Grilled Chicken Sausage with Pears image

Sliced pears become exceptionally sweet whengiven a quick turn on the grill (or the stove top). This recipe can be made on a grill pan, although you may need to increase the cooking times by one minute per side.

2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1/4 cup extra-virgin olive oil
1 teaspoon coarse salt
Freshly ground pepper, to taste
4 firm, ripe pears, cut lengthwise into 1/4-inch-thick slices
8 precooked chicken-and-apple sausage links, pricked with a fork
Fresh thyme, chutney, and assorted mustards, for serving

Steps:

  • Preheat grill to medium-high. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds.)
  • Whisk lemon juice with mustard. Add oil in a slow, steady stream, whisking until emulsified. Whisk in salt and pepper. Toss pears with 2 tablespoons dressing.
  • Grill sausages, turning frequently, until heated through, 10 to 12 minutes total. At the same time, grill pears until softened and lightly browned, 4 to 5 minutes per side. Top sausages and pears with thyme, and serve with chutney, mustards, and remaining dressing.

My neighbor made this dish at a barbecue and I had to have the recipe. It is so easy and you will be surprised what a wonderful flavor the peaches give to the chicken!

8 skinless, boneless chicken breast halves
1 pinch salt and ground black pepper to taste
2 cups peach preserves
3 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
1 tablespoon finely chopped garlic
1 tablespoon Dijon mustard
4 ripe peaches, halved and pitted

Steps:

  • Preheat grill for medium heat and lightly oil the grate. Season chicken breast halves with salt and black pepper.
  • Stir peach preserves, olive oil, soy sauce, garlic, and mustard in a bowl; season with salt and black pepper. Reserve about 1/2 cup peach sauce.
  • Place chicken on preheated grill; cook until golden brown, 6 to 7 minutes, then flip chicken. Continue cooking for 5 to 6 minutes. Brush both sides of the chicken with peach sauce. Cook until no longer pink in the center and the juices run clear, 4 to 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Arrange peach halves cut side down on the grill. Grill for 2 minutes, flip, and brush with reserved 1/2 cup peach sauce. Continue to grill until peaches are tender, 3 to 4 minutes more.

2 fully cooked gluten-free chicken sausages, cut into 12 pieces
1 red Bartlett pear, cut into 12 chunks
1 tablespoon extra virgin olive oil
1 tablespoon balsamic vinegar

Steps:

  • oak 6 wooden skewers in water. In a bowl, toss sausages with pear, olive oil and vinegar. Marinate for 1/2 hour to 2 hours. When ready to cook, drain the skewers. Heat the grill to medium. Place two pieces of sausage and two pieces of pear on each skewer. Grill 2 minutes on each side, turning and grilling for a total of 7 to 10 minutes.

2 tablespoons olive oil
4 skinless, boneless chicken breast halves
½ teaspoon salt
½ teaspoon white pepper
5 slices bacon
1 (14.5 ounce) can chicken broth
2 cups peeled, cored and diced pears
2 tablespoons cornstarch
3 tablespoons cold water
¼ cup chopped green onion

Steps:

  • Heat oil in a large skillet over medium heat. Rub chicken breasts with salt and white pepper. Place chicken breasts in the hot skillet, and cook for about 10 minutes on each side, until the juices run clear.
  • Meanwhile, place bacon in a saucepan over medium-high heat, and cook until crisp. Remove bacon, and drain grease, leaving about 1 tablespoon in the pan. Stir in some of the chicken broth, and scrape any bacon bits stuck to the pan. Pour in the rest of the broth, and bring to a boil. Boil for 5 minutes. Add pears, and boil for 5 more minutes.
  • In a small cup, mix together the cornstarch and water. Pour the mixture into the saucepan along with the green onions. Allow the sauce to boil until thick and bubbly, about 2 minutes. Crumble bacon into the pan. Serve sauce over chicken.

4 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons canola oil
5 thick-cut bacon strips, diced
1 can (14-1/2 ounces) chicken broth
2 to 3 medium ripe pears, peeled and diced
2 tablespoons cornstarch
2 tablespoons cold water
1/4 cup minced chives

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet over medium heat, cook chicken in oil 5-6 minutes on each side or until a thermometer reaches 170°. , Meanwhile, in a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings; set bacon aside. Gradually stir broth into the drippings, scraping pan to loosen browned bits. Bring to a boil. Boil, uncovered, for 5 minutes. Add pears; return to a boil. Boil, uncovered, for 5 minutes or until pears are tender. , Combine cornstarch and water until smooth; add the chives. Gradually stir into pear sauce; bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Stir in bacon. Serve with chicken.

1/3 cup olive oil
1/4 cup balsamic vinegar
1 teaspoon minced garlic
1/4 cup kalamata olive, pitted and chopped
kosher salt and freshly cracked black pepper, to taste
2 ripe but firm peaches, pitted and each cut into 8 chunks (can sub nectarines)
1 cup flat fresh parsley leaves, well-washed and dried
2 lbs boneless skin-on chicken breast halves
salt and pepper
1 lb hot Italian sausage link
2 red bell peppers, halved and seeded
1 red onion, peeled and sliced thick
1/4 cup vegetable oil
1/2 lb very thinly shaved pecorino romano cheese

Steps:

  • In large bowl, whisk together olive oil, vinegar, garlic, black olives and salt and pepper. Stir in peaches or nectarines and parsley; set aside.
  • Sprinkle chicken generously with salt and pepper and place over coals skin side down. Grill until breasts are just opaque throughout, about 7 to 9 minutes per side. Check for doneness by cutting into one of the breasts at the thickest point. It should appear opaque all the way through with no pinkness.
  • Soon after you start grilling the chicken, put the sausages on the grill and cook, rolling them around occasionally until they are done. When they are both done, cut them into bite-sized pieces and add to the bowl with the vinaigrette and peaches.
  • Coat pepper halves and onion slices with vegetable oil and sprinkle generously with salt and pepper. Place on grill and cook until they are well-browned. Cut into bite-sized pieces and add to bowl.
  • Toss all ingredients together until everything is well-coated with dressing. Transfer to serving bowl, sprinkle with shaved pecorino and serve.
