- In a small bowl, mash together the butter, lemon zest, lemon juice, the 1/4 teaspoon pepper, and the garlic powder. Set aside (or chill if not using immediately).
- Prepare the grill for medium-high direct heat and lightly oil the grate (or preheat a broiler). Brush oil on both sides of tuna steaks. Season the tuno on both sides with salt and additional pepper. Grill or broil for 3 to 4 minutes per side for medium rare, turning once.
- Transfer tuna steaks to a serving platter; top with the butter mixture.

Steps:
- In a bowl, add all the relish ingredients; toss to combine; season with salt and pepper to taste (mixture will be slighly runny).
- Chill relish until ready to serve.
- Rub tuna steaks with oil and season with salt and pepper.
- Grill 4-5 minutes per side over medium-hot grill (do no overcook).
- To serve: spoon relish onto individual plates.
- Place tuna steak on top of relish.

TUNA CRUSTED WITH ALEPPO PEPPERS WITH TANGERINE-GREEN ONION RELISH, MELTED LEEKS AND RED WINE-POMEGRANATE REDUCTION
Steps:
- Season tuna on both sides with salt. Dust 1 side of the tuna with the peppers. Heat oil in a large saute pan over medium-high heat. Sear the tuna, pepper side down, until golden brown, about 1 to 2 minutes, turn over and continue cooking for 2 minutes for medium-rare doneness.
- To plate, divide the melted leeks onto 4 serving plates. Arrange each tuna steak on top of the melted leeks. Place a tablespoon of the Tangerine-Green Onion Relish on top of the tuna, and drizzle the entire dish with the Red-Wine Pomegranate Reduction.
- Combine all ingredients in a medium bowl and season with salt and pepper to taste.
- Place leeks, onion, carrot, celery, and water to cover in a large pot and season with salt and pepper. Bring to a simmer and cook until cooked through, about 20 to 25 minutes. Drain well and thinly slice.
- Heat oil and butter in a large saute pan over medium heat. Add leaks, season with salt and pepper and cook for 10 to 15 minutes.
- Place wine and port in a small saucepan and reduce to 1 cup. Whisk in pomegranate molasses and sugar and taste for sweetness. Whisk in cold butter just before serving and season with salt and pepper, to taste.

- Hlave the chile lengthwise, remove the seeds, and finely chop. Peel the garlic, chop finely. Juie the lime. In a saucepan, bring the ginger, chile, garlic, soy sauce, fish sauce, sesame oil and lime juice to a boil and cook for a minute and cool. Place the tuna in a shallow dish and pour the cooled ginger marinade over. Refrigerate 1 hour.
- Drain the steaks well and sprinkle with pepper. Heat a grill to medium and cook the tuna just under a minute on each side, then move to a cooler spot on the grill and grill 1-2 minutes per side until medium-rare. (Alternatively cook the steaks in a skillet to medium-rare.)
- Rinse the pepper, halve lengthwise , remove the seeds and white ribs and dice. Rinse, core and dice the tomatoes. Rinse and slice the scallions. Rinse the chile, remove the seeds and dice. Place the pepper, tomato, scallion and chile in a bowl and season with salt and pepper. Rinse the arugula, shake dry, arrange on plates. and drizzle with lemon juice. Top with the steaks and serve garnished with the pepper mixture.

- Make the butter: Combine butter, garlic, lemon juice and parsley and mix well. Cover and refrigerate.
- In another small bowl, combine the salt and pepper and mix well. Press the tuna steaks into the mixture and coat on all sides; drizzle tuna lightly with olive oil.
- Grill over a medium-hot fire for 4-5 minutes per side for medium rare, depending on thickness.
- Serve with a large spoonful on the butter on top of each steak.
