Steps:

  • *Cook's note: Feel free to try any bread, cheese, or jelly in any combination, not just the ones listed here.
  • Select any bread, any cheese, and any jelly. Spread 2 pieces of bread with butter. Place 1 piece, butter side down, in a skillet over medium heat and top with several slices of the cheese. Spread the unbuttered side of the other piece of bread with some jelly and put it jelly side down on top of the cheese. When the first side is browned, after about 3 minutes, flip the sandwich and cook until the other side has browned, about another 3 minutes. Serve while warm.

Adapted from the Two Brothers Roundhouse restaurant in Aurora, IL which uses Brioche. Since Brioche is so hard to come by, I have substituted French Bread. The Quince Jam is the hardest to find, I found it at Williams Sonoma.

2 slices French bread
2 ounces brie cheese
3 tablespoons quince jelly
2 teaspoons butter
1 tablespoon extra virgin olive oil

Steps:

  • Spread Brie onto one slice of French Bread.
  • Spread Quince Jam onto other slice of French Bread.
  • Combine French Bread Slices by placing the Brie and Jam sides together.
  • Butter exposed bread slices.
  • Heat up skillet at medium-low with enough EVOO to coat the bottom.
  • Grill each side of the sandwich until medium brown, not burnt and cheese is melted inside.

2 tablespoons butter, softened
2 thick slices French bread
6 thin slices Brie cheese, or more to taste
12 fresh thyme leaves, or to taste
1 pinch cracked black pepper
6 slices pear (such as Bosc)
salt to taste

Steps:

  • Generously butter one side of each slice of bread.
  • Heat a skillet over medium heat.
  • Place bread slices butter-side down into hot skillet. Arrange Brie cheese slices on top of each piece of bread. Sprinkle thyme and cracked black pepper over the top.
  • Spread pear slices in a single layer over the Brie cheese on one slice of bread and top with a pinch of salt.
  • Flip the slice of bread without pears onto the slice of bread with the pear slices. Continue cooking sandwich until cheese and pear are heated through and cheese is melted, 2 to 3 minutes per side. Transfer to a plate and cut into halves.

6 slices black forest ham
½ (8 ounce) wedge Brie cheese, sliced
2 tablespoons apricot preserves
1 tablespoon Dijon mustard
4 thick slices Italian bread
1 tablespoon olive oil

Steps:

  • Assemble the sandwiches by layering the ham, brie cheese, apricot preserves, and mustard in equal amounts on two pieces of bread, topping with the remaining two slices of bread. Brush the top of each sandwich with olive oil.
  • Heat a grill pan over medium heat. Once the pan is hot, lie the sandwiches, oiled side down, in the pan. Brush the top of each sandwich with oil. Cook each side until the bread is golden brown, about 3 minutes per side.

4 teaspoons salted butter, at room temperature (real butter)
8 slices French bread, cut on an angle 1/4-inch thick
3 tablespoons raspberry jam or 3 tablespoons apricot jam
5 ounces ripe brie cheese (leave the slices at room temperature for easier spreading) or 5 ounces camembert cheese, rind removed, cheese sliced while cold (leave the slices at room temperature for easier spreading)

Steps:

  • Butter all the bread slices on one side only. Put them all, buttered side down, on a cutting board. Spread four of the slices with a thin layer of jam (about 2 teaspoons per slice). Spread the cheese on the other four slices. Pair the jam slices with the cheese slices.
  • Heat a large nonstick pan or griddle over medium-high heat for 2 minutes. Put as many sandwiches as will fit in the pan or on the-griddle without crowding, cover and cook until the cheese has just begun to melt and the bread is golden brown, about 2 minutes. Remove the lid and turn the sandwiches, pressing each one firmly with a spatula to flatten it slightly. Cook the sandwiches uncovered until the bottom is golden brown, about 1 minute. Turn them once more and press with the spatula again to recrisp the bread, about 30 seconds. Cut the sandwiches in halves or quarters and serve immediately.
