A spicy Thai noodle dish with chicken and vegetables.

½ pound dried rice noodles
1 pound skinless, boneless chicken breast halves
1 dash soy sauce
1 green bell pepper, sliced
1 red bell pepper, sliced
1 cucumber, coarsely chopped
1 carrot, grated
10 mushrooms, halved
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 ½ tablespoons red chile sauce
¾ cup peanut sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook rice noodles according to package directions.
  • Slice chicken breasts into strips. Marinate in soy sauce for about 1/2 hour.
  • In a large saucepan or wok, heat sesame oil over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender. Add mushrooms and cucumbers; cook until mushrooms are tender. Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce. Heat through.
  • Toss cooked rice noodles with saute. Garnish with sesame seeds.

½ lb prawn
1 teaspoon salt
½ teaspoon pepper
2 cloves garlic
1 green chili
⅔ cup peas
3 tablespoons thai green curry paste
9 oz noodle, cooked
lime, to serve

Steps:

  • Fry the prawns with salt and pepper until they've just turned pink. Take out and set aside.
  • In the same pan, fry the garlic and green chili for a few minutes before stirring in the peas and Thai green curry paste.
  • Add the prawns and noodles and mix together for another couple of minutes.
  • Serve with a little lime juice squeezed over.
  • Enjoy!

1 (12 to 14-ounce) box spinach fettuccini pasta
Salt
1/4 pound prosciutto (Italian ham)
3 tablespoons butter (tablespoons are marked on the wrapper), cut into small pieces
1 cup cream
1/4 teaspoon grated nutmeg, eyeball it
Black pepper
1 cup grated Parmigiano-Reggiano or Romano, plus even more to pass at table
1 cup frozen peas

Steps:

  • Bring a large pot of water to a boil then add salt, a generous grab from your salt dish, to season up the pasta as it cooks. Carefully add pasta to water and stir then cook to al dente or until pasta is tender but it still has a bite to it in the center - in other words, do not cook it until it is mushy.
  • Cut ham into thin, short ribbon-like pieces and separate them into a loose pile. Kids not so good with knives can use kitchen scissors to cut the ham up.
  • Preheat a large skillet over medium heat. Add butter to the pan and melt it. Add 1 cup cream and warm it up a minute. Add about a cup of cheese, 4 big handfuls or so, and stir constantly for another minute then season the sauce with nutmeg (your SECRET ingredient) and pepper. Taste and add a little salt, if necessary.
  • Turn off heat under sauce and add the peas to it. They will warm through in no time. Next, drain the pasta. Kids should have Grown Helpers drain pasta for them. Toss pasta with sauce in the skillet and use tongs to help you pull pasta through sauce until it is coated evenly. Sprinkle in the ham and toss the pasta again to combine it. You can even add a little more cheese, if you say so.
  • Wow! Green noodles are even yummier than white ones when you add in the ham and cheese and peas! Yum-o!

1/2 cup water
1/4 cup oyster sauce
3 tablespoons packed dark brown sugar
3 tablespoons fish sauce or soy sauce
1 tablespoon minced fresh gingerroot
6 garlic cloves, minced
1 pound wide rice noodles
1/4 cup grapeseed oil or canola oil, divided
8 ounces boneless beef chuck steak, thinly sliced
1 medium sweet red pepper, julienned
1 large onion, julienned
2 to 4 Thai red chiles, thinly sliced
1-1/2 cups fresh Thai basil leaves, coarsely chopped
1 cup minced garlic chives

Steps:

  • In a bowl, stir together first 7 ingredients; set aside. Cook noodles according to package directions; drain. Toss with 1 tablespoon oil; set aside. , In a large wok or skillet, heat remaining oil over high heat. Add beef in a single layer; cook until caramelized, about 30 seconds. Turn and cook 30 seconds more; remove. Add red peppers, onion and Thai chiles to wok; stir-fry until peppers are just tender and starting to brown, 2-3 minutes. Add sauce and noodles; bring to a simmer. Cook until sauce thickens and starts to coat noodles. Add beef; toss to coat. Remove from heat; add basil and chives. Serve immediately.

1 tbsp rapeseed oil
280g pack firm tofu , cut into cubes
300g bag stir-fry veg
150g baby corn , halved lengthways
150g mangetout
2 tbsp Thai green curry paste
1-2 green chillies , thinly sliced
250ml light coconut milk
250g fresh egg noodles
4 spring onions , sliced
lime wedges, to serve

Steps:

  • Heat the oil in a non-stick frying pan or wok. Add the tofu and fry, turning regularly, over a high heat for 6-7 mins or until golden. Remove with a slotted spoon and set aside.
  • Tip the stir-fry veg, corn and mangetout into the pan and cook for 5 mins. Stir through the curry paste, chilli, coconut milk and noodles, then bring to a simmer and cook for 5 mins. Return the tofu to the pan. Divide between bowls and top with the spring onion. Serve with the lime wedges for squeezing over.

100g vermicelli noodles (or thin rice noodles)
1 large carrot - grated into long strips
1 stick celery - chopped finely
1 red pepper - sliced into very thin strips
1 cup bean sprouts
2 large spring onions - sliced finely
200g shrimps - cooked and cooled
1 cup chopped mint leaves
1/2 cup chopped coriander leaves
DRESSING
4 tablespoons of lime juice (about 2 limes)
2 tablespoons of rice vinegar
2 tablespoons of fish sauce
3 tablespoons of sugar
2 tablespoons of chilli garlic sauce OR 2 large garlic cloves & 1 red chilli pounded to a paste
3/4 cup peanuts - toasted till golden, cooled, and then pounded to a semi-powder

Steps:

  • Boil a pan of water. Cook the noodles until they are soft but not very soft. 'Al dente'. Dunk them into a large bowl of cold water to stop them cooking and to wash off the starch. Drain and let cool. Cut the noodles with scissors to make them easier to mix with the ingredients. Add all the veg, shrimps and herbs. Mix up the dressing. Taste it to make sure it's a good mix of sour, salt, heat and sweet. adjust to taste. (Fish sauce adds more salt - but be carefully - its really strong). Serve - with lots of dressing and plenty of roasted peanuts on top. Best served cool but not fridge-cold.
