Grilled Chicken with Herbs image

Boneless chicken breasts marinated in herbs, garlic, oil and vinegar and broiled or grilled to perfection. This recipe is from The WEBB Cooks, articles and recipes by Robyn Webb, courtesy of the American Diabetes Association. Preparation time: 10 minutes.

2 tablespoons chopped Italian flat leaf parsley
2 teaspoons fresh rosemary, minced
2 teaspoons chopped fresh thyme
1 teaspoon dried sage
3 cloves garlic, minced
¼ cup olive oil
½ cup balsamic vinegar
salt and pepper to taste
1 ½ pounds skinless, boneless chicken breasts

Steps:

  • In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
  • Preheat grill to medium high heat OR set oven to broil.
  • Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

Lavender may seems like an odd salad ingredient, but it's delightful scent has a natural affinity with sweet garlic, orange and other wild herbs. A serving of polenta makes this salad both filling and delicious. From the Cook's Encyclopedia of chicken - a cookbook shelf must have!

4 boneless skinless chicken breasts
3 3/4 cups chicken stock
1 cup fine polenta
4 tablespoons butter
1 lb Baby Spinach
6 ounces lamb's lettuce
8 sprigs fresh lavender
12 cherry tomatoes, halved
salt and black pepper
6 fresh lavender flowers
2 teaspoons finely grated orange rind
2 cloves garlic, crushed
2 teaspoons honey
2 tablespoons olive oil
2 teaspoons freshly chopped thyme
2 teaspoons freshly chopped marjoram

Steps:

  • To make the marinade, strip the lavender flowers from the stems and combine with the orange rind, garlic, honey and salt; add the olive oil and herbs.
  • Slash the chicken deeply, spread the mixture over the chicken and marinate in the refrigerator 20 minutes.
  • To cook the polenta - in a heavy saucepan, bring the chicken stock to a boil; add the polenta in a steady stream, stirring all the time until thick; this will take 2 to 3 minutes.
  • Turn the cooked polenta out onto a 1 inch deep buttered tray and allow to cool.
  • Heat the broiler to medium. (If using a barbecue, let the embers settle to a steady glow) Grill the chicken about 15 minutes, turning once.
  • Cut the polenta into 1 inch cubes with a wet knife.
  • Heat the butter in a large frying pan and fry the polenta until golden brown.
  • Wash the salad leaves and spin dry, divide among 4 large plates.
  • Slice each chicken breast and lay over the salad. Place the polenta among the salad, garnish with sprigs of lavender and tomatoes, season to taste and serve.

1/4 cup Kikkoman Soy Sauce
1/2 cup rice wine vinegar
1/3 cup extra-virgin olive oil
1 tablespoon toasted sesame oil
1/4 cup each chopped fresh basil and chopped fresh mint
2 fresh garlic cloves, minced
1/4 teaspoon Asian chili paste with garlic
3 tablespoons honey
4 boned and skinned chicken breast halves
1 10-ounce bag European-style salad greens
1 cucumber, thinly sliced
1/4 cup pine nuts, lightly toasted
Optional garnish - additional fresh basil and mint

Steps:

  • Signature Sauce:
  • Blend together soy sauce, vinegar, oils, basil, mint, garlic, chili paste and honey in a small bowl.
  • Application Recipe:
  • Remove 1/3 cup Signature Sauce and reserve.
  • Pour remainder into a zip-top plastic bag and add chicken breasts, coating all sides well. Place in refrigerator and let marinate, turning occasionally, for at least an hour.
  • Preheat outdoor grill to medium.
  • Remove chicken from marinade, discarding marinade. Place chicken over medium grill fire for 7 to 9 minutes on each side, or until tender and done. (Or, place chicken on rack of broiler pan. Broil 4 to 5 inches from heat source 7 to 8 minutes on each side, or until chicken is no longer pink in center.)
  • Remove chicken to a cutting board, tenting with foil to keep warm while it rests for about 5 minutes
  • While chicken is resting, toss greens and cucumber slices with the reserved marinade mixture that has NOT been used to marinate the chicken, then divide greens evenly among 4 serving plates.
  • Cut chicken breasts against the grain crosswise into approximate 1/2-inch slices. Place over salad greens and sprinkle with pine nuts, as well as additional basil and mint leaves.

  • Place all ingredients into a jar, close tightly, shake well.
  • Pour into ziploc baggie, add chicken pieces, marinate about 4 hours.

3/4 cup extra-virgin olive oil, divided
2 tablespoons plus 1/3 cup fresh lemon juice (from 3 or 4 lemons), divided
1 tablespoon plus 1 teaspoon minced garlic (4 cloves), divided
5 boneless, skinless chicken-breast halves (10 to 11 ounces each)
12 chicken drumsticks
2 cups shelled fresh peas (from 2 pounds in pods)
2 tablespoons minced shallot
2 tablespoons Dijon mustard
1 teaspoon coarse salt
1/2 cup chopped fresh mint leaves, plus 1/2 cup packed fresh mint leaves (from 2 bunches)
1 to 2 heads butterhead lettuce such as Bibb or Boston, trimmed and separated into leaves

Steps:

  • Whisk together 1/4 cup oil, 2 tablespoons lemon juice, and 1 tablespoon garlic. Pour over chicken, and refrigerate 2 hours.
  • Cook peas in a large pot of boiling water until just tender, 2 to 3 minutes. Drain, and submerge in ice water to stop the cooking and retain color.
  • Preheat grill to medium-high heat or set up grill for indirect heat. Remove chicken from marinade, and grill chicken, turning often, until internal temperature reaches 165 degrees, 15 to 20 minutes for drumsticks and 20 to 25 minutes for breasts. Let cool, and refrigerate until ready to serve. Just before serving, cut chicken breasts into thick slices.
  • Whisk together remaining 1/2 cup oil, 1/3 cup lemon juice, and 1 teaspoon garlic, the shallot, mustard, salt, and chopped mint in a medium bowl. Arrange lettuce, whole mint leaves, and peas on a large serving platter. Toss chicken in dressing, and arrange on salad. Pour remaining dressing over salad.

1 package (16 ounces) elbow macaroni, ziti or spiral pasta
6 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons lemon juice
2-1/2 cups sliced celery
1 medium red onion, chopped
1 medium sweet red pepper, chopped
1/4 cup minced fresh dill or 5 teaspoons dill weed
3 tablespoons white wine vinegar
2 tablespoons mayonnaise
2 tablespoons Dijion mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2/3 cup olive oil
Leaf lettuce
Snipped fresh dill, optional

Steps:

  • Cook pasta according to package directions. Grill chicken, uncovered, over medium heat until juices run clear, 5-8 minutes on each side. Remove from grill to a rimmed platter. Sprinkle with lemon juice; let stand 10 minutes. Drain pasta; rinse with cold water., Remove chicken from platter to a cutting board and cut into strips; pour juices into a large bowl. To the juices, add vinegar, mayonnaise, mustard, salt and pepper; whisk well. Gradually whisk in oil. Add pasta, celery, onion, red pepper and dill; toss to coat. Arrange pasta over lettuce-lined plates. Top with chicken. If desired, sprinkle with dill.

1 green onion, chopped
