Banana Fritters image

Soon after I made these fritters for the first time, my husband began requesting them on a regular basis. I also like to serve them to overnight guests as a sweet breakfast treat.

Provided by Taste of Home

Time 30m

Yield 6-8 servings.

Number Of Ingredients 9

2 eggs
1/2 cup milk
1 teaspoon canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 large firm bananas
Additonal oil for deep-fat frying
Confectioners' sugar, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. Dust with confectioners' sugar if desired.

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

6 ripe bananas
2 eggs, beaten
3/4 cup all-purpose flour
3 tablespoons vegetable oil

Steps:

  • In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

2 quarts oil for frying
1 cup all-purpose flour
1 ¼ teaspoons baking powder
¼ teaspoon salt
1 egg, beaten
2 cups milk
2 teaspoons canola oil
3 bananas, mashed
1 tablespoon lemon juice
2 tablespoons confectioners' sugar

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • In a large bowl, mix flour, baking powder and salt.
  • In a medium bowl, mix egg, milk and canola oil. Stir into the flour mixture. Mix in bananas and lemon juice. When thoroughly mixed, form mixture into about 10 balls.
  • In batches, fry balls in the prepared oil 5 minutes, or until lightly browned. Drain on paper towels, and sprinkle with confectioners' sugar.

1/2 cup cornflour
1 tablespoon baking powder
1 cup milk, approx
extra flour, to coat banana

  • Coat bananas lightly with flour.
  • Sift the flour, cornflour and baking powder into a bowl.
  • Make a well in centre and gradually add milk. Mix to a smooth consistency similar to thickened cream.

1 1/2 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 generous cup buttermilk
8 apple bananas, peeled and split
Oil, for deep-frying
1 cup granulated sugar, for dredging fritters

Steps:

  • Sift dry ingredients into a medium bowl. Combine egg and buttermilk, and stir into dry ingredients, mixing until well combined. Place bananas carefully in batter. (They can rest in the batter, covered until you are ready to fry them.)
  • Heat the oil to 350 to 390 degrees F or until the oil gives off a slight haze. Make sure bananas are well coated with batter before setting them in oil. Using a fork, place coated bananas in oil and fry for 2 to 4 minutes, or until golden brown. Remove from oil with tongs and drain on several layers of paper towels. Dredge drained fritters in sugar and serve hot with ice cream and caramel or chocolate sauce.

Looking for something new to do with those old ripe bananas? These banana fritters have just the right amount of sweetness that the whole family will enjoy. My family hails from St. Thomas, USVI and my mother used to make these for us all the time as kids. I still love them. But beware these are definitely not for the dieting type, but they are so delicious, enjoy!

4 -6 very ripe bananas
1 cup flour
1/2 cup sugar
1 egg, lightly beaten
1 tablespoon olive oil
1/2 cup milk
1 tablespoon demerara sugar
1 teaspoon vanilla essence
1 teaspoon nutmeg
2 teaspoons cinnamon
oil (for frying)

Steps:

  • Heat large skillet and fill with about 1/2 cup of oil.
  • Mix all ingredients up to cinnamon with a wire wisk.
  • Mix until batter is almost a pancake batter-lik consistency. Make sure batter isn't too thick, if it is add a little bit of water, it definitely won't hurt the flavor.
  • Spoon out batter into the skillet as if you are making small pancakes. Try to spread the mix out so that it isn't too thick while frying.
  • Note: If the batter is too thick it will fall apart when you try to flip it.**.
  • Brown the fritters until they are a golden brown, you don't want them to be too light, but you don't want them to be extremely dark either.
  • Watch the edges of the fritters; the edges should turn brown when ready top be flipped.
  • When done frying, drain as much of the excess oil off and then transfer to a bowl lined with paper towel.

  • Once the oil is hot, scoop up a spoonful, roughly a tablespoon, of batter into the frying pan. Deep fry until golden brown.
