¼ cup red wine vinegar
¼ cup reduced-sodium soy sauce
¼ cup olive oil
1 ½ teaspoons dried parsley flakes
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
5 skinless, boneless chicken breasts, thinly sliced

Steps:

  • Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.
  • Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
  • Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1/2 c. extra-virgin olive oil
1/4 c. soy sauce
3 garlic cloves, chopped
1 tbsp. brown sugar
2 tbsp. lemon juice
1 tbsp. dijon mustard
1 tsp. fresh thyme leaves, chopped
1 tsp. kosher salt
1/2 tsp. ground black pepper
4 lb. bone-in chicken pieces, such as drumsticks, thighs, or leg quarters
1 c. marinade
Oil, as needed

Steps:

  • For the marinade: Combine the olive oil, soy sauce, garlic, brown sugar, lemon juice, dijon mustard, thyme, salt, and black pepper in a pint-sized mason jar. Cover and shake well to combine. Use immediately or store in the refrigerator for up to 4 days before use.
  • For the grilled chicken: Place the chicken in a zip-up gallon bag. Add all of the marinade, seal the bag, and refrigerate for 30 minutes (or up to 4 hours).
  • Meanwhile, pre-heat one side of the grill to medium heat, around 350°, and leave the other side unlit. Oil the grill grates well.
  • Remove the chicken from the marinade and pat dry with paper towels. Discard the remaining marinade. Place the chicken skin-side down over the lit side of the grill. Cover and cook until grill marks appear and the chicken easily releases, 6 to 8 minutes.
  • Flip the chicken and transfer it to the unlit side of the grill. Cover and cook until the internal temperature reads 165˚, 35 to 45 minutes more (depending on the size of your chicken pieces). Let rest for 5 minutes, then serve immediately.

4 medium (4- to 6-ounce) skinless, boneless chicken breasts
2 tablespoons dark brown sugar
1/4 cup fish sauce
1/4 cup soy sauce
2 tablespoons fresh lime juice
2 tablespoons canola oil, plus more for brushing
1 tablespoon hot chile-garlic paste
4 scallions, thinly sliced, greens and whites kept separate
1 teaspoon sesame oil
One 1-inch piece ginger, grated
1 tablespoon toasted sesame seeds

Steps:

  • Butterfly the chicken breasts using a sharp knife, then lightly pound to an even thickness.
  • In a large glass bowl, whisk together the brown sugar, fish sauce, soy sauce, lime juice, canola oil, chile-garlic paste, scallion whites, sesame oil and ginger until combined. Add the chicken and turn to coat in the marinade. Cover and let marinade in the refrigerator for at least 2 or up to 4 hours.
  • Preheat a grill or grill pan over medium-high heat until hot.
  • Remove the chicken from the marinade and transfer to a paper-towel-lined baking sheet. Use paper towels to dab off some of the marinade.
  • Brush the grill with canola oil, then grill the chicken until fully cooked, 3 to 5 minutes per side. Transfer the chicken to a platter and garnish with the scallion greens and sesame seeds. Serve.

2 large shallots, finely chopped
4 garlic cloves, finely grated
⅔ cup extra-virgin olive oil, plus more for grill
¼ cup sherry vinegar or red wine vinegar
3 Tbsp. fresh lemon juice
2 Tbsp. fresh lime juice
1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt
1 tsp. sugar
½ tsp. freshly ground black pepper
4 skinless, boneless chicken breasts (about 1½ lb.)

Steps:

  • Whisk 2 large shallots, finely chopped, 4 garlic cloves, finely grated, ⅔ cup extra-virgin olive oil, ¼ cup sherry vinegar or red wine vinegar, 3 Tbsp. fresh lemon juice, 2 Tbsp. fresh lime juice, 1 Tbsp.   • Prepare a grill for medium-high heat; oil grate. Remove chicken from marinade, letting excess drip back into dish; discard marinade in dish. Grill chicken, turning halfway through, until cooked through and blackened grill marks appear, 10-14 minutes. Transfer to a cutting board and let rest 5-10 minutes before slicing.
  • Serve chicken with reserved marinade spooned over.

I've been experimenting with lots of grilled chicken recipes and found this one from a Rachel Ray collection to be a winner. It's fast, easy and tasty. (tip: do not add zest if you do not want it too lemony)

3/4 cup olive oil
3/4 cup white wine
1 tablespoon plus one teaspoon grated fresh ginger
2 1/2 teaspoons ground coriander
2 1/2 teaspoons ground cumin
1 tablespoon plus one teaspoon Dijon mustard
Freshly ground black pepper to taste
10 whole boneless chicken breasts, halved
Black-bean-and-mango-pineapple salsa (see recipe)
Sprigs of fresh cilantro for garnish

Steps:

  • Combine the oil, wine, ginger, coriander, cumin, mustard and pepper. Blend well.
  • Put chicken breasts in a glass or ceramic baking dish. Pour 1 1/4 cup of the marinade over them, making sure all the pieces are coated. Marinate at room temperature for 2 hours, turning the chicken pieces a few times to coat well. Refrigerate the remaining marinade.
  • Remove the chicken from the marinade and discard what's left in the dish. Grill the chicken over medium heat, basting with the reserved marinade, until cooked through, 4 to 6 minutes.
  • Spread the salsa on a serving platter and arrange the chicken on top. Decorate with sprigs of cilantro.

The key to moist grilled chicken is leaving the skin on during cooking. Some people are reluctant to do this because they think it will increase the fat calories in the finished dish. But the fact of the matter is that, if you remove the skin before eating the chicken, you'll reap the best of both worlds: juicy chicken without significantly more fat than if you'd removed the skin before grilling. Cooking time does not enclude 6 hours marinading time.

  • In non-reactive bowl, combine garlic, lemon juice, olive oil and herbs.

  • Remove chicken from refrigerator 1 hour before grilling.
  • Place chicken breasts skin side down on preheated grill.
  • Sprinkle with salt and pepper, and grill for about 7 minutes on each side depending on thickness of meat.
