CROCKPOT CILANTRO LIME CHICKEN
This Crockpot Cilantro Lime Chicken combines cilantro & lime with chicken breast, beans, tomatoes, corn, and Mexican spices to make a meal bursting flavor.

Steps:
- Place chicken in your crockpot, and season well with salt and pepper. Sprinkle cumin and chili powder over top of chicken.
- Top diced tomatoes, corn, salsa, onion, garlic, lime juice, and cilantro.
- Mix ingredients to combine. Cover and cook on HIGH for 4 hours, or LOW for 6-7 hours. Shred chicken with 2 forks and serve! Garnish with avocado, lime slice, sour cream and touch of salsa.

- Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

CILANTRO LIME CHICKEN WINGS
Oh-so-perfectly crispy, charred + smoky with the easiest marinade. Cilantro, lime, cumin, chili powder. So simple yet so good!

- In a medium bowl, combine 1/4 cup cilantro, 2 tablespoons lime juice, 2 tablespoons olive oil, lime zest, chili powder, cumin, salt and pepper. In a gallon size Ziploc bag or large bowl, combine chicken and cilantro mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade. Preheat grill to medium heat. Brush chicken with remaining 1 tablespoon olive oil; season with salt and pepper, to taste. Add chicken to grill, and cook, turning occasionally, until chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12 minutes. Let rest 5 minutes. In a large bowl, combine chicken, remaining 1/4 cup cilantro and remaining 2 tablespoons lime juice. Serve immediately.

- Put cut up chicken in zip lock bag. Mix marinade ingredients together in small bowl and pour over chicken. Refrigerate for a few hours (if you have time, 3-5 hours -- if you don't do just 1 hour).
- When ready, pour bag into crockpot and cook on low for 8 hours, stir a few times if possible.
