FRESH MOZZARELLA BLT WITH PESTO

1 4-inch piece baguette
2 slices low-sodium applewood-smoked bacon
1 1/2 teaspoons store-bought pesto
1 1/2 teaspoons low-fat mayonnaise
1 spear romaine lettuce
2 thick slices heirloom tomato
1 thick slice fresh mozzarella
Kosher salt and freshly ground pepper

Steps:

  • Slice the baguette open, leaving one side attached to form a hinge. Cook the bacon in a skillet over low heat until crispy; drain on paper towels.
  • Combine the pesto with the mayonnaise and smear on the bottom part of the bread. Layer the romaine on the bread, then the tomato, bacon and mozzarella. Season with salt and pepper; close the sandwich and wrap in parchment paper.

I came up with this recipe because I could not find a recipe I was looking for. A very simple, easy, and quick dish to put together. I always make this for myself when I grill steaks for my family.

1 (4 ounce) fillet cod
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
¼ cup roughly chopped spinach, or to taste
¼ tomato, seeded and diced
1 tablespoon chopped onion
1 tablespoon olive oil, or to taste
1 tablespoon balsamic vinegar, or to taste
1 slice mozzarella cheese, cut into cubes

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Place cod on a piece of aluminum foil and season with salt, black pepper, and garlic powder. Top cod with spinach, tomato, and onion; season again with salt and black pepper. Drizzle olive oil and balsamic vinegar over cod and top with mozzarella cheese. Fold foil over cod creating a packet, crimping the edges together making a seal.
  • Cook on the preheated grill until fish flakes easily with a fork, 7 to 9 minutes.

Matzo brei is one of my all-time favorite foods! It is typically eaten on Passover since it is customary to avoid leavened bread. Matzo, a cracker-like unleavened bread, gets soft and chewy when it's soaked and scrambled with eggs in this traditional dish. Some people like sweet matzo brei sprinkled with cinnamon sugar, but I am on Team Savory Brei 4ever!

2 tablespoons olive oil or unsalted butter
1 large shallot, finely chopped
Kosher salt and freshly ground black pepper
4 sheets matzo, broken into approximately 1-inch pieces
4 large eggs
Splash heavy cream
3 ounces fresh spinach, chopped
1/2 cup shredded mozzarella
Hot sauce and ketchup, for serving

Steps:

  • Heat the oil or butter in a large skillet over medium heat. Add the shallot and a pinch of salt and pepper. Cook, stirring occasionally, until soft and translucent, about 5 minutes.
  • Meanwhile, fill a medium bowl with cold water and submerge the matzo. Soak for 1 minute, then drain and set aside. In a separate medium bowl, whisk together the eggs and heavy cream until homogenous. Stir in the matzo and set aside.
  • Add the spinach to the shallots, one handful at a time, stirring until wilted. Add another pinch of salt. Pour in the egg mixture and cook until the bottom is set. Use a spatula to gently pull the bottom cooked parts to the sides of the skillet to make space for more of the mixture to cook. Add the cheese. Repeat this gentle pulling process until a majority of the mixture is set, 1 to 2 more times, then turn off the heat. The eggs should still be quite wet, but they'll continue to cook a bit in the skillet. Continue folding them gently, and once they've reached your desired firmness, remove them from the skillet and serve them immediately. Top with the hot sauce and ketchup.

1 1/2 lbs ground chuck
1 teaspoon salt
3/4 teaspoon fresh ground black pepper
2 cups fresh spinach, firmly packed
1 cup mozzarella cheese, shredded (4 oz.)
1/4 cup basil pesto
4 large hamburger buns, split
1 cup arugula, loosely packed
1/3 cup mayonnaise
2 tablespoons sun-dried tomatoes, chopped
1 tablespoon parmesan cheese, freshly grated
1 tablespoon capers, chopped

Steps:

  • In a medium bowl, gently mix together the beef, salt and pepper.
  • Using generous 1/3 cup per patty, shape the mixture into 8 patties about 1/2-inch thick.
  • Refrigerate while preparing the stuffing.
  • Place the spinach in a dry large saucepan.
  • Cover and cook over medium-high heat for 1-2 min or until wilted, stirring occasionally.
  • Drain and cool.
  • Squeeze out any excess moisture.
  • Chop and place in a medium bowl.
  • Stir in the mozzarella cheese and pesto.
  • Mound about 1/4 cup packed stuffing in the center of 4 patties.
  • Cover with the remaining 4 patties, and seal the edges by pressing firmly together with you fingers.
  • Gently press the center of each patty to eliminate mounding.
  • Heat the grill or grill pan to medium heat.
  • Grill for 5-6 minute.
  • Flip and grill for 5-6 min more or until no longer pink.
  • Meanwhile, in a small bowl, whisk together all the mayonnaise ingredients.
  • Place the buns, split side down, on the grill for 30-60 sec or until lightly toasted.
  • Spread each bun with 2 Tbs of the mayonnaise.
  • Top with a burger and some arugula, if desired.

12 slices bacon
1 medium garlic clove
3 cups lightly packed Baby Spinach
kosher salt or pepper
8 slices bread (I prefer wheat)
8 ounces fresh mozzarella cheese, sliced
1 large tomatoes, sliced and cored
1 tablespoon extra virgin olive oil

Steps:

  • Working in batches, cook the bacon in a 12-inch skillet over medium heat until crisp, about 8 minutes per batch. Transfer to a paper-towel-lined plate and drain off all but 1 Tbsp of the fat. Return the pan to medium heat, add the garlic, and cook until fragrant, about 30 seconds. Stir in the spinach and cook until just wilted, about 30 seconds longer. Season to taste with salt and pepper.
  • Heat a panini or sandwich press according to the manufacturer's instructions. (Alternatively, heat a nonstick grill pan over medium-high heat.).
  • While the press is heating, arrange the spinach on 4 pieces of the bread. Top each with some bacon, mozzarella, and tomato, sprinkle lightly with salt, and complete each sandwich with a slice of the remaining bread. Brush both sides of the sandwiches with the oil.
  • Put the sandwiches on the press, pull the top down, and cook until browned and crisp and the cheese is melted, 3 to 6 minutes, depending on how hot your machine is. (If using a grill pan, put a heavy pan on top of the sandwiches and cook, turning the sandwiches over once). Carefully remove from the press and serve.
  • *For faster and less splattering you can make the bacon in the microwave, I prefer to cook it on the stove but it's up to you. Enjoy.
