GRILLED HERB CHICKEN, VEGETABLES AND IDAHO® BABY GOLD POTATO KABOBS



Grilled Herb Chicken, Vegetables and Idaho® Baby Gold Potato Kabobs image

Number Of Ingredients 10

18 (approximately 1 pound) Idaho® Baby Gold Potatoes, scrubbed and cut in half
2 medium zucchini, trimmed and cut into 18 wedges
2 medium onions, cut into 18 wedges
2 medium red bell peppers, seeded and cut into 18 wedges
2 boneless, skinless chicken breasts, trimmed and cut into 18 (2-inch) pieces
3 Tbsp olive oil
1 Tbsp chopped fresh oregano or 1 teaspoon dried oregano
1 Tbsp chopped fresh rosemary or 1 teaspoon dried rosemary
1 tsp garlic powder
1/2 tsp sea salt

Steps:

  • Preheat grill to medium-high heat.
  • Place potatoes in a microwave-safe dish. Microwave on HIGH for 4 to 5 minutes or until just barely tender, avoiding overcooking.
  • Divide evenly and thread cooked potatoes, vegetables and chicken pieces onto each of six metal skewers, alternating potatoes, vegetables and chicken, if desired.
  • Combine olive oil, oregano, rosemary, garlic powder and sea salt in a small bowl. Pour approximately half of olive oil mixture into a separate bowl and set aside. Brush kabobs with remaining half of olive oil mixture.
  • Place kabobs on prepared grill. Cook for 5 to 7 minutes on each side or until chicken is no longer pink and vegetables are tender. Remove from grill and place on serving platter. Brush cooked kabobs with remaining olive oil mixture using a clean brush before serving.

These yummy little potatoes can be made ahead. Just cover and refrigerate the mixture in the bowl until grilling time. You can use either white or red potatoes or mix the two for a more colorful presentation.

4 lbs tiny new potatoes
salt
1/3 cup olive oil
2 teaspoons minced garlic
1/2 teaspoon dried thyme
1/2 teaspoon black pepper

Steps:

  • Place potatoes in salted water to cover in large sauce pot.
  • Boil until potatoes are tender, about 10 to 12 minutes.
  • Drain and transfer potatoes to large bowl.
  • Toss with oil, garlic, thyme and pepper.
  • Preheat grill.
  • Thread potatoes evenly on 6 metal skewers.
  • Grill for about 9 minutes, turning every 3 minutes and brushing with oil mixture until evenly browned.

1/4 cup butter, melted
1/3 cup lemon juice
1 tablespoon sugar
1 teaspoon dried thyme leaves
3/4 teaspoon salt
1/4 teaspoon dried oregano leaves
1/4 teaspoon pepper
2 tablespoons onions, finely chopped
1/2 teaspoon garlic, finely chopped
1 teaspoon hot pepper sauce
1 lb skinless chicken breast half, cut into about 32 (or sirloin roast)
8 small mushrooms
8 cherry tomatoes
1 green bell pepper, cut into 8 (1-inch)
1 summer squash, cut into 8 (1-inch)
4 (12 inch) metal skewers

Steps:

  • Combine all marinade ingredients in large plastic resealable food bag; add chicken pieces. Tightly seal bag. Turn bag to coat chicken well. Place into 13x9-inch pan. Refrigerate, turning occasionally, at least 3 hours. Drain; reserve marinade.
  • Heat one-side of gas grill on medium or charcoal grill until coals are ash white. Place coals in charcoal grill to one-side. Make aluminum foil drip pan; place opposite heat.
  • To assemble kabobs, alternately thread chicken, mushrooms, tomatoes, bell pepper and squash onto skewers. Brush kabobs with marinade. Place kabobs on grill over drip pan. Grill, turning and basting occasionally, until chicken is fork tender (15 to 20 minutes).

4 large skinless, boneless chicken breast halves
2 tablespoons olive oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon chopped garlic
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Rinse chicken breasts, pat dry with paper towels, and pierce several times with a fork. Place chicken breasts into a large resealable plastic bag and pour in olive oil. Seal and shake bag to coat chicken with olive oil; add rosemary, thyme, oregano, garlic, salt, and black pepper to the bag, seal, and shake again to coat chicken with herbs.
  • Grill chicken breasts on the preheated grill until the juices run clear and an instant-read meat thermometer inserted into the thickest part of the meat reads at least 160 degrees F (70 degrees C, about 10 minutes per side.

2 tablespoons chopped Italian flat leaf parsley
2 teaspoons fresh rosemary, minced
2 teaspoons chopped fresh thyme
1 teaspoon dried sage
3 cloves garlic, minced
¼ cup olive oil
½ cup balsamic vinegar
salt and pepper to taste
1 ½ pounds skinless, boneless chicken breasts

Steps:

  • In a blender combine the parsley, rosemary, thyme, sage, garlic, oil, vinegar and salt and pepper to taste. Blend together. Place chicken in a nonporous glass dish or bowl and pour blended marinade over the chicken. Cover dish and refrigerate to marinate for at least 2 hours or up to 48 hours.
  • Preheat grill to medium high heat OR set oven to broil.
  • Remove chicken from dish (disposing of leftover marinade) and grill or broil for about 6 to 7 minutes per side, or until chicken is cooked through and no longer pink inside.

1 shallot, minced
1 tablespoon minced fresh lemon balm or 1 teaspoon grated lemon zest
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon crushed red pepper flakes
1 broiler/fryer chicken (3 to 4 pounds)

Steps:

  • Prepare grill for indirect heat using a drip pan. In a small bowl, mix the first 11 ingredients. With fingers, carefully loosen skin from chicken; rub seasoning mixture under and over skin. Tuck wings under chicken and tie legs., Place chicken over drip pan and grill, covered, over indirect medium heat until a thermometer inserted in thickest part of thigh reads 170°-175°, 1-1/4 to 1-1/2 hours, rotating occasionally. Remove chicken from grill; tent with foil. Let stand 15 minutes before carving.
