- Preheat oven to 375 degrees. Divide cheddar among 4 slices bread. Spread jelly on 4 more slices bread and sandwich together. Coat a large skillet with cooking spray and heat over medium. Working in batches, if necessary, cook until bread is golden and toasted, 2 minutes, flipping once. Transfer to a baking sheet and bake until cheese is melted, 3 to 5 minutes. To serve, cut into sticks or triangles.

- In a skillet, heat oil over medium-high heat; saute onion and peppers until tender. Divide between 2 bread slices. Top with cheese and remaining bread. - Brush both sides of both slices of bread with the bacon oil. Place the cheese on top of one slice and top with the other slice of bread.
- Heat a griddle on top of the stove over medium-high heat. Place the sandwich on the griddle and grill for about 1 minute on each side, or until the bread is golden brown and the cheese is melted. Slice the sandwich into 8 small serving pieces.

- Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with pepperoni; add sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. GRILLED CHEESE SANDWICH ON THE GRILL
If you have a hankering for a next-level grilled cheese, make it over the fire. Cooking it low and slow with the grill lid on means that the bread not only crisps, but also acquires a deep smoky flavor. (Stale bread works especially well here.) If you want to add chopped grilled vegetables, pickled peppers or anything else to your sandwich, mix it cold or at room temperature with the cheese before piling it onto the bread.

- Prepare a charcoal or gas grill for medium heat. (Medium is 325 degrees to 375 degrees. You should be able to hold your hand 4 to 5 inches above the grates for 6 to 7 seconds.)
- Thinly spread mayonnaise on one side of each piece of bread. When you're ready to grill, take the bread, cheese, salt and a spatula to the grill. Clean the grates with a grill brush. (No need to grease the grates.) Place the slices mayonnaise side down on the grill. Evenly sprinkle half the slices with about 3/4 cup cheese. Cover the grill and cook until the bread is golden and the cheese is nearly all melted, 4 to 6 minutes. Check on the bread often, moving slices around the grill as needed to avoid burning.
- Use the spatula or your hands to top the cheese halves with the other toasted slices. Transfer to plates, press down slightly and sprinkle with salt.

- Spray grate of outdoor grill and utensils with Pam for Grilling Spray.
- Preheat grill to medium heat.
- Grill bell pepper until slightly blackened on all sides.
- Cool; cut into thin strips.
- Spread hummus over cut sides of foccacia bread.

- Preheat a grill pan over medium heat. Using a serrated knife, carefully slice ciabatta horizontally into thirds; reserve top and bottom crust for bread slices.
- Place bread slices on work surface, crust side down; butter cut side of each slice. Top 1 slice with 6 slices cheese, tomato slices seasoned with salt and pepper, and basil leaves. Top with 6 more slices cheese and then with remaining bread slice, buttered side down. Butter 1 exterior side of sandwich, seasoning with salt and pepper; halve sandwich to fit grill pan.
- Place sandwich butter side down onto grill pan. Weight sandwich with a large cast-iron skillet; cook until golden, about 3 minutes. Remove from pan, butter exterior side of top bread slice; turn, weight down sandwich, and cook for 3 minutes more. Repeat with remaining sandwich half. Slice sandwiches crosswise into 2-inch pieces. Serve immediately.
