CLASSIC IRISH BOILED DINNER



Classic Irish Boiled Dinner image

I grew up eating this boiled dinner on Sundays When I visited my Irish Granny. One of the things that makes this recipe special is that instead of corned beef, it calls for Smoked Shoulder. Oh What A yummy smell will fill your kitchen as this cooks!

3 pounds smoked pork shoulder
salt and pepper to taste
2 large onions, quartered
6 potatoes, peeled
8 ounces carrots, cut in half
1 large head cabbage, quartered
1 pound fresh green beans, trimmed

Steps:

  • Place the smoked pork into a large pot and fill with enough water to cover. Season with salt and pepper, cover and bring to a boil. Reduce heat to low and simmer for about 30 minutes.
  • Add the carrots, potato, cabbage and onions; cover and continue to simmer. Use kitchen string to tie the green beans into a bundle. Add them to the pot, cover and continue to cook until the carrots and potatoes are tender, about 25 minutes.
  • To serve, remove pork to a serving dish. Arrange vegetables around it. Allow the pork to rest about 10 minutes before slicing.

This delicious and moist cake mimics the famous drop-a-shot-into-a-pint flavors: Guinness®, Baileys®, and Jameson®. The whiskey is the dominant flavor. The amount can always be reduced and substituted with water. Additionally, heavy cream can replace the Baileys® in the frosting.

1 (18.25 ounce) package French vanilla cake mix
10 ½ tablespoons water
¾ cup Irish whiskey, divided
⅓ cup vegetable oil
3 eggs
¼ cup butter
½ cup white sugar
1 (15 ounce) can dark Irish stout beer (such as Guinness®)
½ cup white sugar
1 cup butter, softened
2 ¼ cups confectioners' sugar
½ teaspoon salt
¼ cup Irish cream liqueur (such as Baileys®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9-inch cake pans.
  • Place the cake mix into a large mixing bowl. Pour the water into a 2-cup measure, and add enough Irish whiskey to total 1 1/3 cup of liquid (about 10 1/2 tablespoons). Reserve remaining whiskey. Beat the whiskey and water mixture, vegetable oil, and eggs with an electric mixer on low speed just until cake mix is moistened; increase speed to medium, and beat until the batter is smooth, about 2 minutes. Pour batter into the prepared cake pans.
  • Bake in the preheated oven until the cakes are golden brown and a toothpick inserted into the center of a cake comes out clean, 25 to 30 minutes.
  • While the cake is baking, pour remaining Irish whiskey (about 1 1/2 tablespoon) into a saucepan, and stir in 1/4 cup of butter and 1/2 cup of sugar. Bring the mixture to a boil, stirring constantly, until sugar has dissolved; boil until slightly thickened, about 5 minutes.
  • When cakes are done baking but still hot, poke holes all over the cakes (the end of a chopstick works well for this) and drizzle the whiskey syrup into the holes. Return the cakes to the oven, and bake for an additional 5 minutes.
  • Remove cakes from oven, allow to cool in pans for 15 minutes, then remove from pans to finish cooling on wire racks.
  • To make caramel sauce, mix the Irish stout beer with 1/2 cup of sugar in a saucepan over low heat. Simmer the mixture until thickened, about 40 minutes, stirring occasionally, and allow to cool.
  • To make frosting, beat 1 cup of softened butter in a bowl with an electric mixer on medium speed until smooth, then gradually beat in confectioners' sugar, about 1/2 cup at a time. Beat in salt, then add the Irish cream liqueur, beating until the frosting is light and fluffy.
  • To assemble the cake, place a layer onto a cake serving dish; pour the Irish stout caramel over the first layer, allowing the caramel to drip down the sides of the layer. Place the 2nd cake layer on top, and top with the buttercream, swirling the frosting into decorative waves. Do not frost sides of cake.

Altho this recipe requires a lot of "cutting/chopping"... it's worth every second. I made this for a cookie exchange one time and afterwards, when the hostess' husband arrived home... he took one look at my cookies and said "My grandmother made those fruitcake cookies!" ... to which I responded... "So did mine." He loved them and requested the recipe, which I gladly shared.

1/2 cup Crisco
1 cup brown sugar
1 egg
1/4 cup milk
2 cups sifted flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup chopped pecans or 1 cup walnuts
1 cup chopped dates (the whole ones you have to cut up are better than the pre-diced one)
1/2 cup candied red cherries, cut in quarters
1/2 cup green glazed cherries, cut in quarters

Steps:

  • Cream together crisco and sugar.
  • Stir in egg; add milk and blend well.
  • Sift dry ingredients together, stir in to batter.
  • Add nuts, dates, and cherries, stirring to distribute evenly.
  • Chill dough 1 hour.
  • Preheat oven to 400 degrees.
  • Drop by teaspoonfuls onto lightly greased cookie sheet; top w/ half cherry or walnut/pecan half.
  • Bake 10-12 minutes until lightly brown.
  • Cool on wire rack.

A Very Moist Fruit Cake - passed down from my nan

Number Of Ingredients 11

BOILED FRUIT MIXTURE
4 oz Brown Sugar
8 oz margarine or butter
1lb mixed fruit
2 tsp mixed spice
1/2 Pint Milk
4 oz Glace Cherries
2 eggs beaten
2 oz chopped walnuts
12 oz Self Raising Flour
1 tsp bicarbonate of soda

Steps:

  • Place all the ingredients for the fruit mix in a large saucepan bring to the boil and allow to cool for about 30 minutes
  • Preheat oven to 160C / Gas 3
  • Add the cherries and nuts stir through
  • then add eggs and mix well, add the flour and fold through the mix.
  • Place the mixture in a greased and floured 8' - deep cake tin. Tie some greaseproof paper around the outside of the tin so that the paper comes over the edges of the tin or optionally place over the top about half way through baking. Bake for 2 hours but check after 1.5 hours , check to see if cooked throughly with a skewer. If not bake a little further until the skewer comes out clean from the cake. Allow to cool and either decorate with marzipan and royal icing, or dried apricots and cherries and glaze with melted apricot jam or plain is very nice too.

4 cups candied mixed fruit
1 cup white sugar
¾ cup butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon mixed spice
2 eggs, beaten

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
  • Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
  • Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

300g Dried Mixed Fruit
150g Soft Brown Sugar
110g Butter
250ml Milk
300g Self Raising Flour
2 Eggs

Steps:

  • Grease and line a 2lb bread tin.
  • In a saucepan add the fruit, sugar, milk and butter. Bring to a gentle boil stirring all the time.
  • Allow mix to cool properly (can take upwards of an hour).
  • Once cool, add flour and eggs to the mix and stir thoroughly.
  • Transfer mix to the tin and place in the centre of a pre-heated oven (Gas 5 / 190 C) for 1hr
