GRILLED LEMON-PEPPER PORK TENDERLOIN

- Heat coals or gas grill for direct heat. In small bowl, mix all ingredients except pork and oil. Brush oil over all sides of pork. Rub lemon peel mixture over pork.
- Cover and grill pork over medium-low heat 15 to 20 minutes, turning occasionally, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.
- Remove pork from grill; cover with foil. Let stand 5 to 10 minutes before slicing.

- In a large resealable bag, combine lemon juice, oil, garlic, salt, oregano, and pepper. Place chops in bag, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.
- Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.
- Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until done.

- In a resealable plastic bag, combine the oil, lemon juice, zest, garlic, oregano, salt and pepper; add pork. Seal bag and turn to coat; refrigerate for 8 hours or overnight., Drain and discard marinade. Grill, covered, over medium heat for about 13-14 minutes on each side or until juices run clear and a thermometer reads 160°. Let stand for 5 minutes before slicing.

- Prepare grill for indirect heat.
- Season meat with garlic powder, salt, and pepper.
- Lightly oil grate. Place tenderloin on grate, and position drip pan under meat. Cook over indirect heat for 30 minutes.
- Brush tenderloin with barbeque sauce. Continue cooking for 15 minutes, or until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C). Allow pork to rest for 10 minutes. Slice pork, and serve with additional barbeque sauce for dipping.

- In a small bowl, whisk together everything except the tenderloin. Ingredients. 2 Whole lemons, zested. 1 Clove garlic, minced. 1 Teaspoon freshly minced parsley.
- Trim all silverskin and excess fat from the tenderloin. Ingredients. 1 (2 lb) pork tenderloin.
- Place pork in a large resealable bag. Pour the marinade over the tenderloin and zip closed. Transfer to the refrigerator and marinate for at least 2 hours but no more than 8.
- When ready to cook, set Traeger temperature to 375˚F and preheat, lid closed for 15 minutes. Grill: 375 ˚F.
- When the grill is hot, place tenderloin directly on the grill grate and cook 15 to 20 minutes, flipping once halfway through until the internal temperature reaches 145˚F.
