Steps:
- Bring pot of water to a boil and salt it.
- blanch beans in water until they are bright green and just tender, about 5 minutes.
- Drain and refresh in cold water, then drain again.
- Place in a serving bowl.
- Grate ginger over bowl, then place in small fine strainer and press out juice, about a teaspoon.
- Combine ginger juice with miso, walnuts, 2 tablespoons water and soy sauce in blender and blend until smooth, stopping machine and scraping down sides if necessary.
- (You may add a little water or soy sauce if mixture is too thick.).
- Toss beans in sauce, and serve at room temperature.

- Place bacon in a small pan and cook over medium-high heat, turning occasionally, until almost crisp but not fully cooked, 3 to 5 minutes.
- Place chicken broth, green beans, onion, vinegar, sugar, garlic, black pepper, and seasoned salt in a slow cooker. Add bacon and stir to incorporate fully. Cook on High for 1 hour.
- Turn slow cooker down to Low and cook for 7 hours more. Taste and adjust seasoning. Serve in a large bowl with some of the broth.

Steps:
- Bring a large pot of lightly salted water to a boil over high heat.
- Add the green beans and cook until tender, about 5 minutes.
- Drain and rinse briefly under cold running water.
- Meanwhile, in a food processor, combine the peanut butter, brown sugar, soy sauce, lemon juice, garlic, and ginger.
- Process until smooth.
- With the machine on, add the hot water and mix until blended.
- Transfer the beans to a serving dish.
- Pour the sauce over the beans and serve.
- If you prefer the dish hotter, reheat in a microwave oven on High for 50 to 60 seconds, rotating the dish once.
- (If you do this, be sure the serving dish is microwave-safe glass or ceramic).
