French bread (or Italian) is lightly toasted, spread with a creamy cheese mixture and grilled until warm, melted, and unbelievably delicious. The finished bread keeps well in an airtight container.

Steps:
- Preheat grill for medium heat.
- In a medium bowl, mix the mayonnaise, garlic, and Parmesan cheese. In a saucepan over medium-low heat, mix the Cheddar cheese, half-and-half, and paprika. Stir constantly until melted and smooth. Pour into the bowl with mayonnaise mixture, stirring until well blended.
- Place the French bread on the grill cut side down, and let it toast for a few minutes. Remove from the grill, and spread the cheese mixture on each side. Place the halves back together, and wrap the loaf in aluminum foil. Return to the grill for about 15 minutes, turning occasionally, until the loaf is heated through and the cheese mixture is hot.

- Carefully peel paperlike skin from around each bulb of garlic, leaving just enough to hold garlic cloves together.
- Place each garlic bulb on 12-inch square of heavy-duty aluminum foil. Brush bulbs with oil. Wrap foil securely around each bulb.
- Heat coals or gas grill. Cover and grill 4 inches from medium coals 25 to 35 minutes or until garlic is tender when pierced with toothpick or fork.
- Grill bread 4 inches from medium coals about 5 minutes, turning once, until golden brown. To serve, gently squeeze garlic out of cloves; spread on bread.

- Melt the butter in a saucepan over medium heat. Add the garlic and parsley, and cook until the garlic is fragrant, about 2 minutes. Remove the pan from the heat. Cut the bread into diagonal 1/2" slices. Lightly brush some of the garlic butter onto both sides of each slice. Set up the grill for medium heat, direct grilling with both a hot and cold (unheated) zone. When ready to cook, brush and oil the grate. Place the bread slices over the hot zone over the coals, and toast them until golden brown, 1-3 minutes per side. Keep an eye on them, so they don't burn. Serve immediately.

- Cut bread in half lengthwise, and cut in half crosswise if very long. Brush cut surfaces of bread lightly with olive oil. Under a broiler or on a grill, toast bread, turning a few times, until cut surfaces are golden brown. (If using a broiler, you can place bread directly on the oven rack.)
- Remove bread to a work surface, grab a garlic clove with your fingertips and rub it lightly over the cut surfaces of the bread. (The papery skin of the garlic will come off.) When the bread is well scented with garlic, brush again with olive oil and toast again. If using tomato, rub the cut surfaces against the bread so the bread absorbs the juice. Oil and toast bread one last time, until golden and charred. Sprinkle lightly with salt and serve immediately.
