2 tablespoons good olive oil, plus extra for searing
1 1/2 cups diced yellow onion (2 onions)
2 teaspoons peeled, minced fresh ginger
1 1/2 teaspoons minced garlic
2 ripe mangos, peeled, seeded, and small diced
1/3 cup freshly squeezed orange juice
2 teaspoons light brown sugar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 to 2 teaspoons minced fresh jalapeno pepper, to taste (1 pepper)
2 teaspoons minced fresh mint leaves
2 tuna steaks

Steps:

  • Saute the olive oil, onions, and ginger in a large saute pan over medium-low heat for 10 minutes, or until the onions are translucent. Add the garlic and cook for 1 more minute. Add the mangos, reduce the heat to low and cook for 10 more minutes. Add the orange juice, brown sugar, salt, black pepper, and jalapeno; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add the mint. Serve warm, at room temperature, or chilled.
  • Heat a saute pan over high heat for 5 minutes until very hot. Season the tuna liberally with salt and pepper. When the pan is very hot, add a drizzle of olive oil and then the tuna steaks. Sear for 2 to 3 minutes on each side, or until the outside is browned, but the inside is very rare.
  • Serve the tuna on top of the mango salsa.

1 cup cooked or canned black beans, drained
1 medium mango, peeled and coarsely chopped (about 1 cup)
1/2 cup finely chopped red onion
1 jalapeno, stemmed, seeded and finely diced
1/2 cup coarsely chopped cilantro
1/2 cup fresh lime juice
1/4 cup olive oil
Salt and freshly ground white pepper
2 yellow bell peppers, roasted, peeled and coarsely chopped
1/4 cup red wine vinegar
1 tablespoon chopped red onion
2 cloves roasted garlic
1 tablespoon honey
1 teaspoon chipotle puree
3/4 cup olive oil
Salt and pepper
2 tablespoons olive oil
Salt and freshly ground pepper
Three 1/4-inch thick tuna steaks (6 ounces each)

Steps:

  • Black Bean Mango Salsa: Combine first 7 ingredients in a large bowl. Season to taste with salt & white pepper. May be prepared and refrigerated, covered, up to 1 day ahead. Bring to room temperature 1 hour before serving.
  • Roasted Yellow Pepper Vinaigrette: Combine all ingredients in a food processor and process until smooth. Season with salt and pepper.
  • Seared Tuna: In a large saute pan over high heat, heat the oil until it begins to smoke. Season each steak with salt and pepper to taste and cook for 30 seconds or until brown and crisp. Turn the tuna over, and cook for 10 seconds more or until done to your liking. Cut the seared tuna into 1 1/2" squares just before serving.
  • Assembly: 2 cups peanut oil 7 flour tortillas, cut into 6-inch diameter rounds Black Bean Mango Salsa Jicama, julienned Vinaigrette (juice of ? lemon, 3 tablespoons olive oil, salt&pepper) Seared tuna steaks Yellow Pepper Vinaigrette 20 cilantro leaves
  • In a medium skillet over high heat, heat the peanut oil to 375 degrees F or until an edge of a tortilla sizzles when it is immersed. Fry the tortilla until crisp, about 1 1/2 minutes on each side. Drain on paper towels and set aside. For each tostada, toss jicama in vinaigrette and place 2 tablespoons on each tortilla, top jicama with a thin layer of salsa and place a piece of grilled tuna on top. Garnish with a cilantro leaf and yellow pepper vinaigrette.

SPICY TUNA TOSTADA



Spicy Tuna Tostada image

This is inspired by the famous Contramar Tostada, with some of the same flavors but a very different composition.

2 to 3 cups vegetable oil
Eight 4-inch corn tortillas
12 to 16 ounces number 1 grade ahi tuna
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 shallot, finely minced
1 lime, cut into supremes (see Cook's Note), juice reserved
1 watermelon radish, peeled, or 4 regular radishes, julienned
1/2 bunch fresh cilantro, leaves picked, stems discarded
2 to 3 chipotles in adobo sauce
1/2 cup mayonnaise
Juice of 1/2 lime
1/8 cup pure olive oil
Kosher salt

Steps:

  • For the tostadas: Preheat the vegetable oil in a deep-fryer to 350 degrees F. Line a plate with paper towels.
  • Fry the tortillas flat until completely crisp, about 1 minute. Drain on the paper towels.
  • Cut the tuna into 1/4-inch cubes, discarding large pieces of sinew, and place in a small bowl. Dress the tuna with 2 tablespoons olive oil and some salt and pepper and mix well. Add the shallot. Drain the juice from the lime supremes and add to the radishes in a small bowl. Add the supremes to the tuna mixture and mix well. Chop half the cilantro and add to tuna mixture. Add the remaining tablespoon olive oil to the radishes and season with salt and pepper.
  • For the chipotle aioli: Place the chipotles, mayo and lime juice in a mortar and pestle and blend until smooth. Slowly add the oil and season with salt. Spoon into a bowl.
  • To compose, spread about 1 1/2 tablespoons chipotle aioli on each of the tostada rounds. Place the tuna mixture on top of the chipotle aioli. Top the tuna with the radish mixture and the remaining cilantro leaves.

Grilled Tuna Tostadas with Black Bean-Mango Salsa image

Juice of 1½ limes
2 tablespoons extra virgin olive oil (divided)
½ teaspoon ground cumin
1 teaspoon chili powder
1 large garlic clove (grated or finely minced)
1 package Fishpeople Wild Albacore Tuna (defrosted)
8 small corn tortillas
Kosher salt
Freshly ground black pepper
1 ripe (but still firm mango, diced small)
1 15- ounce can black beans (drained and rinsed)
Juice of 1 lime
1 shallot (minced)
¼ packed cup fresh cilantro leaves (finely chopped)
Pinch of cayenne pepper (optional)
Kosher salt
2 ripe avocados
Juice of ½ lime
Kosher salt
Freshly ground black pepper
Thinly sliced baby radishes
Freshly chopped cilantro leaves
Lime wedges

Steps:

  • Pre-heat the oven to 400 degrees.
  • Start by making the mango-black bean salsa. In a mixing bowl, combine all the ingredients for the salsa and season with salt to taste. Cover and refrigerate until ready to use.
  • In a small bowl, whisk the lime zest and juice, cumin, chili powder, garlic, and 1 tablespoon extra virgin olive oil until well combined. Place the tuna fillets in a large Ziploc bag and pour in the marinade. Seal the bag, removing as much air as possible, and gently squish the fillets around to make sure they're well coated. Marinate at room temperature for 20 minutes, turning the fillets over once halfway through.
  • Meanwhile, lightly brush the tortillas on both sides with extra virgin olive oil and place them on a large baking sheet. Sprinkle with kosher salt. (I like to add a sprinkling of chili powder too, but that's optional.) Bake for 6 minutes, then turn the tortillas over. Bake for another 5-8 minutes until lightly browned and crisp. Briefly set aside.
  • Moving on to the avocado mash. Slice the avocados in half, remove the pits, and scoop the flesh into a bowl. Add the lime juice and a generous pinch of salt and mash until relatively smooth. Season with freshly ground black pepper to taste. Set aside while you cook the fish.
  • Pre-heat a lightly oiled grill or grill pan over medium heat. (You can also use a nonstick skillet if you prefer.) Remove the fish from the marinade and pat it dry. Season the fillets on both sides with kosher salt and freshly ground black pepper. Place the fish in the hot pan and cook for 2½ minutes per side for medium-rare. (Feel free to cook it slightly longer if you prefer your tuna medium or medium-well.) Transfer to a cutting board and flake into small pieces with a fork.
  • Time to assemble the tostadas! Spread each tortilla with a generous amount of avocado mash. Top with flaked tuna and mango-black bean salsa. Garnish with extra cilantro and sliced radishes (if using). Serve with lime wedges.

2 fresh red fresno chiles
2 ripe mangoes
1/2 white onion, finely chopped
2 tablespoons cilantro, finely chopped
1 lime, juice and zest of
4 yellowfin tuna steaks
olive oil
kosher salt
ground black pepper

Steps:

  • Roast the chilies over a gas burner or in a dry griddle until the skins blister and darken. Do not let the flesh burn.
  • Place chilies in a sealed zip lock bag to keep steam inside Let steam for 20 minutes.
  • Meanwhile, peel and then dice mangoes into about 1/2 inch thich cubes and add to a bowl.
  • Remove the roasted chilies from the bag and carefully peel off the skins. Cut off the steams and slit the chilies, scraping out the seeds.
  • Chop the chilies, cilantro, white onions finely and add them to the bowl. Also add the lime juice and zest. Stir well and cover. let sit in fridge for at least an hour before serving.
  • Brush Tuna steaks with light coat of olive oil and season with kosher salt and black ground pepper to taste.
  • Grill tuna for about 3 minutes on each side. More if you like it more done in the middle.
  • Serve the mango salsa either on top of grilled fish or on the side.
  • It's also really good served with flour or corn tortillas.

4 tuna steaks

½ Spanish onion, finely chopped
1 green onion, chopped
2 tablespoons chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 ½ teaspoons olive oil
2 tablespoons paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
2 teaspoons salt
1 teaspoon ground black pepper
1 teaspoon dried thyme

Steps:

  • Whisk together the olive oil, lime juice, and garlic in a bowl. Rub the tuna steaks with the mixture. Place the steaks in a sealable container and chill in refrigerator 3 hours.
  • Combine the mango, bell pepper, Spanish onion, green onion, cilantro, and jalapeno pepper in a bowl; stir. Add the lime juice and 1 1/2 teaspoons olive oil and toss to combine. Chill in refrigerator 1 hour.
  • Stir together the paprika, cayenne pepper, onion powder, salt, pepper, thyme, basil, oregano, and garlic powder in a bowl. Remove the tuna steaks from the refrigerator and gently rinse with water and then dip each side of each steak in the spice mixture to coat.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat. Gently lay the tuna steaks into the hot oil. Cook the tuna on one side for 3 minutes; remove to a plate. Pour the remaining 2 tablespoons olive oil into the skillet and let it get hot. Lay the tuna with the uncooked side down into the skillet and cook another 3 minutes; remove from heat immediately.
  • Spoon about 1/2 cup of the mango salsa onto each of 4 plates. Lay the tuna steaks atop the salsa and serve immediately.
