CILANTRO GRILLED CHICKEN BREAST
Steps:
- Preheat a grill or grill pan over high heat.
- Lightly coat chicken with oil and sprinkle each evenly on both sides with the salt and pepper. Grill chicken breasts for about 4 to 5 minutes on each side, or until thoroughly cooked; the meat should be solid white throughout and the internal temperature will read 165 degrees F. Remove from grill and immediately top with Cilantro Herb Butter. Garnish with parsley, if desired. Serve as butter is melting.
- Follow the Scampi Butter recipe, but use only half of the garlic, and replace the parsley with 2 tablespoons minced fresh cilantro.
- In a bowl, whisk all ingredients until thoroughly combined. Refrigerate until ready to use. Use the Scampi "base" to make different flavored butters.

- Preheat grill to medium. Combine garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small dish; mash into a paste using back side of a large spoon. Add lime peel.
- Wash hands. Loosen skin of chicken by slipping your hand between the meat and skin. Spread a quarter of the garlic mixture and tuck 2 cilantro sprigs under the skin of each breast. Wash hands.
- Combine chopped cilantro, butter or margarine, oil and lime juice in a small bowl. Brush chicken skin lightly with mixture. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Place chicken on grill, skin side down. Brush with cilantro-butter mixture. Cover and grill 15 minutes. Turn chicken; brush with half of remaining cilantro butter. Cover and grill 10 minutes. Without turning, brush chicken with remaining cilantro butter. Cover and grill 5 minutes or until done (internal temperature 180° F).
- Serving suggestion: Serve with Spanish Rice and Chilled Fresh Fruit. Refrigerate leftovers.

GRILLED CHICKEN WITH CILANTRO BUTTER
A Garlic mixture and cilantro sprigs placed under the skin of a bone-in breast, then grilled to sear in the flavor. Serve with Spanish rice for an ethnic flavor.

- Mash garlic, 1/2 tsp. salt, and 1/4 tsp. pepper with flat side of large knife into a paste; add lime peel.
- Rinse chicken with cold water and pat dry with paper towels. Loosen skin by slipping your hand between meat and skin. Rub one-quarter of garlic mixture between skin and each breast half, spreading evenly; tuck in 2 cilantro sprigs. Sprinkle chicken with remaining 1/2 tsp. salt and 1/4 tsp. pepper. Wash hands.
- In small bowl, combine butter, chopped cilantro, oil, and lime juice. Brush some lightly on chicken.
- Preheat grill. Place chicken, skin-side down, on grill; brush with cilantro butter. Cover and grill 15 minutes. Turn chicken, brush with half of remaining cilantro butter, cover and grill 10 minutes. Brush chicken with remaining cilantro butter, cover and grill 5 minutes or until juices run clear when thickest part of chicken is pierced or temperature on instant-read thermometer reaches 170 degrees F. - Mix together the marinade ingredients in a deep bowl. Add the chicken breasts and turn to coat completely. Cover the bowl and refrigerate.
- Marinade for about 1 hour. You can leave the chicken in the marinade longer, but because the mixture is very acidic, the chicken will begin to appear poached.
- Preheat your grill. Cook the chicken over medium hot coals for about 3-5 mins per side.
- Serve and enjoy.
