1/2 pound shrimp, peeled and deveined
2 garlic cloves
1 tablespoon olive oil
Lemon juice (1 lemon)
Pepper to taste
Chopped cilantro
1 cup cilantro
1/2 avocado
1 tablespoon white vinegar
1 garlic clove
1 tablespoon lemon juice

Steps:

  • Marinate shrimp ahead of time, in a mixture of olive oil, chopped garlic, lemon juice, pepper to taste, and finely chopped cilantro. Marinate in the refrigerator for at least 1 hour.
  • Thread the shrimp onto skewers.
  • Blend the remaining ingredients and check the seasoning. Add more salt if needed.
  • Heat up the grill, season the shrimp with a bit of salt and cook until they turn pink.
  • Be careful not to overcook the shrimp, so they don't become tough.
  • Serve the skewers immediately, sprinkle with chopped cilantro, and garnish with the sauce.

1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon dried oregano
1 teaspoon cumin
½ teaspoon red pepper flakes
½ teaspoon salt
24 skewers, bamboo or metal
4 tablespoons olive oil
24 corn tortillas
1 cup sour cream
3 tablespoons fresh cilantro, minced
1 teaspoon lime zest
¼ teaspoon salt
2 tablespoons lime juice
1 ½ cups green cabbage
1 ½ cups red cabbage
1 tablespoon jalapeño, minced
lime wedge
fresh cilantro

Steps:

  • In a large bowl, season shrimp with paprika, garlic powder, oregano, cumin, red pepper flakes, and salt. Toss gently to combine.
  • Using 2 bamboo or metal skewers, poke through the top and bottom of the shrimp and push down to the bottom of the skewer.
  • Add 3 more shrimp to the same skewer and repeat until all of the shrimp are used.
  • Right before you put the shrimp on the grill, brush each skewer with a generous amount of olive oil, to prevent sticking.
  • Grill over high heat for 3 minutes, brush the top side with more olive oil, flip, and let cook for an additional 3 minutes.
  • Remove from skewers & set aside for taco assembly.
  • In a bowl, combine all creamy cilantro sauce ingredients. Stir well to combine.
  • In a large bowl, combine green cabbage, red cabbage, and minced jalapeño. Pour half of the sour cream mixture over the cabbage, saving the other half for extra sauce to put on the tacos.
  • Assemble the tacos on corn tortillas. Add the cabbage mixture, followed by the shrimp. Top with the creamy cilantro sauce, cilantro, and a squeeze of lime juice.

2 tablespoons garam marsala
2 tablespoons canola oil
Juice of 2 lemons
Kosher salt and freshly ground black pepper
1 pound large shrimp (21/24), shelled, deveined, tails left on and patted dry
1 cup tightly packed fresh cilantro leaves
1/2 cup tightly packed fresh mint leaves
4 scallions, chopped
1 Thai chile, finely minced
Zest of 1 lime
1 to 2 tablespoons honey
1 to 2 tablespoons canola oil
Kosher salt and freshly ground black pepper

Steps:

  • For the shrimp: Whisk together the chile powder, garam marsala, canola oil, lemon juice in a medium bowl and season with salt and pepper. Add the shrimp and toss to coat in the mixture. Let marinate for 15 minutes.
  • Prepare a charcoal grill for direct grilling, high heat.
  • For the chutney: Combine the cilantro, mint, scallions, chile, 1 tablespoon each honey and canola oil, lime zest, and some salt and pepper in a food processor. Process to make a smooth paste. Taste; add honey, if desired, or more oil to make a sauce that will cling to the shrimp.

  • In a blender or food processor place the cilantro leaves and stems, scallions, chilies, garlic, lime juice, cumin, and turmeric.

  • Cook until almost done, about 2 minutes.
  • Turn shrimp over and cook quickly on marinade side, about 1 minute.
  • Remove shrimp from grill.
  • Divide shrimp among serving plates.
  • Pass garnishes at table.

1/2 cup water
1 1/2 teaspoons salt
2 lb large shrimp in shell (21 to 25 per lb)
1/2 cup olive oil
4 cups loosely packed fresh cilantro sprigs
1/2 stick (1/4 cup) unsalted butter

Steps:

  • Combine tomatillos, chiles, 4 garlic cloves, water, and 1/2 teaspoon salt in a 4-quart saucepan and simmer, covered, stirring occasionally, until tomatillos are tender, 10 to 12 minutes. (Chiles will not be tender.)
  • While tomatillos are simmering, peel and devein shrimp. Rinse and pat dry, then toss with 1/2 teaspoon salt.

  • Prepare a grill for medium-high heat or a grill pan for high heat. Thread about 4 shrimp onto each skewer, reserving the marinade for basting. Grill the shrimp until just firm, brushing with the marinade, 1 to 2 minutes per side (up to 3 minutes per side, if using a grill pan).
  • For the rice: In a medium pot, melt the butter over medium heat and add the rice and garlic. Cook, stirring, until the rice smells a little nutty and is opaque, 1 to 2 minutes. Add the chicken broth, 1/2 teaspoon salt and 1/2 teaspoon pepper, and increase the heat to high. Bring to a boil, then reduce the heat to low, cover and cook the rice according to the package directions (usually 15 to 25 minutes).
