Scrambled Egg Breakfast Sandwiches with Pate image

A riff on a banh mi, this hearty breakfast sandwich combines eggs, pickled veggies, pate and a Sriracha and fish sauce-infused mayo, all piled on toasted Kaiser rolls.

4 kaiser rolls, split open
1 carrot, thinly sliced
1 Persian cucumber, thinly sliced
1 tablespoon seasoned rice vinegar, plus more for the chips
1 tablespoon fish sauce
3 tablespoons mayonnaise
2 to 3 teaspoons Sriracha (Asian chile sauce), plus more for the chips
8 large eggs
4 ounces country pate or liverwurst
1 tablespoon vegetable oil
1/2 cup fresh basil
Potato chips, for serving

Steps:

  • Preheat the oven to 375 degrees F. Wrap each roll in foil and bake until crisp on the outside, about 15 minutes.
  • Meanwhile, toss the carrot, cucumber, vinegar and 2 teaspoons fish sauce in a bowl; set aside, stirring occasionally, 10 minutes. Combine the mayonnaise, Sriracha and the remaining 1 teaspoon fish sauce in a small bowl. Beat the eggs in a medium bowl.
  • Unwrap the rolls; spread the bottom buns with the mayonnaise mixture and top with the pate.
  • Heat the vegetable oil in a large nonstick skillet over medium heat. Add the eggs and cook, stirring, until just set, about 3 minutes; divide among the rolls. Add the basil and carrot-cucumber salad to the sandwiches and drizzle with some of the vinegar mixture from the salad bowl. Serve with potato chips; sprinkle the chips with vinegar and drizzle with Sriracha.

3 tablespoons asian fish sauce
2 tablespoons fresh lime juice
1 tablespoon sugar
1 garlic clove, minced
1 Thai chile, thinly sliced
1 head boston lettuce, separated into leaves
16 sprigs of fresh mint

Steps:

  • Preheat grill to medium.
  • Pierce a tiny hole in the end of each egg.
  • Place eggs on grill and cook until shell is browned and eggs are cooked through, 10-12 minutes, turning frequently with tongs.
  • Combine fish sauce, lime juice, sugar, garlic and chile in a small bowl and stir until sugar is dissolved.
  • Shell eggs and cut into quarters.

  • 1. Preheat the grill to medium.2. When ready to cook, pierce a tiny hole in the end of each egg with an egg pricker or needle. Place the eggs on the grill and cook until the shell is browned and eggs are completely cooked, 10 to 12 minutes, turning often with tongs to ensure even cooking.3. Combine the fish sauce, lime juice, sugar, garlic, and chile in a small bowl and stir until the sugar is dissolved. Divide the sauce among 4 tiny bowls. Arrange the lettuce leaves and mint on a platter.4. Serve the eggs in the shell. To eat, shell the egg and cut it in quarters lengthwise. ⅓ cup Cheddar-Jack cheese
cooking spray
2 teaspoons butter, softened
2 slices bread
⅓ cup shredded mozzarella cheese, or more to taste

Steps:

  • Whisk egg, milk, salt, onion powder, and garlic-pepper seasoning together in a bowl until well combined and pale yellow in color. Dump in Cheddar-Jack cheese and stir until thick.
  • Spray a skillet with cooking spray and set over medium-low heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Remove to a plate.
  • Lightly butter one side of each bread slice.

I'm showing you my favorite marinade and grilling technique for boneless, skinless chicken breasts, which can be a challenge, since they're often so dry and bland, but not with this method. Plus, I'm showing you how to make my new favorite thing to eat, which is whipped feta. Serve with grilled red onion and red bell pepper if you like, and garnish with Greek olives.

4 (8 ounce) boneless, skinless chicken breasts
¼ cup red wine vinegar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried rosemary
½ teaspoon garlic powder
¼ cup olive oil
1 drizzle olive oil, or as needed
2 tablespoons chopped Italian parsley
2 tablespoons chopped fresh mint
1 cup full-fat Greek yogurt
8 ounces feta cheese
1 teaspoon finely crushed garlic, or to taste
1 tablespoon chopped fresh mint
1 teaspoon lemon zest

Steps:

  • Cut chicken breasts in half lengthwise.
  • Combine red wine vinegar, kosher salt, black pepper, cayenne, thyme, oregano, rosemary, and garlic powder in a bowl. Add chicken and toss until thoroughly and evenly coated. Pour in ¼ cup olive oil and toss to coat. Cover with plastic wrap and marinate in the refrigerator for 1 to 12 hours, but 2 to 3 hours is ideal.
  • Place Greek yogurt in another bowl and crumble in feta cheese. Add garlic, mint, and lemon zest and whip with an electric hand mixer or whisk until light and fluffy. Taste and adjust as needed. Refrigerate until needed.
  • Preheat a charcoal grill until coals are white and very hot.
  • Grill chicken over the hot coals for about 4 minutes per side; continue to flip and grill chicken until no longer pink in the center and an instant-read thermometer inserted into the center of each piece reads at least 150 degrees F (65 degrees C). Remove from the grill and let rest for about 5 minutes.
  • Spread whipped feta onto a serving platter or plate and place chicken over top. Sprinkle with fresh Italian parsley and mint and serve.
