fresh tuna steaks
extra virgin olive oil
Daisy Sour Cream
chopped cilantro leaves
capers, drained
white wine vinegar
spicy brown mustard
Worcestershire sauce
minced garlic
cracked black pepper
salt

Steps:

  • Rinse and pat dry the tuna steaks. Rub both sides of the steaks with olive oil.
  • In a small food processor bowl place all the remaining ingredients; process for about 30 seconds or until the ingredients are well mixed. Set the mixture aside.
  • Prepare the grill to medium high heat. Place the prepared tuna on the grill.
  • Cook for 4 minutes on first side. Carefully turn the fish over. Continue cooking for 2 to 3 minutes or until pink in the center.
  • Serve the tuna steaks with a heaping tablespoon of the cilantro cream sauce.

This sweet herb mixture is very fresh tasting - I can't remember where I found this one, but I like it because the ingredients are easy and it's pretty fast.

1 lb tuna steak
1/4 cup olive oil, plus
2 tablespoons olive oil
1/4 cup lime juice
1/8 cup balsamic vinegar
2 -3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1/4 cup cilantro, chopped plus
2 tablespoons cilantro, chopped
1/4 cup honey

Steps:

  • In a med bowl, mix 1/4c olive oil, lime juice, vinegar, garlic, ginger, and 1/4c cilantro. Add tuna and turn to coat evenly. Let marinate at least 1/2, but the longer, the better.
  • In a small bowl, mix honey, 2 tbsp olive oil, and 2 tbsp cilantro. Set aside.
  • Remove tuna from marinade, but reserve marinade. Over med to low grill temp, grill tuna for 6-7 minutes per side, basting frequently with marinade. When fish is almost done, brush both sides with honey glaze, remove from grill, and serve.

6 6-ounce tuna steaks, each about 1 inch thick
2 tablespoons peanut oil
3 tablespoons butter
1/3 cup thinly sliced green onions
1/4 cup chopped cilantro
2 tablespoons finely chopped peeled fresh ginger
4 garlic cloves, chopped
8 ounces fresh shiitake mushrooms, stemmed, caps sliced
6 tablespoons soy sauce
1 1/2 cups whipping cream
3 tablespoons fresh lime juice
Lime wedges (optional)
Fresh cilantro sprigs (optional)

Steps:

  • Preheat oven to 200°F. Sprinkle 1 side of tuna steaks with pepper. Heat 2 tablespoons oil in heavy large skillet over high heat. Place tuna steaks, pepper side down, in hot oil and sear 2 minutes. Turn tuna over and continue cooking to desired doneness, about 2 minutes for rare. Transfer tuna to rimmed baking sheet; keep warm in oven.
  • Add butter, sliced green onions, cilantro, ginger and chopped garlic to same skillet and sauté until fragrant, about 30 seconds. Mix in mushrooms and soy sauce and simmer 30 seconds. Add whipping cream and simmer until sauce lightly coats back of spoon, about 3 minutes. Stir in lime juice. Spoon sauce onto plates; arrange tuna atop sauce. Garnish with lime wedges and cilantro sprigs, if desired.
