1 recipe fresh pizza dough, recipe follows
3 to 4 baby Yukon gold fingerling potatoes, finely sliced
1/2 small onion, finely sliced
6 slices applewood smoked bacon, finely chopped
2 tablespoons rosemary leaves
1/4 cup extra-virgin olive oil, plus extra to grease pan
Kosher salt and freshly ground black pepper
1 cup shredded fontina cheese
1 cup baby arugula, optional
1/2 lemon, juiced
2 packages active dry yeast
2 teaspoons sugar
2 cups warm water (100 to 110 degrees F.)
2 tablespoons kosher salt
6 cups unbleached all-purpose flour, plus more for dusting
2 tablespoons extra-virgin olive oil, plus extra for bowl

Steps:

  • Preheat the oven to 450 degrees F. Put a jelly roll pan or half sheet pan in the oven.
  • In a large mixing bowl, combine the fingerling potatoes, onion, bacon, and rosemary leaves. Add 1/4 cup of olive oil and season with salt and pepper, to taste. Toss together to coat with olive oil.
  • Take the preheated jelly roll pan out of the oven and drizzle some olive oil over entire surface. Cut the dough into 2 pieces and reserve 1 piece for another use. Stretch the pizza dough out so it is just bigger than the pan, then lay it inside the pan so the dough comes up the sides to form a crust on the rim.
  • Pour the potato mixture onto the pizza dough, then sprinkle with shredded fontina. Bake for 20 to 25 minutes until crispy and golden, about 20 to 25 minutes. Garnish with arugula and drizzle the lemon juice over the top. Serve immediately.
  • In a small bowl, combine the yeast, sugar and water and stir gently to dissolve. Let the mixture stand until the yeast comes alive and starts to foam, 5 to 10 minutes.
  • If you're using a stand mixer, combine the salt and flour to the bowl and pulse a few times to mix. Add the yeast mixture, at the lowest speed, until the flour incorporates. When the dough starts to come together, increase the speed to medium and mix until the dough gathers into a ball. This should take about 2 minutes. Add the olive oil and pulse a few more times. Stop the machine periodically to scrape the dough off the hook. Get a feel for the dough as you're making it by squeezing a small amount together between your thumb and fingers. If it's crumbly, add more water, if it's sticky, add more flour, 1 tablespoon at a time. Turn the dough out onto a lightly floured surface and fold it over itself a few times, kneading until it's smooth and elastic.
  • If you're making the dough by hand, add the yeast mixture to a large bowl and stir in the salt and the 2 tablespoons of olive oil. Then begin stirring in the flour. When the mixture becomes too stiff to stir with a spoon, knead in the rest of the flour by hand, adding just enough so that the dough is soft but not too sticky. As you work, squeeze a small amount of dough together between your thumb and fingers. If it's crumbly, add more water; if it's sticky, add more flour, 1 tablespoon at a time. Knead until smooth and elastic, about 10 minutes.
  • Form the dough into a round and put it into a lightly oiled bowl, turning it over to coat the dough entirely with the oil. Cover with plastic wrap or a damp towel and let it rise in a warm spot (i.e., over a gas pilot light) until it doubles in size, about 1 hour.

1 large red onion, cut into 1/4-inch thick slices
2 large yellow pepper, cored, seeded and quartered
2 large red pepper, cored, seeded and quartered

1 recipe favorite pizza dough, rolled into 4 (6-inch) rounds
1/2 pound grated fontina cheese
1 cup sheep's milk ricotta
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh oregano
Basil Vinaigrette, recipe follows
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground black pepper
1/2 cup olive oil

Steps:

  • Preheat a grill.
  • Grill the sausage on both sides until golden brown and cooked through, about 10 minutes per side. Brush onions and peppers with the oil and season with salt and pepper. Grill the onions and peppers until soft, about 3 to 4 minutes per side. Remove the sausage from the grill and slice into 1/4-inch thick slices. Remove the onions, separate into rings, and roughly chop. Remove the peppers and slice into 1/8-inch thick slices.
  • Heat grill to high. Brush dough with olive oil, season with salt and pepper and grill for 2 to 3 minutes or until golden brown. Turn over and grill for 1 to 2 minutes. Remove from the grill and place on a flat surface.
  • Divide the fontina cheese among the 4 pizza rounds. Divide the sausage, onions and peppers over the cheese. Place the pizza on the grill, close the cover and grill until the cheese has melted, about 3 to 4 minutes. To finish in the oven, preheat the oven to 450 degrees F. Place the pizza on sheet pans and bake until the cheese has melted, about 5 to 10 minutes.
  • Mix together the ricotta, extra-virgin olive oil, and oregano in a small bowl and season with salt and pepper, to taste. Remove the pizzas from the oven and drizzle with Basil Vinaigrette. Top with dollops of the ricotta cheese mixture and let rest for 5 minutes. Slice and serve.
  • Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

2 to 3 medium red onions, cut in half lengthwise and thinly sliced across the grain
Extra virgin olive oil
Salt and freshly ground pepper
3 10-inch pizza crusts (1 recipe)
3/4 cup marinara sauce made with fresh or canned tomatoes
1 tablespoon (or more, to taste) fresh thyme leaves
3 ounces crumbled feta

Steps:

  • Prepare a hot grill. Place the onions in a bowl and toss with 1 tablespoon of the olive oil and salt and pepper to taste. Place a perforated grill pan on the grill and let it get hot, then add the onions and cook, tossing in the pan or stirring with tongs, for about 3 to 5 minutes, just until they soften slightly and begin to char. Remove from the grill and return the onions to the bowl.
  • Oil the hot grill rack with olive oil, either by brushing with a grill brush or by dipping a folded wad of paper towels in olive oil and using tongs to rub the rack with it. Place a round of dough on a lightly dusted baker's peel or rimless baking sheet. Slide the pizza dough from the peel or baking sheet onto the grill rack. If the dough has just come from the freezer and is easy to handle, you can just place it on the rack without bothering with the peel. Close the lid of the grill - the vents should be closed --- and set the timer for 2 minutes.
  • Lift up the grill lid. The surface of the dough should display some big air bubbles. Using tongs, lift the dough to see if it is evenly browning on the bottom. Rotate the dough to assure even browning. Keep it on the grill, moving it around as necessary, until it is nicely browned, with grill marks. Watch closely so that it doesn't burn. When it is nicely browned on the bottom (it may be blackened in spots), use tongs or a spatula to slide the dough onto the baking sheet or peel, and remove from the grill. Cover the grill again.
  • Make sure that there is still some flour on the peel or baking sheet and flip the dough over so that the uncooked side is now on the bottom. Brush the top lightly with oil, then top with a thin layer of tomato sauce (no more than 1/4¼ cup) and a layer of grilled sliced onions. Sprinkle with thyme and feta, and drizzle on a little more olive oil. Slide the pizza back onto the grill. If using a gas grill, reduce the heat to medium-high. Close the lid and cook for 2 to 3 more minutes, until the bottom is brown. Open the grill and check the pizza. The top should be hot and the bottom nicely browned. If the bottom is getting too dark but the pizza still needs a little more time, move it to a cooler part of the grill and close the top. Use a spatula or tongs to remove the pizza to a cutting board. Cut into wedges and serve. Repeat with the other two crusts.

Pizza on the grill! I found this recipe a couple months ago while searching for a potato pizza recipe on Google. It is from a personal blog that includes a food section http://www.invisible-jet.net and is attributed to "Mia." I have made it once with a prepared wheat pizza dough, baking it instead of grilling it, and it was very tasty though a little greasy. The carmelized onions and Raclette (a mild, nutty semi-firm cheese from Switzerland), not to mention the fresh lemon juice, are really what make it interesting, and I imagine grilling it only serves to enhance the taste further. I read that Gruyere, Emmental, Jarlsberg or Swiss cheese are good substitutes for Raclette. An unusual, rich and satisfying pizza. Prep time does not include the time spent making the pizza dough.

4 potatoes
2 onions, sliced
2 garlic cloves, chopped

Steps:

  • If you aren't using a pre-baked pizza dough, bake the raw dough until 10 minutes shy of being done before using in the recipe. The author mentions adding a thin layer of tomato sauce prior to baking the crust.
  • Bring a pot of lightly salted water to the boil and simmer potatoes in it for 20 minutes or until easily pierced with a fork. When done, drain, cool and cut into 1/4"-thick slices.
  • Meanwhile, in a medium skillet over medium-low heat, sautee the sliced onion with 1 teaspoon of the oregano and the two tablespoons olive oil until onions are translucent, or about 15 minutes; set aside.
  • To assemble the pizza: Drizzle the prepared crust with olive oil and season with salt, pepper and remaining oregano. Sprinkle with the garlic. Top with slices of potato, then tear the raclette into pieces and scatter over the potato slices. Finally, spread the onion slices on top of the potatoes and cheese.
  • Grill on medium-low heat for 5-7 minutes, then shut grill off and let pizza sit for 5 minutes or until the cheese has melted and the pizza is crispy and browned. Watch closely--If browning too quickly, move pizza to top rack of grill.

2 balls pizza dough, rolled out and chilled (recipe and procedure follow)
olive oil for brushing dough
1 1/2 cups coarsely grated Fontina, preferably Italian (about 9 ounces)
1 cup fresh corn (cut from 2 to 3 ears)
1 red bell pepper, chopped fine (about 1 cup)
2 poblano chilies* if desired, roasted (procedure follows)
6 slices (about 5 ounces) pancetta (Italian unsmoked cured bacon) or bacon, cooked until crisp
1/4 cup chopped scallions
1/4 cup packed fresh coriander leaves, washed well and spun dry
2/3 cup lukewarm water (105°F.-115°F.)
a 1/4-ounce package (2 1/2 teaspoons) active dry yeast
1/2 teaspoon sugar
2 tablespoons olive oil plus additional for oiling bowl
1 3/4 to 2 cups all-purpose unbleached flour
1/4 cup finely ground yellow cornmeal
2 teaspoons coarse salt
*available at Mexican markets and some specialty produce markets

Steps:

  • Open vents in lid and bottom of kettle grill and put 25 briquets on 2 opposite sides of bottom, leaving middle clear. Oil rack and position with wider openings over briquets. Light briquets. (They will be ready for cooking as soon as they turn grayish-white, 20 to 30 minutes.)
  • Remove plastic wrap from 2 pieces of rolled-out pizza dough (if grill is not large, work with 1 piece at a time, keeping remaining piece chilled) and lightly brush dough with some oil. Trying not to stretch dough, carefully transfer it oiled side down, with your hands to rack of grill. (If it's a very hot day, the dough may get too soft to transfer easily; if so, pop it into the freezer until firm again, about 15 minutes.) Lightly brush top with some oil. When grilling pizzas, rotate them if one side of grill is hotter than the other. Grill crusts, covered, until undersides are golden brown, about 4 minutes. Flip crusts over with 2 metal spatulas and top each crust with half of Fontina, corn, bell pepper, poblanos, pancetta, or bacon, and scallions. Grill pizzas, covered, about 5 minutes more, or until undersides are golden brown and cheese is melted.
  • Top pizzas with coriander and cut into wedges.
  • In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour as necessary to prevent dough from sticking, until smooth and elastic 5 to 10 minutes.
  • Alternatively, dough may be made in a food processor. Proof yeast as described above. In food processor process yeast mixture with 1 3/4 cups flour, cornmeal, and salt until mixture forms a ball, adding more water, 1 teaspoon at a time, if too dry or more flour, 1 tablespoon at a time, if too wet, and knead dough by processing 15 seconds more.
  • Put dough, prepared by either method, in an oiled deep bowl and turn to coat with oil. Let dough rise, covered with plastic wrap, in a warm place 1 hour, or until doubled in bulk, and punch down. Form dough into 4 balls. Makes enough dough for four 10-inch thin-crust pizzas.
  • Lightly brush a baking sheet with olive oil. On a lightly floured surface roll out 1 ball of dough 1/8 inch thick (about 10 inches in diameter). Brushing off excess flour, transfer dough with your hands to baking sheet and cover surface completely with plastic wrap. Repeat procedure with remaining dough balls and plastic wrap in same manner, stacking rolled-out pieces on top of one another on baking sheet. Wrap baking sheet with more plastic wrap to ensure that dough is completely covered. (Chill dough until firm, about 1 hour and up to 4 hours.)
  • Using a long-handled fork char peppers over an open flame, turning them, until skins are blackened, 2 to 8 minutes. (Alternatively, broil peppers on rack of a broiler pan under a preheated broiler about 2 inches form heat, turning them every 5 minutes, until skins are blistered and charred, 15 to 25 minutes.) Transfer peppers to a bowl and let stand, covered, until cool enough to handle. Keeping peppers whole, peel them, starting at blossom end. Cut off tops and discard seeds and ribs. (Wear rubber gloves when handling chilies.)

4 ounces Fontina cheese, cut into 1/4 inch cubes
fresh ground black pepper
1/2 teaspoon dried rosemary, crumbled
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon dried basil, crumbled
2 ounces freshly grated parmesan cheese

Steps:

  • Preheat the oven to 425F.
  • Cook the potatoes in lightly salted boiling water until they are easily pierced with a knife.
  • Drain them, mash a quarter of them into a bowl (reserve 1 cup of the potato water), cut the remainder into small cubes, and reserve.
  • To make the dough, dissolve the yeast in the reserved potato water.
  • Combine with 1/4 cup of the olive oil, salt, and the mashed potatoes.
  • Stir in the flour a little at a time, adding just enough to make a dough that does not stick to the sides of the bowl.
  • Place the dough on a lightly floured surface and knead for 4 to 5 minutes until it reaches a smooth consistency.
  • (This can also be achieved in an electric mixer with the dough hook.) Place the dough in a lightly oiled bowl.
  • Cover the bowl with a wet towel or plastic wrap and let it rest in a warm place until the dough doubles in size, about 45 minutes.
  • Roll the dough out into a large circle 1/8 inch thick and about 15 inches in diameter.
  • Place the dough on a pizza stone or baking sheet, sprinkle with the mozzarella, Asiago and fontina, and top with the cubed potatoes.
  • Drizzle the remaining olive oil on top of the pizza, then sprinkle it with fresh pepper, rosemary, oregano, basil, and Parmesan.
  • Cover again with plastic wrap and allow to rise in a warm place for 25 minutes.
  • Remove the plastic wrap, place in the oven, and bake for 35 minutes or until the crust is golden brown and crispy.

Grilled Pizza with Potato, Onion, and Fontina image

Any strong-flavored cheese, such as Gruyere, can be substituted for the Fontina.

Yield Makes two 10- to 12-inch pizzas

8 small boiling potatoes (1 1/2 pounds)
Salt
3 tablespoons olive oil, plus more for drizzling
6 yellow onions (1 1/2 pounds), sliced into 1/4-inch-thick half-moons
3 tablespoons fresh thyme
Pizza Dough
8 ounces grated Fontina cheese
1/2 cup grated Parmesan cheese
Freshly ground pepper

Steps:

  • Fill a medium saucepan with cold water. Add potatoes; salt well. Bring to a boil over high heat. Reduce heat, and let simmer until potatoes are fork-tender, about 20 minutes. Remove from heat, and drain. When cool, cut into 1/4-inch-thick rounds, and set aside.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add onions and thyme, and cook, stirring, until onions are very soft and translucent, about 15 minutes. Remove from heat, and set aside.
  • Build a medium-hot fire in outdoor grill, or set grill pan on stove over medium-high heat. Divide prepared pizza dough in half. Working on a clean baking sheet greased with 1/2 tablespoon olive oil, use your fingertips to flatten and stretch half the dough into a rough 10-inch circle or rectangle. Let rest a few minutes, then carefully stretch again, as dough will shrink. The dough should be as think as possible without tearing.
  • Transfer dough to grill, and cook until bottom side is golden brown and top side starts to bubble, 3 to 5 minutes. Quickly turn crust over, and cook about 2 minutes more to ensure that crust cooks through. Turn crust over again. Spread half the onion mixture over crust. Scatter with half the potatoes and half the Fontina and Parmesan cheeses. Cover grill, let cook until toppings are hot and bubbly, 6 to 8 minutes. Remove from grill, and slide pizza onto a cutting board. Drizzle with olive oil, and season with salt and pepper. Repeat process with remaining dough and toppings. Cut into wedges and serve.
