GREEN TEA MARINATED CUCUMBERS

Number Of Ingredients 7

3 small cucumbers, peeled and sliced (I used Persian cucumbers)
1 teaspoon sesame oil
1 teaspoon soy sauce
2 tablespoons rice wine vinegar
1 cup strong brewed green tea (use 2 tea bags)
1 teaspoon toasted sesame seeds
1 dash hot pepper sauce

Steps:

  • Brew 1 cup of green tea. Cool to room temperature. Toast sesame seeds and cool to room temperature.
  • Whisk together the vinaigrette ingredients with the brewed and cooled green tea; toss with the cucumbers.
  • Cover and marinate for at least 2 hours before serving. For best results, do no marinate for more than 4 hours or cucumbers will break down. Best eaten with 12-24 hours.
  • Yield is estimated.

Quick Marinated Cucumbers image

Number Of Ingredients 7

2 cucumbers slender, about 8 inches each
1/4 cup cider vinegar
2 tablespoons water
4 teaspoons sugar
3/4 teaspoon dill weed dried
1/2 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Peel cucumbers if skin is tough or thick. Otherwise, score lengthwise with tines of a fork. Thinly slice cucumbers (you will have about 3 cups).Place cucumbers in a medium bowl. Add vinegar, water, sugar, dill weed, salt and pepper stir until blended. Cover and refrigerate until ready to serve, stirring several times.Transfer to a serving dish. Serve with a slotted spoon.Serve with tuna noodle casserole, fried fish or pork chops.

We moved here about 3 years ago and we love our home in the country. We plant a garden each year, making sure there's always plenty of cucumbers. I must admit I never really cared for cukes until my mother-in-law prepared them this way. Now they're one of my favorite vegetables.

5 medium (blank)s cucumbers, peeled and thinly sliced
1 bunch green onions with tops, chopped
1 cup mayonnaise
¼ cup evaporated milk
¼ cup vinegar
¼ cup sugar
2 drops hot pepper sauce
1 teaspoon dried parsley flakes
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon garlic salt
¼ teaspoon onion salt

Steps:

  • Combine cucumbers and green onions in a large bowl. Cover and let stand for 1 hour. Combine all remaining ingredients; pour over cucumber mixture and mix well. Refrigerate for several hours.

3 cups sliced cucumbers
1 medium green pepper, seeded and cut into rings
1 medium red onion, sliced
3 tablespoons polyunsaturated oil
2 tablespoons vinegar
2 tablespoons freshly squeezed lemon juice
1 teaspoon sugar
1/4 teaspoon dill seed
4 radishes, sliced
iceberg lettuce leaves

Steps:

  • In a large bowl, combine the cucumber, green pepper and onion. Blend together the oil, vinegar, lemon juice, sugar and dill, pour over the vegetables and toss. Cover and refrigerate for 1 hour. Toss before serving on lettuce leaves garnished with radish slices.
