2 pounds ground lamb or turkey
1/2 cup plain Greek yogurt, plus more for serving
1/4 cup fresh cilantro leaves, finely chopped
1/4 cup fresh mint leaves, finely chopped
2 tablespoons fresh thyme leaves, finely chopped
1/4 teaspoon ground cinnamon
2 to 3 cloves garlic, finely chopped
1 egg, lightly beaten
1 lemon
1 Fresno chile pepper, seeded and finely chopped
1 large shallot, minced
Kosher salt and freshly ground pepper
Vegetable oil, for brushing
Cooking spray
Grilled naan bread, for serving
Melted butter, for brushing
Chutney, for serving

Steps:

  • Combine the ground lamb, yogurt, herbs, cinnamon, garlic, egg, the finely grated zest of the lemon, chile pepper, shallot, some salt and lots of pepper in a large bowl. Form one-quarter of the meat mixture around each of 4 metal skewers (if you don't have skewers, you can form it into patties). Brush with vegetable oil.
  • Heat a grill pan or griddle over medium-high heat until very hot, then spray with cooking spray. Add the kabobs and cook, gently turning occasionally, until cooked through, 10 to 12 minutes.
  • Brush the naan with melted butter. Cut the lemon into wedges. Serve the kabobs with the naan, lemon wedges, chutney and yogurt.

8 Bamboo skewers
1/4 cup Onion ((grated))
2 cloves Garlic ((minced))
1 tbsp Fresh parsley ((chopped))
1 tbsp Fresh dill ((chopped))
1 tsp Cumin
1 1/2 tsp Sea salt
1/4 tsp Black pepper
2 lbs Ground lamb

Steps:

  • Soak the bamboo skewers in water for 30 minutes. Pat dry.
  • Meanwhile, in a large bowl, stir together all ingredients except the lamb. Add the lamb and mix until just combined. Do not over-mix.
  • Divide the meat into 16 sections. Mold each section of meat around a bamboo skewer, making it a few inches long and about 1 inch (2.5 cm) thick. You'll fit 2 sections of meat per skewer, about 1-2 inches apart.
  • Preheat the grill to medium-high heat and oil the grates lightly. Place the skewers on the grill and cook for 3 minutes. Flip and cook for 3-5 more minutes, to desired level of doneness. Time on the second side will be about 2 minutes for medium rare, 3 minutes for medium, 4 minutes for medium-well and 5 minutes for well done.

1 1/4 pounds ground lamb
3/4 cup finely chopped onion
1/2 cup finely chopped fresh parsley
1/2 cup finely chopped fresh cilantro
4 garlic cloves, minced
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
12 bamboo skewers
Olive oil
Warm pita bread
Fresh Hot-Pepper Paste

Steps:

  • Combine lamb, onion, parsley, cilantro garlic, salt, pepper, paprika, and cayenne in large bowl and mix well. (Can be prepared 6 hours ahead. Cover and refrigerate.) Place bamboo skewers in shallow dish. Cover with cold water and let stand at least 1 hour.
  • Prepare barbecue (medium-high heat). Drain skewers. Form generous 1/4 cup lamb mixture into 3-inch-ling sausage around center of 1 bamboo skewer. Repeat with remaining lamb mixture and skewers. Brush lamb kebabs with oil. Grill kebabs until brown and cooked through, turning frequently, about 12 minutes. Serve in warm pita bread with Fresh Hot-Pepper Paste.
