A recipe for crispy chicken skin yakitori. Kawa, or chicken skin, is threaded on skewers and cooked over a grill for a crispy, yet juicy, Japanese-style appetizer. Serve with yakitori, or tare, sauce.

12 (6 inch) bamboo skewers
¼ cup soy sauce
¼ cup mirin
⅛ cup sake
⅛ cup water
1 teaspoon packed light brown sugar
¼ green onion, sliced diagonally
¾ pound chicken skin, cut into 1 1/2-inch wide strips
salt to taste

Steps:

  • Soak skewers in water for at least 30 minutes to overnight.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Combine soy sauce, mirin, sake, water, brown sugar, and green onion in a saucepan. Bring to a light boil over medium-high heat. Reduce heat to low and let simmer until sauce has reduced slightly, 3 to 5 minutes. Set aside to cool.
  • Meanwhile, thread chicken skin onto skewers lengthwise; skin should be slightly bunched up, but not too taut. Sprinkle skewers with salt.
  • Cook skewers on the preheated grill until nicely browned and crispy but not until fat has completely rendered, about 5 minutes. Flip and cook until other side is crispy, about 5 minutes more.
  • Blot each yakitori lightly with a paper towel before serving. Serve with cooled tare sauce on the side.

½ cup sake (Japanese rice wine)
1 tablespoon white sugar
1 tablespoon chopped fresh ginger
1 ½ pounds skinless, boneless chicken breasts, cut into 24 cubes
4 green onions, cut into 2-inch pieces
8 (6-inch) wooden skewers, soaked in cold water for 2 hours

Steps:

  • Whisk soy sauce, sake, sugar, and ginger together in a bowl. Add chicken cubes; toss to coat. Marinate in the refrigerator for 2 to 3 hours.
  • Thread chicken cubes and green onions onto skewers.
  • Pour marinade into a small saucepan over medium heat; bring to a simmer. Reduce heat to low and keep warm.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill skewers until chicken is browned, for 3 minutes. Flip and brush with warm marinade. Cook until second side is browned, about 3 minutes more.

1/2 cup light soy sauce
1/4 cup apple juice
2 tablespoons brown sugar
2 teaspoons grated ginger

4 boneless chicken breasts

Steps:

  • Mix all marinade ingredients together.
  • Pierce each chicken breast with fork several times.
  • Marinate chicken breasts in marinade several hours.
  • Cook on greased grill over medium heat 10 minutes or until done.

YAKITORI (GRILLED CHICKEN KEBABS)

Yakitori is chicken and various other things (mainly chicken, as tori means chicken) skewered, brushed with a sweetish sauce, and grilled to perfection. My version utilizes a simplified sauce and is cooked under the broiler, although it can be grilled, too. Yakitori is best eaten fresh while still very hot. Try with a Japanese beer, if you drink beer. I like to serve it as a meal, but it's intended to be more of a snack. Besides the kebab ingredients here, you can also use chicken gizzards or livers, wing drummettes, little meatballs of minced chicken, shitake mushrooms, bell peppers, or gingko nuts. The skewers should be quite small--just enough for a bite or two each.

7 tablespoons sake
3/4 cup low sodium soy sauce
3 tablespoons mirin
2 tablespoons sugar
2 lbs boneless chicken thighs
5 thin leeks or 7 -8 green onions
short bamboo skewer, soaked in water

Steps:

  • To make sauce, combine all ingredients in a small saucepan. Bring to a boil, remove from heat, and set aside.
  • To prepare kebabs, cut thigh meat into bite-sized pieces. Cut thick parts of onions into 1-inch pieces, discarding the leaves. (See comments for additional suggestions for skewers.).
  • Thread pieces of chicken and onion alternately onto skewers, just 1-2 of each per skewer.
  • Dip each skewer into the sauce until well coated; place on a broiling pan.
  • Brush with additional sauce, and place under hot broiler, about 4-6 inches from heat.
  • Broil until the sauce begins to blacken around high points of skewers, about 4-5 minutes.
  • Brush again with sauce, flip and brush other side. Continue broiling for another 4-5 minutes or until just starting to char.
  • Repeat if necessary until chicken is cooked through.
  • Serve immediately. Discard any remaining sauce.

This recipe calls for marinating chicken thighs, gizzards and livers in a savory-sweet sauce of ginger, sake, mirin, soy sauce, garlic and a touch of brown sugar, grilling or broiling, then scattering with chopped scallions. Serve it alongside something fresh and green, like a cucumber salad, and a pile of rice.

1 pound chicken livers, gizzards or boneless thigh meat
1/2 cup dark soy sauce or tamari
1/4 cup mirin

1/2 cup mirin (sweet rice wine)
1/2 cup sake
1/2 cup soy sauce
1 tablespoon sugar
