minced

Steps:

  • Preheat the oven to 350 degrees F.
  • For the pasta: Bring a large pot of salted water to a boil. Add the penne and cook until al dente according to the package instructions. Drain and set aside.
  • For the pureed greens: Meanwhile, add the spinach, arugula, basil, mint, parsley, red pepper flakes, salt, pepper and garlic to a food processor. With the machine running, drizzle in the olive oil and puree. Stop before the mixture is completely smooth; you want a bit of texture. Set aside.
  • For the cheese sauce: Melt the butter in a large pot over medium heat. Sprinkle in the flour and mustard powder, whisking to combine. Cook, whisking constantly, for a minute or so. Pour in the milk, whisking constantly. Cook the sauce until thick and bubbly, 3 to 5 minutes. Whisk in the half-and-half, salt and pepper. Add the Cheddar, fontina and Monterey Jack. Stir until the cheese all melts.
  • For the assembly: Butter a 9-by-13-inch baking pan.
  • Combine the melted butter, breadcrumbs and parsley in a small bowl.
  • Add the cooked penne to the cheese sauce, making sure every noodle is covered in sauce. Next, stir in the pureed greens until barely combined. Pour the pasta mixture into the buttered baking pan and top evenly with the breadcrumbs. Bake until bubbly and golden brown, 20 to 25 minutes.
  • If you are serving later, top the assembled casserole with aluminum foil and pop in the freezer. When you are ready to serve, allow it to thaw in the fridge overnight and bake the following day at 350 degrees F until golden brown and cooked through, about 1 hour covered and an additional 15 minutes uncovered.

1 pound fettuccine
2 tablespoons salted butter
2 tablespoons olive oil
2 3/4-inch-thick strip steaks
1 large onion, sliced thin
3 cloves garlic, sliced
2 tablespoons tomato paste
Pinch crushed red pepper flakes
1/3 cup white wine
1/3 cup heavy cream
2 cups shredded collards
2 cups shredded kale
2 cups baby spinach
1 1/2 cups shredded fontina cheese
Steak sauce, to finish
2 tablespoons chopped fresh curly parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente. Reserve 1/2 cup of the pasta water. Drain the pasta and set aside.
  • Heat a cast-iron skillet over a medium-high heat. Add the butter, along with the olive oil. Sprinkle the steaks all over with salt and pepper. When the butter has melted and the oil is hot, place the steaks in the skillet and cook for 3 to 4 minutes per side for medium-rare. Remove the steaks to a cutting board to rest.
  • Add the onion, garlic, tomato paste and red pepper flakes to the skillet, then quickly stir and cook for 1 to 2 minutes. Add the wine and allow to reduce for 30 to 60 seconds, then add the cream. Stir, then add the collards, kale and spinach. Stir and allow the greens to wilt, 2 to 3 minutes. Add the pasta, reserved pasta water and cheese. Toss until everything is coated and the sauce has thickened, about 2 minutes. Remove from the heat.
  • Slice the steak and shingle the slices over the pasta. Drizzle over the steak sauce and sprinkle over the curly parsley. Serve straight from the skillet.

PASTA WITH FETA AND GREEN OLIVES



Pasta With Feta and Green Olives image

Bold, briny and tangy, this 15-minute pasta is full of personality. Olives are first slightly blistered in oil, drawing out their brininess, then crumbled feta is stirred into the pasta at the end until melty. Keep the feta chunky when breaking it apart so that the squares become soft and creamy, tasting almost baked. Castelvetrano olives are best here for their meaty texture and gentle flavor, but you can also use your preferred olive. Smash them with the flat side of a chef's knife - or even the heel of your palm in a pinch - then use your fingers to pluck the olive flesh off the pit. Any stubborn meat clinging to the pit is fair game to be eaten then and there.

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook at a gentle boil until al dente, about 2 minutes less than the package instructions.
  • Meanwhile, in a saucepan or skillet, heat the oil over medium-high until shimmering. Add the olives, cooking until they start to blister in spots, 2 to 3 minutes. Remove from the heat, then add in the garlic, lemon zest and red-pepper flakes, stirring constantly for about 30 seconds, then let sit uncovered until the pasta is finished.
  • Reserve 1 cup pasta water, drain the pasta, then return it to the pot over medium-low heat. Pour in the olive mixture, the lemon juice and ¾ cup pasta water, and stir well for 1 to 2 minutes until the noodles are coated in a smooth, glossy sauce, adding more water if needed. Turn off the heat, stir in the feta and let it soften and melt slightly. Finish with a grind or two of black pepper and a sprinkle of red-pepper flakes, if desired. Season to taste with salt, and serve immediately.

1/2 cup KRAFT Green Goddess Dressing
4 radishes, thinly sliced
1/4 cup chopped mixed fresh herbs, such as fresh chives, parsley and/or tarragon

Steps:

  • Cook pasta in boiling water in large saucepan as directed on package, adding asparagus, peas and spinach to the cooking water for the last 2 min.; drain.
  • Return pasta mixture to saucepan. Add cream cheese and dressing; stir until cream cheese is completely melted and sauce is well blended.
  • Spoon pasta mixture into serving dish; top with radishes and herbs.

Incredibly simple to make and simply incredible to eat! You can experiment freely, or add any kind of fish / leftover poultry - this version is vegetarian. The basic ingredients are healthy and colourful. The sweetness of the corn and pepper nicely balance out the saltiness of the olives. If you prefer a saucier pasta, this is also delicious when a tablespoon of cream is added to the vegetables. Finally, you could omit the pasta and eat as a particularly tasty salad or sandwich filling!

500 g dry linguine or 500 g dried tagliatelle pasta noodles
200 g stuffed green olives
200 g canned mushroom slices
2 tablespoons canned sweetcorn
1 red sweet bell pepper
2 -5 garlic cloves, crushed
1 tablespoon chopped dill
1 tablespoon olive oil
salt, to taste

Steps:

  • Cook the pasta in boiling salted water for 10-12 minutes until al dente.
  • Meanwhile -- Slice the olives into 5-6 slices each (may sound time-consuming but it's not, really).
  • Remove seeds from red bell pepper, quarter and slice finely.
  • Drain mushrooms.
  • When the pasta is cooked, drain in colander.
  • Quickly heat all other ingredients in the olive oil (1-2 minutes maximum). The idea is to take the chill off, not to cook!
  • Serve vegetables spooned generously over pasta.

12 ounces orecchiette (little ear-shaped pasta)
4 slices thick cut bacon, chopped (approx 4 oz)
1 cup onion, chopped
1 cup frozen peas
1 cup canned garbanzo beans, drained (chick peas)
1/3 cup of fresh mint, chopped (or basil)
1 1/4 cups parmesan cheese, grated (divided)
1/4 cup extra virgin olive oil

Steps:

  • Cook pasta in plenty of boiling salted water until tender but still firm to bite, stirring often. Drain, reserving 1 cup cooking liquid. Transfer to large bowl.
  • Brown bacon in deep large frying pan over medium - high heat until crispy. Transfer bacon to paper towel to drain.
  • Add onion to bacon fat in pan sautee' until just beginning to brown, about 5 minutes.
  • Add frozen peas stir two minutes then add the chick peas and continue to cook until both are just heated through and peas are bright green about 1 minute longer.
  • Return bacon to pan and add mint (reserving some for garnish) and pasta and enough cooking liquid to moisten pasta.
  • Stir in 1 cup cheese and place on serving platter or bowl.
  • Drizzle with olive oil and garnish with reserved mint Serve, passing additional cheese alongside.
