Number Of Ingredients 4

Pork Shoulder Roast (boneless)
Salt and Pepper (or Grill Mates Pork Rub)
Italian seasoning
Vegetable Oil

Steps:

  • Cut pork shoulder roast into 1" thick steaks.
  • Season with salt and pepper and Italian seasoning spice on all sides. If using Grill Mates Pork Rub instead, there is no need to season with salt and pepper.
  • Mariante the seasoned pork for 1 hour at room temperature.
  • Use an aluminum foil tray for grilling on the barbeque. This will ensure the meat stays juicy and tender. Sprinkle tray with vegetable oil. Place the aluminum tray on the BBQ at medium-low temperature to heat up.
  • Place seasoned pork shoulder roast steaks on to the tray when hot.
  • Grill the pork shoulder strips, flipping over several times until tender.

STICKY-SWEET GRILLED PORK SHOULDER WITH HOISIN AND MOLASSES

Sticky-Sweet Grilled Pork Shoulder with Hoisin and Molasses image

Inspired by the classic Cantonese barbecued pork dish known as char siu and gloriously shellacked with a molasses glaze, the pork in this recipe should be fridge-cold when you roast it, so take it straight from the refrigerator to the grill. Time and temperature matter for this recipe, which is why a Big Green Egg is such an awesome cooking tool. But we also give you instructions on how to make this with an oven + conventional grill if you don't own a BGE.

Yield 8 servings

Number Of Ingredients 16

Pork:
2 heads of garlic, cloves separated, peeled
1 (wide, 6") piece ginger, peeled, chopped
1 cup hoisin sauce
3/4 cup fish sauce
2/3 cup honey
2/3 cup Shaoxing (Chinese rice) wine
1/2 cup chili oil
1/3 cup oyster sauce
1/3 cup toasted sesame oil
1 (4-5-lb.) skinless boneless pork shoulder (Boston butt)
Kosher salt
Glaze and assembly:
3/4 cup (packed) dark brown sugar
1 Tbsp. mild-flavored (light)molasses
Bread-and-butter pickles, white bread, cilantro, and rinsed thinly sliced white onion (for serving)

Steps:

  • Pork:
  • Purée garlic, ginger, hoisin sauce, fish sauce, honey, wine, chili oil, oyster sauce, and sesame oil in a blender until very smooth. Place 1 1/2 cups in a small bowl for glaze; cover and chill until ready to use. Pour remaining marinade into a 2-gal. resealable plastic bag.
  • Place pork shoulder, fat side down, on a cutting board with a short end facing you. Holding a long sharp knife about 1"-1 1/2" above cutting board, make a shallow cut along the entire length of a long side of shoulder. Continue cutting deeper into meat, lifting and unfurling with your free hand, until it lies flat (it's better to end up with 2-3 even pieces than 1 uneven piece). Add to bag with marinade and seal, pressing out air. Work pork around inside bag to coat with marinade. Chill at least 8 hours and up to 1 day.
  • Prepare a Big Green Egg for medium heat (with cover closed, thermometer should register 350°F). Remove pork from marinade, letting excess drip off. Lightly season all over with salt. Fit grill with convection plate and set pork on top. (If you don't have a convection plate, bank coals on one side and set pork over cooler area to avoid flare-ups.) Cover and roast pork until an instant-read thermometer inserted into the thickest part registers 140°F-145°F. (You can also do initial cooking in a 350°F oven.) Transfer to a cutting board and let rest at least 20 minutes.
  • Glaze and assembly:
  • Bring brown sugar, molasses, and reserved marinade to a simmer in a large saucepan; cook until reduced by one-third, 6-8 minutes (you should have about 1 1/3 cups). Keep warm.
  • Prepare a Big Green Egg for medium-high heat (or use a conventional grill). Grill pork, basting and turning with 2 pairs of tongs every minute or so, until thickly coated with glaze, lightly charred in spots, and warmed through (an instant-read thermometer inserted into the thickest part should register 130°F-145°F; be careful not to overcook), 6-8 minutes. Transfer to a cutting board; slice against the grain ¼" thick. Serve with pickles, bread, cilantro, and onion.
  • Do Ahead
  • Pork can be roasted 2 days ahead. Let cool; cover and chill.

CHIPOTLE-GRILLED PORK SHOULDER STEAKS WITH CORN SALSA

Chipotle-Grilled Pork Shoulder Steaks with Corn Salsa image

Pork shoulder isn't just for pulled pork. Ask your butcher to cut it into steaks, and it'll soon become your favorite well-marbled and quick-cooking cut for grilling, especially when seasoned with this Mexican barbacoa-style rub.

Categories     Dinner     Summer     Grill/Barbecue     Pork     Oregano     Garlic     Corn     Onion     Cilantro     Feta     Pumpkin     Lime     Wheat/Gluten-Free     Taco     Fall

Yield 4 servings

Number Of Ingredients 15

2 tsp. chipotle chile powder
2 tsp. dried oregano
1 1/2 tsp. garlic powder
1 tsp. ground allspice
2 3/4 tsp. (or more) kosher salt, divided
4 (3/4"-thick) boneless pork shoulder (Boston butt) steaks (about 2 lb.) or pork blade chops
Vegetable oil (for grill)
4 ears of corn, husked
1/2 small white onion, finely chopped
1 cup cilantro, finely chopped
1 cup crumbled Cotija or feta (about 5 oz.)
1/2 cup toasted pumpkin seeds (pepitas)
3 Tbsp. fresh lime juice
Flaky sea salt
Lime wedges (for serving)

Steps:

  • Mix chile powder, oregano, garlic powder, allspice, and 2 tsp. kosher salt in a small bowl. Rub spice mixture all over pork steaks. Let sit at room temperature at least 15 minutes.
  • Prepare a grill for medium heat; oil grate. Grill pork and corn, turning occasionally, until pork is deeply charred and an instant-read thermometer inserted into the thickest part registers 145°F for medium, and the corn is lightly charred all over, 7-9 minutes. Transfer pork to a cutting board and let rest 10 minutes.
  • Let corn cool slightly. Slice kernels off cobs into a large bowl. Add onion, season with 3/4 tsp. kosher salt, and stir to combine. Stir in cilantro, cheese, pumpkin seeds, and lime juice; taste salsa and season with more kosher salt if needed.
  • Transfer pork to a platter. Drizzle any accumulated juices left on cutting board over; sprinkle with sea salt. Top with corn salsa and serve with lime wedges alongside.
  • Do Ahead: Pork can be seasoned 1 day ahead. Cover and chill. Let sit at room temperature 15 minutes before grilling.

  • Toast fennel seeds in a dry small skillet over medium heat, tossing often, until golden brown and starting to pop, about 3 minutes. Transfer to a spice mill or mortar and pestle and let cool; coarsely grind. Transfer to a small bowl and mix in oregano. Place pork on a wire rack set inside a rimmed baking sheet and rub with oil. Season all over with 1 Tbsp. salt, then rub with spice mixture, packing it on. Let sit at room temperature 2 hours or chill, uncovered, up to 2 days.
  • Bring chiles, vinegar, butter, and sugar to a simmer in a small saucepan over medium-high heat; cook, stirring occasionally, until sugar is dissolved and sauce is reduced by about a third, about 5 minutes. Season with salt; cover and keep warm over low heat until ready to use.
  • Prepare a grill for medium heat. Drizzle pork all over with oil, then grill, turning every 5 minutes or so, until extremely, gorgeously browned and crisp and an instant-read thermometer inserted into thickest part registers 120°, 35–45 minutes. Continue to grill, brushing with sauce and turning not quite every minute (you’re going to see flare-ups, but don’t worry), until pork is glazed and shiny and temperature on thermometer has risen to 130°, 5–10 minutes more. Transfer pork to a platter and let rest 30 minutes; reserve remaining sauce.
  • Transfer pork to a cutting board and pour any accumulated juices on platter into reserved sauce. Return sauce to a simmer. Slice pork against the grain ¼" thick. Arrange on platter, spoon some sauce over, and season with salt. Serve remaining sauce alongside.

  • Garlicky Roast Pork Shoulder. Chef Jose Enrique's version of the Puerto Rican classic pernil asado is extra-flavorful because he marinates the pork in lime and orange juices, as well as plenty of garlic, before roasting until the meat is caramelized and crispy.
  • Wine-Braised Pork with Chestnuts and Sweet Potatoes. Legendary chef Jacques Pépin sears pork shoulder to make a terrific crust, then braises it slowly with stock, wine, chestnuts, and sweet potatoes until it's meltingly tender.
  • Philadelphia Roast Pork Sandwiches. These sandwiches combine roasted pork with melty provolone cheese and broccoli rabe for a seriously satisfying bite.
  • Frijoles con Puerco. Chef Jorge Guzman's Yucatecan-influenced black beans with pork get an extra depth of flavor from charred onion and garlic as well as dried epazote, a Mexican herb with notes of camphor, mint, and citrus.
  • Pork Braised in Milk. Slow-cooking pork shoulder in milk creates succulent meat and a silky, caramelized sauce. Get the Recipe.
