Prepare a great dinner without the mess with this smoked sausage and potatoes foil packet dinner recipe!

1 lb red potatoes
1 large yellow onion
1 red bell pepper (or green bell pepper)
1 lb smoked sausage (cut into 2" pieces)
1 Tbsp olive oil
salt (to taste)
4 large heavy-duty aluminum foil

Steps:

  • Preheat an outdoor grill to medium-high or an oven to 400 degrees. Scrub potatoes well then pat dry using a kitchen towel. Cut potatoes into 1" cubes and place in a large mixing bowl. Dice onion and bell pepper into large 1" pieces.
  • Drizzle veggies with olive oil and season with salt. Toss to coat completely in oil and distribute salt. Place ¼ of the veggie mixture into the center of one sheet of foil then add ¼ of the smoked sausage on top of the veggies.
  • Fold long sides of foil up and over sausage mixture and bring edges together. Roll the foil together, moving downward until you're about 1"-2" from top of sausage mixture. Fold both short ends together to seal the packet, but make sure to leave enough space inside the packet for steam expansion.
  • Place packets directly on grill or on a baking sheet in the oven. Grill 20-25 minutes or bake 30-35 minutes in the oven or just until the potatoes are tender. Remove from grill or oven and allow packets to rest for 5 minutes. Carefully open packets to let steam escape before digging in.

1 pound sweet or hot Italian sausage links (4 to 6 links)
2 red and/or green bell peppers, sliced (about 2 cups)
1 large onion, sliced (about 3 cups)
1 tablespoon olive oil
1/2 teaspoon dried oregano
Kosher salt and freshly ground black pepper
Serving suggestion: crusty bread or garlic bread

Steps:

  • 1. Preheat a grill over medium-high heat. Lay two 18-inch-long sheets of heavy duty aluminum foil on a flat surface.
  • 2. Cut a long slit in each sausage about two-thirds of the way through and flatten gently so it opens like a book. Divide the sausages between the 2 pieces of foil. Toss the peppers and onions with the oil, oregano, 1 teaspoon salt and 1/2 teaspoon pepper and put on top of the sausages.
  • 3. Bringing the short sides of the foil together, fold the seams together twice and then tuck the ends in and up to seal. Put the foil packets on the grill and grill, 17 to 20 minutes. Open the foil, being careful of steam; the sausages will be charred and have grill marks on the bottom and the vegetables will be tender. If not, just throw the packets back on the grill, unsealed, for a few more minutes until done.
  • 4. Divide among 4 plates and serve with crusty bread or garlic bread.

I use small to medium size potatoes. You can either sprinkle real shredded parmesan cheese on these packets during the last five minutes, or just stir in a teaspoon or so of the dry grated stuff in the packet before cooking. One day I'm going to add green peppers and sausage to this in the packet.

2 tablespoons olive oil
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/2 teaspoon garlic powder

Steps:

  • Peel and dice potatoes - about 1-inch size pieces.
  • Mix olive oil and spices in large bowl.
  • Stir in potatoes and mix well.
  • (Optional) Microwave potatoes for a minute or two if you don't want to cook them on the grill as long.
  • Separate potatoes into a few 12-inch packets and wrap up.
  • Cook 30 minutes on the grill or until done to your liking.

3 scallions, trimmed, sliced
1 (16-ounce) package frozen shredded hash brown potatoes, defrosted
12 ounces cooked breakfast sausages (about 16 sausage links), cut into ¾" pieces
¼ cup olive oil
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more to taste
3 (packed) cups baby spinach
6 large eggs
½ cup shredded cheddar (optional)

Steps:

  • Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.
  • Toss scallions, potatoes, sausage, oil, salt, and pepper in a large bowl. Divide mixture among prepared packs, arranging in the center of each piece of parchment. Bring edges of foil together to enclose each pack, covering completely, then crimp to seal packs closed.
  • Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.
  • Place packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 pack from heat and check if ingredients are steaming hot. If necessary, return pack to coals and continue to cook, 5-10 minutes more.
  • Transfer packs with tongs to a flat surface and carefully open them (they will be full of hot steam). Top each pack with spinach, then crack 1 egg into the center of each and season with salt and pepper. Reseal, return to coals, and cook until egg whites are opaque but yolks are still runny, 4-5 minutes.
  • Carefully remove packs from coals, open, and sprinkle with cheddar, if using. Serve immediately.

  • Packs can be prepared in an oven. Preheat to 450°F and place packs on rimmed baking sheets.
