Baked Chicken Reuben image

This is a great make-ahead dish from Marcia C. Adams of Fort Wayne, Indiana. It took the top $10,000 prize in the National Chicken Cooking Contest in Dallas, Texas. It sounds weird, but it is good.

6 breast half, bone and skin removed (blank)s skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 (16 ounce) can sauerkraut, drained and pressed
4 slices Swiss cheese
1 ¼ cups thousand island salad dressing
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken in a lightly greased 9x13 inch baking dish. Sprinkle with salt and pepper. Place sauerkraut over chicken and top with cheese slices. Pour dressing over all and cover dish with aluminum foil.
  • Bake in preheated oven for 90 minutes, or until chicken is cooked through (fork can be easily inserted and juices run clear). Sprinkle with chopped parsley and serve.

A new twist on a classic grilled cheese sandwich! Enjoy with a nice bowl of tomato soup for comfort food on a cold day. Recipe courtesy Greg Morris for Food Network Magazine. I made a few adjustments using veggie bacon.

8 slices veggie bacon
2 tablespoons unsalted butter, plus more as needed
8 slices sourdough bread
12 ounces cotswold cheese (double Gloucester with chives) or 12 ounces cheddar cheese, shredded
4 tablespoons thousand island dressing

Steps:

  • Cook the bacon in a large nonstick skillet over medium heat until crisp, about 6-8 minutes. Remove and place on a paper towel-lined plate.
  • Heat the butter in the skillet over medium heat.
  • Add 2 bread slices. Top each with one-quarter of the cheese and 2 strips bacon.
  • Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down.
  • Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side.
  • Repeat to make 2 more sandwiches, adding more butter as needed.

8 strips thick-cut maple-glazed bacon
2 tablespoons unsalted butter, plus more as needed
8 slices sourdough bread
12 ounces cotswold cheese (double Gloucester with chives) or cheddar, shredded
4 tablespoons Thousand Island dressing

Steps:

  • Cook the bacon in a large nonstick skillet over medium heat until crisp, about 8 minutes. Remove and drain on a paper towel-lined plate. Wipe out the skillet.
  • Heat the butter in the skillet over medium heat. Add 2 bread slices. Top each with one-quarter of the cheese and 2 strips bacon. Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down. Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches, adding more butter as needed.

2 slices marble rye bread
1 KRAFT Singles
3 slices OSCAR MAYER Deli Fresh Slow Roasted Roast Beef
2 Tbsp. drained CLAUSSEN Sauerkraut
2 tsp. butter or margarine, softened

Steps:

  • Spread dressing onto 1 bread slice.
  • Top with meat, sauerkraut and Single; cover with remaining bread slice.
  • Spread outside of sandwich with butter.
  • Cook in skillet on medium heat 2 to 3 min. on each side or until Single is melted and sandwich is golden brown on both sides.
