GRILLED TUNA WITH GARLIC FRIES



Grilled Tuna with Garlic Fries image

2 tablespoons unsalted butter, melted
2 cloves garlic, minced
Kosher salt
1 pound frozen shoestring French fries (about 6 cups)
1 cup fresh parsley
1/2 cup fresh oregano
1/4 cup extra-virgin olive oil, plus more for brushing
2 tablespoons white wine vinegar
Pinch of red pepper flakes
4 plum tomatoes, cored and halved lengthwise
Freshly ground pepper
4 1-inch-thick tuna steaks (6 ounces each)

Steps:

  • Put a baking sheet in the middle of the oven; preheat to 450 degrees F. Preheat a grill to high. Mix the melted butter with half of the garlic and 1/4 teaspoon salt in a large bowl; set aside. Spread the fries in a single layer on the hot baking sheet and bake until crisp and golden, about 25 minutes.
  • Meanwhile, puree the remaining garlic, the parsley, oregano, olive oil, vinegar, 3/4 teaspoon salt, the red pepper flakes and 2 tablespoons water in a blender or food processor to make a sauce; set aside.
  • Brush the cut sides of the tomatoes with olive oil; season with salt and pepper. Brush the tuna steaks all over with about 2 tablespoons of the herb sauce; season with salt and pepper. Oil the grill grates. Grill the tuna until marked, 2 to 4 minutes per side for medium. Grill the tomatoes cut-side down until marked, about 3 minutes.
  • Add the fries to the bowl with the garlic butter and toss. Season the tomatoes with salt and pepper. Serve the tuna with the tomatoes and fries; drizzle the remaining herb sauce over the tuna and tomatoes.

4 medium waxy potatoes, like Yellow Finn, Yukon gold, or Bintje
1 1/2 pounds fresh tuna steak, cut at least 1 inch thick
2 red or yellow bell peppers (or 1 of each), roasted, skinned and seeded
1/2 cup extra-virgin olive oil, or more as needed
Kosher salt and freshly ground pepper to taste
3 shallots, peeled and finely chopped
2 tablespoons finely chopped Italian parsley
1/4 cup sherry vinegar or white-wine vinegar, or more as needed
4 large handfuls of mixed greens, like basil, arugula, radicchio, bibb lettuce, chicory, dandelion and endive
2 tomatoes, peeled, cut into 6 wedges and seeded

Steps:

  • Put the potatoes in a 4-quart pot and cover with cold water. Simmer gently until tender, about 25 minutes, being careful not to overcook them.
  • Meanwhile, prepare the grill, adjusting the rack 2 inches above the coals. Trim the tuna, discarding the skin and any dark purple flesh. Refrigerate.
  • Cut the roasted peppers lengthwise into 1/4-inch-wide strips. Put in a bowl and toss with 1 tablespoon of the olive oil. Season with salt and pepper and set aside.
  • Drain the potatoes and peel while still hot. Slice into 1/4-inch rounds and arrange 1/4 of them in a pie plate or casserole. Sprinkle with 1/4 of the shallots, 1/4 of the parsley and salt and pepper. Repeat the layers until all the potatoes are used. Whisk 2 teaspoons of the vinegar with 1 tablespoon of the oil and pour over the top.
  • Lightly rub the tuna steaks with 1 tablespoon of the olive oil and season with salt and pepper. Grill until charred on the outside and rare in the center, about 2 minutes per side.
  • Place the greens in a large salad bowl and top with the potato mixture, the peppers and the tomatoes. Slice the tuna into 1/4-inch strips and arrange on top of the salad. Just before serving, make a vinaigrette from the remaining vinegar and oil and pour over the salad. Season with salt and pepper. Taste and toss with more vinegar or oil if needed. Serve immediately.

1/4 cup fresh lemon juice
1 teaspoon olive oil
2 teaspoons kosher salt
1 1/2 teaspoons cracked black pepper
1 1 1/2-inch-thick tuna steak (about 1 1/2 pounds)
3 large tomatoes, cut into 1/2-inch-thick slices
1 large onion, peeled and cut into 1/2-inch-thick slices
Freshly ground pepper to taste
4 teaspoons chopped Italian parsley

Steps:

  • In a shallow dish combine the lemon juice, olive oil, 1 teaspoon of salt and pepper. Add the tuna and coat well. Refrigerate for 30 minutes.
  • Remove the tuna from the marinade and grill over white coals with the tomato and onion slices. Grill the tuna until browned on the outside but still pink in the center, about 5 minutes per side. Grill the tomato and onion slices until lightly charred, about 5 minutes per side.
  • Cut the tuna in half lengthwise and then across into thin slices. Quarter the tomato slices and cut the onion slices into large dice.
  • When ready to assemble, divide the tomatoes and onions among the pizzas. Top with the tuna slices and season with the remaining salt and pepper. Sprinkle with parsley and serve. Use on rosemary-olive crust.

4 tuna steaks
1 tbsp olive oil
3 garlic cloves , crushed
few thyme sprigs
500g bag new potato , sliced about 1cm thick
2 red peppers , cut into large chunks
1 red onion , cut into eighths
1 green chilli , deseeded and chopped
400g can cherry tomato

Steps:

  • Heat oven to 220C/fan 200C/gas 7 and put in a roasting tin to heat up. Put the tuna in a shallow dish with half the oil, two-thirds of the garlic and leaves from 1 sprig of thyme. Leave to marinate while you cook the veg.
  • Put the potatoes, peppers, onion and chilli into the roasting tin with the remaining oil, toss to coat, then roast for 20 mins. The potatoes should be tender or very nearly there. If not, give them another 5 mins (the cooking time can depend on the variety of potato). Add the remaining garlic and thyme to the pan, let them sizzle, stir in the tomatoes, then cook for 5 mins more until the sauce has reduced a little. Season to taste.
  • With a few mins to go, heat a griddle or frying pan, wipe most of the garlic marinade off the fish with kitchen paper, season, then sear for 1 min each side for medium or longer if you prefer. Serve on top of the veg.

Tuna is available most of the year, so fresh steaks should be easy to come by. Be choosy: a reddish color is acceptable, but flesh with dark spots or streaks should be avoided. As with all great ocean fish, the flesh tends to be dry. Marinate with oil, and avoid overcooking. The timing is critical, as tuna should be served medium rare. Use a kitchen timer.

3 tablespoons extra virgin olive oil

½ cup hickory wood chips, soaked

Steps:

  • Place tuna steaks and olive oil in a large resealable plastic bag. Seal, and refrigerate for 1 hour.

4 yellow corn tortillas
2 ancho chiles, seeded and stemmed
2 New Mexico chiles, seeded and stemmed
1 pasilla chile, seeded and stemmed
1/2 medium red onion, coarsely chopped
1/2 head garlic, roasted, cloves separated
1/2 cup slivered raw almonds
4 cups Lobster Stock
4 medium tomatoes, peeled, cored and chopped
1/4 cup golden raisins
1/2-ounce Ibarra or semisweet chocolate
2 tablespoons maple syrup
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves
Juice of 1 lime
Salt and pepper
8 tuna steaks, 1 1/2 - 2 inches thick, about 6 ounces each

5 large Idaho potatoes, peeled and quartered
1 cup toasted slivered almonds
2 cups milk
1 stick unsalted butter
Salt and freshly ground pepper
1/4 cup chopped parsley

Steps:

  • In a large frying pan over medium heat, heat the oil to 375 degrees F, or until a small bread cube sizzles on contact. Fry the tortillas and all the chiles until crisp, 10-15 seconds. Remove with tongs and place in a food processor or blender. Add the onion and garlic to the oil and fry until browned, about 2 minutes add to the processor. Pour out all but 2 tablespoons of the oil and toast the almonds until golden brown. Add to the processor. Add 1 cup of stock to the processor and process the tortillas, chiles, onion, garlic and almonds to a puree, adding more stock if needed. Pour the puree in a medium saucepan and add the remaining stock, the tomatoes and raisins. Bring to a boil over medium-high heat; reduce the heat to medium and simmer 1 hour and 20 minutes, stirring frequently. Add the chocolate, maple syrup, cinnamon, cloves, and lime juice. Season to taste with salt and pepper and simmer another 15 minutes. Remove from the heat.
  • Heat a grill or grill pan over high heat. Brush the tuna with olive oil on both sides and season with salt and pepper to taste. Grill for 2 minutes on each side. Place tuna on a serving plate and spoon the mole around them.
  • Cook potatoes in a large pot of salted water until tender, drain and keep warm. In the meantime, place 1/2 cup of the almonds and milk in a medium saucepan and bring to a boil. Remove from heat and let steep 30 minutes. Drain the milk into a bowl and discard the almonds. Mash the potatoes with the almond milk and butter until smooth and season with salt and pepper to taste. Fold in the remaining almonds and parsley.

1 1/2 teaspoons coarse salt
1/4 cup loosely packed inner celery leaves, roughly chopped
1/4 cup loosely packed fresh mint leaves, roughly chopped
1/4 cup loosely packed fresh cilantro leaves, roughly chopped
1/4 teaspoon ground coriander
1/2 pint cherry tomatoes, sliced in half
2 scallions, thinly sliced into rounds
2 teaspoons extra-virgin olive oil, plus more for the grill
3 tablespoons fresh lemon juice
Freshly ground pepper
4 tuna steaks (each 6 ounces and about 1 inch thick)

Steps:

  • Bring 2 cups water to a boil. Place the bulgur in a large heatproof bowl; cover with the boiling water. Add 1/4 teaspoon salt; stir just to combine, and cover tightly with plastic wrap. Let steam until tender but still slightly chewy, 22 to 25 minutes. If all the water has not been absorbed, drain the bulgur in a sieve, then return it to the dried bowl. Let cool. Using a fork, stir in the celery leaves, mint, cilantro, and coriander.
  • Make the cherry tomato salad: In a medium bowl, toss the tomatoes and scallions with the oil, lemon juice, and 1/4 teaspoon salt. Season with pepper. Set aside.
  • Heat a lightly oiled grill or grill pan over medium-high heat. Sprinkle both sides of each tuna steak with about 1/4 teaspoon salt; season evenly with pepper. Cook until the first side is seared with grill marks, 3 to 4 minutes. Flip the tuna, and cook 3 minutes more for medium-rare. Serve with herbed bulgur on the side and cherry tomato salad spooned on top.

1/4 cup fresh basil, chopped

1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
4 tuna steaks, 3/4 inch thick (6 to 8 ounce)
2 tablespoons olive oil

1 tablespoon lemon juice
1 tablespoon fresh thyme, chopped
1 teaspoon ginger, root peeled and grated

Steps:

  • Combine the topping ingredients in a small bowl; stir well. Cover and let it stand at room temperature at least 1 hour.
  • Place the tuna steaks in a large, heavy-duty, zip-lock plastic bag.
  • Combine 2 tbsp olive oil, and the next 6 ingredients in a small bowl; stir well. Pour the marinade mixture over the tuna steaks. Seal bag securely. Marinate in the refrigerator 30 minutes.
  • Remove the steaks from the marinade; discarding the marinade. Spray a grill basket with cooking spray, and place the steaks in the basket. Grill steaks, covered, over medium coals 5 minutes on each side or until fish flakes easily when tested with a fork.
  • Remove steaks to a serving platter and serve with the tomato topping.

1/2 cup extra virgin olive oil

  • In a medium bowl, stir together the tomatoes, olive oil, lemon juice, garlic and salt. Set aside for about 2 hours to allow the flavors to blend.

This dish takes me back to Pantelleria, a tiny volcanic island in the Mediterranean, situated between North Africa and Sicily. Undeveloped and relatively untouched by the modern world, the island is famous for two things: the caper bushes that dominate the dry, brush-covered hillsides of the rocky coast, and resident Giorgio Armani. My husband and I spent a magical week in that salt-drenched haven, eating grilled, freshly caught tuna; bowls of couscous; and salads of tomatoes, potatoes, and capers. The grilled tuna and the combination of tomatoes and potatoes in this dish are a tribute to those leisurely days on Pantelleria. And though rouille isn't part of their Moorish-meets-Italian culinary lexicon, I'm sure the Pantellerians would love this saffron-tinted, spicy pepper mayonnaise.

6 tuna steaks, 5 to 6 ounces each, about 1 inch thick
1 lemon, zested
1 chile de árbol, thinly sliced on the diagonal
1 tablespoon thyme leaves
1 tablespoon sliced flat-leaf parsley
2 tablespoons extra-virgin olive oil
1 tablespoon fleur de sel
1 tablespoon freshly cracked black pepper
2 ounces arugula, cleaned
2 tablespoons super-good extra-virgin olive oil

1 red bell pepper
1/2 teaspoon saffron threads
1 extra-large egg yolk
1/2 cup grapeseed oil
1/2 cup extra-virgin olive oil
1 small clove garlic
1/2 lemon, for juicing
Pinch cayenne pepper
Kosher salt and freshly ground black pepper
5 tablespoons extra-virgin olive oil
6 cups thinly sliced onions (about 1 1/2 pounds)
1 tablespoon thyme leaves
1 tablespoon unsalted butter
1 1/4 pounds Yukon Gold potatoes, peeled
1/2 cup heavy cream
2 1/4 pounds ripe tomatoes
1/4 cup sliced opal basil
Kosher salt and freshly ground black pepper

Steps:

  • Season the fish with the lemon zest, chile, thyme, and parsley. Cover, and refrigerate at least 4 hours.
  • Light the grill 30 to 40 minutes before cooking, and remove the fish from the refrigerator to come to room temperature.
  • When the coals are broken down, red, and glowing, brush the fish with olive oil, and season on both sides with fleur de sel and cracked black pepper. Grill the fish 2 to 3 minutes per side, rotating it once or twice. The tuna should be well seared but still rare.
  • Scatter the arugula onto a large platter and arrange the tuna on top. Squeeze some lemon juice over the fish, and then drizzle the fish with the super-good olive oil. Dollop each piece of fish with rouille, and serve the potato-tomato gratin and the rest of the rouille on the side.
  • Char the pepper on a medium-hot grill, on the burner of a gas stove, or in the broiler. Place the pepper in a small paper bag and close tightly. Let steam 15 minutes.
  • Toast the saffron in a small pan over medium heat until it just dries and becomes brittle. Be careful not to burn it.
  • Place the egg yolk in a stainless steel bowl. Begin to whisk in the grapeseed oil drop by drop, as slowly as you can bear. Once the mayonnaise has thickened and emulsified, you can add the remaining oils in a slow steady stream, whisking all the time. If the mixture gets too thick, add a drop or two of water.
  • Using a mortar and pestle, pound the saffron, garlic, and 1/2 teaspoon salt. Scrape every little bit of the mixture into the mayonnaise with a rubber spatula, and whisk to combine.
  • Peel the charred and steamed pepper carefully over a strainer. Do not run the pepper under water or you will lose some of the delicious juices. Remove the stem, seeds, and membranes.
  • Purée the pepper in a food processor until smooth. Fold it into the mayonnaise, and season with a healthy squeeze of lemon juice, a pinch of cayenne, and a pinch of black pepper. Taste for balance and seasoning.
  • Heat a large sauté pan or Dutch oven over high heat for 2 minutes. Swirl in 3 tablespoons olive oil, and add the onions, 1 teaspoon thyme, 1 teaspoon salt, and some pepper. Cook 6 minutes, stirring often, and then turn the heat down to medium. Add the butter, and cook 15 minutes, stirring and scraping with a wooden spoon, until the onions start to caramelize. Turn the heat down to low, and continue cooking for about 10 minutes, stirring often, until the onions are a deep golden brown. Remove the pan from the heat and set aside.
  • Preheat the oven to 350°F.
  • Use a mandoline to slice the potatoes into 1/8-inch-thick rounds. Toss them with the cream, 1 teaspoon thyme, 1 teaspoon salt, and some freshly ground black pepper.
  • Cut the tomatoes into 1/4-inch-thick slices, arrange them on a plate, and season them with 1 teaspoon salt and some pepper.
  • Place half the caramelized onions in an even layer in a 9-by-9-inch (or equivalent) gratin or baking dish. Arrange one layer of alternating potatoes and tomatoes on top of the onion layer. Drizzle with 2 tablespoons of the cream from the potatoes and 1 tablespoon olive oil. Season with 1/4 teaspoon salt, a healthy pinch of pepper, 1/2 teaspoon thyme, and half the basil.
  • Scatter the rest of the caramelized onions over the potatoes and tomatoes.
  • Arrange another layer of potatoes and tomatoes on top; make this layer pretty, because it will be the top of your gratin. Pour the remaining cream (from the potatoes) and remaining tablespoon olive oil over the potatoes and tomatoes. Season with 1/4 teaspoon salt, a pinch of pepper, the remaining 1/2 teaspoon thyme, and the remaining basil. Press the vegetables down with your fingers. The cream and oil will come up through the layers and coat the vegetables evenly.
  • Cover the baking dish tightly with aluminum foil. Bake about 2 hours, until the potatoes are tender when pierced. Remove the gratin from the oven and uncover it, being careful of the steam.
  • Turn the oven up to 450°F and return the gratin, uncovered, to the oven. Cook another 25 to 30 minutes, until the juices have thickened and the top is nice and golden brown (as in "gratinéed").
  • Season the tuna with the herbs and lemon zest in the morning. The gratin is easy to assemble but takes quite a while in the oven so start early. You can make it in advance and reheat just before serving. The rouille can be made a few hours before serving.
