2 Swordfish steaks - at least an inch thick
Pinch of salt and black pepper
Olive oil for brushing the fish
1 lemon, sliced in half to squeeze onto the fish at the end (optional)
Zest of 2 lemons
Juice of 2 lemons (5 Tbsp or 75g)
1 Tbsp (2g) minced garlic
1 Tbsp (2g) minced shallot
1 Fresno pepper, finely chopped
1/4 tsp crushed red pepper flakes
3 Tbsp (11g) finely chopped parsley
2 Tbsp (5g) finely chopped cilantro
1 Tbsp (3g) finely chopped mint

Steps:

  • Rinse and dry your swordfish thoroughly. Place it back in the refrigerator uncovered and on a wire rack for 15 minutes or so while you prepare the gremolata.
  • Add all your gremolata ingredients to a small bowl, mix well and set aside. You want your gremolata to meld flavors for at least 15-25 minutes before serving.
  • Remove your fish and season lightly with kosher salt and pepper, then thinly coat it with olive oil. Heat your grill pan over high heat 3 minutes. Once hot reduce heat to medium-high and grill the swordfish for approximately 5 minutes per side. Remove from the heat, let rest for a few minutes, top with your gremolata and serve with half a lemon for additional juice if desired.

3 tablespoons chopped fresh mint leaves
3 tablespoons fresh lemon juice
1 tablespoon chopped fresh basil leaves
1 garlic clove, minced
Salt and freshly ground black pepper
4 (5 to 6-ounces each) swordfish steaks

Steps:

  • Prepare the grill (medium-high heat). Whisk the oil, mint, lemon juice, basil, and garlic in a medium bowl to blend. Season the lemon and olive oil mixture with salt and pepper, to taste.
  • Brush the swordfish steaks with 2 tablespoons of the lemon and olive oil mixture. Grill the steaks until just cooked through, about 3 minutes per side (depending on thickness of steaks). Transfer the steaks to plates. Spoon the remaining sauce over and serve.

7 tablespoons olive oil, divided, plus more for grill
3/4 cup coarsely torn fresh breadcrumbs
Kosher salt, freshly ground pepper
2 tablespoons chopped fresh parsley
2 tablespoons coarsely chopped green olives (such as Castelvetrano)
1 tablespoon coarsely chopped golden raisins
1 teaspoon finely grated lemon zest
2 (8-10-ounce) swordfish steaks (1-1 1/4" thick)
Lemon wedges (for serving)

Steps:

  • Prepare grill for medium-high heat; oil grate. Toss breadcrumbs with 1 Tbsp. oil in a medium bowl; season with salt and pepper. Place a cast-iron skillet directly on grill grate and toast breadcrumbs in skillet, tossing occasionally, until golden brown and crisp, about 5 minutes. Transfer toasted breadcrumbs back to bowl and let cool.
  • Add parsley, olives, raisins, lemon zest, and 5 Tbsp. oil to breadcrumbs and toss to combine; set gremolata aside.
  • Rub swordfish with remaining 1 Tbsp. oil; season with salt and pepper. Grill until swordfish is lightly charred and just cooked through (fish will feel firm, almost like a cooked pork chop), 6-8 minutes per side.
  • Transfer swordfish to a platter and top with gremolata. Serve with lemon wedges for squeezing over.

5 cloves garlic, minced
2 teaspoons chopped fresh rosemary
4 (4 ounce) swordfish steaks
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
4 slices lemon, for garnish

Steps:

  • Stir wine, garlic, and 1 teaspoon rosemary together in an 8 inch square baking dish. Sprinkle fish with salt and pepper. Place in the baking dish, turning to coat. Cover, and refrigerate for at least 1 hour.
  • In a small bowl, stir together the lemon juice, olive oil, and remaining rosemary. Set aside.
  • Preheat grill for medium heat.
  • Transfer fish to a paper towel-lined dish, and discard marinade. Lightly oil grill grate to prevent sticking. Grill fish 10 minutes, turning once, or until fish can be easily flaked with a fork. Remove fish to a serving plate. Spoon lemon sauce over the fish, and top each fillet with a slice of lemon for garnish.

2 lemons, juiced
2 lemons, zested
¼ cup fresh oregano leaf, chopped
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 swordfish fillets, 1 in (2 1/2 cm)
1 lemon, sliced

Steps:

  • In a 9x13-inch (22x33 cm) baking dish, whisk together the olive oil, lemon juice and zest, oregano, salt, and pepper.
  • On a cutting board, pat the swordfish fillets dry with paper towels.
  • Add the swordfish to the dish with the marinade, turning to coat. Cover with plastic wrap and refrigerate for 30 minutes.
  • Preheat the grill to 350°F (180°C).
  • Arrange the lemon slices on the grill over indirect heat so that they're touching each other and the entire surface is larger than the fish.
  • Place the swordfish on top of the lemon slices and close the lid of the grill. Grill for 8 minutes, until the fish is just cooked through.

This is one of my and my husband's favorite recipes. The swordfish is so flavorful and colorful it will brighten your whole day!

½ (12 ounce) bottle olive oil
¼ cup lemon juice
¼ cup soy sauce
2 tablespoons chopped fresh parsley
2 teaspoons minced garlic
1 teaspoon dried dill
ground black pepper to taste
2 pounds swordfish steaks

Steps:

  • Whisk olive oil, lemon juice, soy sauce, parsley, garlic, dill, and pepper together in a large glass or ceramic bowl. Add swordfish and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 to 4 hours; the longer you marinate the fish, the stronger the flavor will be.
  • When ready to cook, preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove swordfish from the marinade and shake off excess. Discard the remaining marinade.
  • Cook swordfish on the preheated grill until fish is tender and flakes easily with a fork, about 4 minutes per side. Swordfish cooks very quickly and your grill will flare up with this marinade!
