Thomas Jefferson's Sweet Potato Biscuits 1774 image

This recipe is from the National Constitution Center (NCC), Philadelphia PA. According to the NCC, Thomas Jefferson's biscuits were served at the first meeting of the First Continental Congress in 1774 and are served today at the famous City Tavern (built in 1773) located in Philadelphia's historic district at 2nd and Walnut Streets. These are a light, tasty biscuit (scone), with or without the pecans. I enjoy them with butter and honey. The nutrition can be improved by using a margarine instead of butter and leaving out the pecans.

2 1/2 cups all-purpose flour
1/2 teaspoon allspice
1/4 cup brown sugar
1/2 cup butter, cut in small pieces
1 tablespoon baking powder
1/2 cup milk
3/4 teaspoon salt
3/4 cup sweet potato, mashed (about 1 large Virginia Sweet Potato)
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 450°F.
  • Combine the dry ingredients. Add butter with fork, food processor or pastry cutter until the texture is small crumbs.
  • Combine milk and sweet potatoes. Add to flour mixture. Add pecans.
  • Knead dough with your hands until it is a smooth mass. Roll out on a floured surface to 1/2" thickness and cut with a 2" biscuit cutter.
  • Place on a greased baking sheet 2" apart.
  • Bake for about 10-15 minutes, or until lightly browned.

The third U.S. president is credited with jotting down the first American recipe for this treat. No vanilla bean on hand? Substitute 1 tablespoon vanilla extract for the vanilla bean. Just stir the extract into the cream mixture after the ice-water bath. -Taste of Home Test Kitchen

2 quarts heavy whipping cream
1 cup sugar
1 vanilla bean
6 large egg yolks

Steps:

  • In a large heavy saucepan, combine cream and sugar. Split vanilla bean in half lengthwise. With a sharp knife, scrape seeds into pan; add bean. Heat cream mixture over medium heat until bubbles form around sides of pan, stirring to dissolve sugar. , In a small bowl, whisk a small amount of the hot mixture into the egg yolks; return all to the pan, whisking constantly., Cook over low heat until mixture is just thick enough to coat a metal spoon and temperature reaches 160°, stirring constantly. Do not allow to boil. Immediately transfer to a bowl. , Place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes; discard vanilla bean. Press waxed paper onto surface of custard. Refrigerate several hours or overnight., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to a freezer container; freeze for 4-6 hours or until firm. Repeat with remaining mixture.
