1 cup fat-free milk
1/2 cup fat-free evaporated milk
2 large egg whites
1 large egg
1 cup all-purpose flour
1/4 cup plus 1/3 cup sugar, divided
1/4 cup baking cocoa
1/2 teaspoon salt
4-1/2 teaspoons cornstarch
1 cup water
4-1/2 cups fresh or frozen raspberries, thawed, divided
Optional: Whipped cream and confectioners' sugar

Steps:

  • In a small bowl, whisk milk, evaporated milk, egg whites and egg. In another bowl, mix flour, 1/4 cup sugar, cocoa and salt; add to milk mixture and mix well. Refrigerate, covered, 1 hour., In a small saucepan, combine cornstarch and remaining 1/3 cup sugar; set aside. Place water and 3-1/2 cups raspberries in a blender; cover and process until pureed, 1-2 minutes., Strain puree into cornstarch mixture and discard seeds. Bring to a boil over medium heat; cook and stir until thickened, 1-2 minutes. Transfer to a small bowl; refrigerate until chilled., Heat a lightly greased 8-in. nonstick skillet over medium heat. Stir batter. Fill a 1/4-cup measure three-fourths full with batter; pour into center of pan. Quickly lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn crepe over and cook until bottom is cooked, 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing pan as needed. When cool, stack crepes between pieces of waxed paper or paper towels., Spread each crepe with 2 tablespoons sauce. Fold each crepe into quarters. Garnish with remaining 1 cup berries and, if desired, whipped cream and confectioners' sugar.

1 cup milk
1 tablespoon white sugar
2 eggs
2 teaspoons butter, melted

1 tablespoon butter, or as needed
1 (12 ounce) package frozen raspberries, thawed
1 (8 ounce) carton sour cream
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar

Steps:

  • Combine flour, milk, sugar, eggs, butter, cocoa powder, vanilla extract, salt, and lemon zest in an electric blender. Blend until smooth. Pour batter into a shallow pie pan.
  • Melt butter in a frying pan or crepe maker over medium heat. Pour 2 tablespoons of batter into the skillet and immediately rotate the skillet to spread batter out in a thin layer. Cook until the top of the crepe is no longer wet and the bottom has turned light brown, 1 to 2 minutes. Run a spatula around the edge of the skillet to loosen crepe; flip crepe and cook until the other side has turned light brown, about 1 minute more. Repeat with remaining batter.
  • Combine raspberries, sour cream, cream cheese, and powdered sugar in a medium bowl using an electric mixer. Top each crepe with a spoonful of filling and fold over or roll up.

2 cups unbleached all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon kosher salt
3 cups whole milk
8 large eggs
6 tablespoons unsalted butter, melted, plus more for skillet
2 1/4 teaspoons unflavored gelatin (1 envelope)
1/3 cup cold water
1 cup seedless raspberry jam (12 ounces)
3 ounces white chocolate, melted
1 cup chocolate-hazelnut spread, such as Nutella
3 ounces bittersweet chocolate, melted
3 cups heavy cream
1/3 cup confectioners' sugar, plus more for serving
Fresh raspberries, for serving

Steps:

  • Crepes: In a blender, puree flour, sugar, salt, milk, eggs, and butter until smooth, 30 seconds. Refrigerate at least 30 minutes and up to 1 day; stir for a few seconds before using.
  • Heat an 8-inch nonstick skillet over medium; lightly brush with butter. Add a scant 1/4 cup batter, tilting and swirling skillet until it evenly coats bottom. Cook until crepe is golden in places on bottom and edges lift from pan, 1 to 1 1/2 minutes. Flip and cook on other side until just set, about 45 seconds. Slide crepe onto a paper towel-lined plate. Repeat with remaining batter, coating pan with more butter as needed, and stacking crepes directly on top of one another (you should finish with about 30). Let cool completely before using, or cover and refrigerate up to 1 day.
  • Fillings: In a bowl, sprinkle gelatin over cold water. Let stand until softened, about 5 minutes. Meanwhile, melt jam in a small saucepan over medium heat until hot. Remove from heat; stir in gelatin mixture until dissolved (mixture should feel smooth when rubbed between your fingers). Transfer to a large bowl and whisk in white chocolate until smooth. In another bowl, stir together hazelnut spread and bittersweet chocolate until smooth. In a third bowl, whisk cream and confectioners' sugar to stiff peaks. Divide whipped cream evenly (about 3 cups each) between raspberry and hazelnut mixtures and stir until smooth. Refrigerate cream mixtures until thickened slightly but still spreadable, at least 1 hour and up to 2 hours.
  • To make cake, place 1 crepe on a cake plate. Spread 1/3 cup raspberry-cream mixture evenly over crepe, leaving a 1/4-inch border. Top with another crepe; spread with 1/3 cup hazelnut-cream mixture. Repeat layering, alternating fillings, until all crepes are used, finishing with a crepe. Loosely cover with plastic wrap and refrigerate until cold and set, at least 8 hours and up to 2 days. Just before slicing and serving, top cake with raspberries and dust generously with confectioners' sugar.

1/4 cup (45g) organic spelt flour (or flour of choice)
2 tablespoons (14g) unsweetened cocoa powder
1 tablespoon natural sweetener or sugar of choice
1/3 cup (80ml) liquid egg whites
2/3 cup (170ml) unsweetened almond milk
1/2 cup fresh raspberries
1 cup (240g) low fat greek yoghurt
2 tablespoons unsweetened cocoa powder
1 tablespoon natural sweetener or sugar of choice
1 tablespoons unsweetened cocoa powder
1/2 tablespoon natural sweetener or sugar of choice
4 tablespoons warm water

Steps:

  • Combine Crepe ingredients in a bowl and whisk until batter is smooth and free from lumps. (NB: Add a little more milk only if needed to make the batter thin).
  • Pour 1/4 of batter onto the centre of the pan while swirling pan to cover the base and create a thin crepe. When dark in colour and set to the touch, flip (I use my fingers to flip them. It's easier than using a spatula!)
  • Remove when cooked and repeat with remaining batter.
  • While crepes are frying, prepare chocolate cream filling mix and chocolate sauce in separate bowls.
  • Fill each crepe with filling and fold over.
  • Top with fresh raspberries
  • Drizzle with chocolate sauce.
  • Optional: Dust with cocoa powder!

1 teaspoon all-purpose flour, or as needed
1 (15.25 ounce) package chocolate cake mix
1 cup water
1 (6 ounce) container vanilla yogurt
1 (3.9 ounce) package instant chocolate pudding mix
⅓ cup vanilla-flavored vodka
⅓ cup vegetable oil
3 large eggs
½ (12 ounce) package miniature chocolate chips, or more to taste
12 ounces fresh raspberries, or more to taste
⅓ cup white sugar
1 (16 ounce) container prepared vanilla frosting
1 (8 ounce) container frozen nondairy whipped topping, thawed
3 (1 ounce) squares white chocolate, melted and cooled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans with baking spray. Mix cocoa and flour together and use to flour the pans.
  • Combine cake mix, water, vanilla yogurt, pudding mix, vodka, vegetable oil, and eggs in a large bowl. Mix on low speed until moistened. Mix on medium speed for 2 minutes, then stir in chocolate chips. Divide batter evenly into the prepared cake pans.
  • Bake in the preheated oven until the centers spring back at your touch, 40 to 50 minutes. Cool in the pans for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack and let cool completely, about 25 minutes.
  • Meanwhile, combine raspberries and sugar for filling in a saucepan over medium heat. Cook, stirring frequently, until they reduce by about 50%. Set aside to cool.
  • Slice each cooled cake layer horizontally into two layers. Place the bottom layer on a serving plate and top with 1/3 of the filling. Repeat with 2 more layers and remaining filling. Top with final layer.
  • Combine vanilla frosting, whipped topping, and melted white chocolate in a large mixing bowl; mix on high speed until smooth and creamy.
  • Frost the top and sides of the cake. Decorate with extra chocolate chips and/or raspberries, if desired. Chill for at least 1 hour before serving.

I love crepes. They are so easy to make and only require a few simple ingredients. These Chocolate Raspberry Crepes take crepes to a whole new level. They are the perfect combination of chocolatey and fruity.

1 cup flour
2 eggs
½ cup lowfat milk
½ cup water
¼ teaspoon salt
2 Tablespoons melted butter
1 box instant chocolate pudding mix
2 cups milk
½ cup frozen raspberries
1 can whipped cream

Steps:

  • Heat frying pan on medium heat.
  • Whisk flour, eggs, water and milk together in a large mixing bowl.
  • Add salt and butter.
  • Continue mixing until the lumps have disappeared.
  • Spray a small amount of non-stick cooking spray onto pan.
  • Next drop 1/4 cup of mixture onto the heated pan.
  • Right after mixture is poured on, pick up the pan quickly and tilt in a circular motion.
  • You want the mixture as thin as possible and to cover the whole pan.
  • Cook for about 2 minutes on the first side - flip - then 1 minute on the second side.
  • Remove from pan and place about 2 tablespoons of pudding onto the crepe in a line down the middle.
  • Spray desired amount of whip cream on top of the chocolate and stick in a few raspberries.
