½ head green or red cabbage, cored and cut into 1/2-inch-thick wedges
2 large apples - cored and sliced into thin wedges
5 tablespoons extra-virgin olive oil divided
1 ½ teaspoons kosher salt, divided
½ teaspoon black pepper, divided
2 (16 ounce) pork tenderloins
1 tablespoon coarse-grain Dijon-style mustard
2 tablespoons white wine vinegar
2 teaspoons honey
1 teaspoon chopped fresh thyme leaves
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Place 1 rack in center position and another 4 inches from broiler. Spray a rimmed sheet pan with cooking spray.
  • Toss together cabbage and apples with 3 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper on prepared sheet pan and arrange in an even layer.
  • Pat pork dry and season with remaining teaspoon salt and 1/4 teaspoon pepper. Whisk together remaining 2 tablespoons oil with mustard, vinegar, honey, and thyme in a small bowl. Spread over all sides of pork and set pork on top of cabbage and apples.
  • Roast on center rack until an instant-read thermometer inserted into center of thickest part of each tenderloin registers 130 degrees F, about 25 minutes.
  • Remove pan from oven and turn oven to broil. When broiler is hot, put pan on top rack and broil until pork has a golden-brown crust, thermometer registers 145 degrees F, and cabbage and apples have a light char, about 5 minutes. Cover pan loosely with foil and let pork rest 10 minutes before slicing. Serve pork warm with cabbage and apples, sprinkled with parsley (if using).

Dijon Pork Chops with Cabbage and Apples image

Pork chops, cabbage and apples are delicious staples of autumn and winter. Why not cook them all together on a single sheet pan for a fast and elegant dinner?

Yield 4-6 servings (one pork chop per person)

Number Of Ingredients 7

1 medium head of cabbage, cored and sliced into wedges or ribbons
Olive oil
Kosher salt, and freshly-ground pepper
2 red apples, such as 'Gala'
4 or 6 boneless, center-cut pork chops, each approx. 1-inch thick
Dijon mustard -- 1 generous teaspoon for each pork chop
Fresh or dried thyme

Steps:

  • Spray a large sheet pan with non-stick vegetable spray, and heat the oven to 425°F. Tip the ribbons or wedges of cabbage onto the sheet pan, and drizzle them with olive oil and a sprinkling of salt and pepper. Toss to coat. Core the apples, and cut them lengthwise in half. Then cut each half into quarters or eighths. Scattered the apples over the cabbage, and season them with olive oil, salt, and pepper. Roast in the preheated oven for 10 minutes.
  • Remove the pan from the oven, and arrange the pork chops between the apple wedges, and on top of the cabbage. Spread the top of each chop with the Dijon mustard. Then season each chop with salt, pepper, and a generous pinch of thyme. Roast in the oven for 15-20 minutes, or until the thickest part of a chop registers 145°F when poked with a meat thermometer. Don't overcook the chops! Let sit until juices recede -- about 5 minutes.
  • Serve hot, along with a bottle of chilled Sancerre.

4 center-cut pork chops, trimmed
4 teaspoons Dijon mustard
1/2 head red cabbage, cored and sliced
2 granny smith apples, appled peeled and grated
1/4 teaspoon salt
1 teaspoon canola oil
1 tablespoon canola oil
1 tablespoon fresh ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 tablespoon pure maple syrup
2 teaspoons cider vinegar

Steps:

  • Brush both sides of pork chops with mustard and set aside. Toss cabbage, grated apples, and salt in large bowl.
  • In large skillet with lid, warm 1 tsp of the oil over medium-low heat. Add ginger, cinnamon, and cloves. Stir 10-15 seconds until fragrant. Add cabbage-apple mixture and maple syrup. Stir, reduce heat to low, cover, and cook until ingredients are soft and cooked through, about 30 minutes.
  • Meanwhile, heat remaining 1 TB oil in heavy skillet over medium-high heat. Arrange pork in single layer. Cook, flipping halfway through, until no longer pink in the center, about 9 minutes.
  • Remove cover from cabbage, stir iin vinegar, and raise heat to medium. Cook until liquid mostly evaporates, 5 minutes.
  • Serve each chop with a mound of cabbage. Garnish with apple slices, if desired.

2 bones in pork chops, about 1 in (2.5 cm) thick
1 ½ teaspoons kosher salt
1 teaspoon black pepper

Steps:

  • Preheat the oven to 425°F (220°C) and grease a baking sheet with nonstick spray.

1 small head green cabbage (about 1-1/2 pounds)
1 small head red cabbage (about 1-1/2 pounds)
4 tablespoons whole grain Dijon mustard, divided
2 tablespoons light brown sugar
3 teaspoons kosher salt, divided
2-1/2 teaspoons pepper, divided
3 cups chicken stock
2 tablespoons olive oil, divided
1 large onion, halved and thinly sliced
4 garlic cloves, thinly sliced
3 large Granny Smith apples, quartered
1 fennel bulb, cored and cut into 1/4-inch slices
3 teaspoons rubbed sage
6 center-cut pork rib chops (1 inch thick and 8 ounces each)
2 tablespoons all-purpose flour

Steps:

  • Preheat oven to 375°. Core and cut each cabbage into 6 wedges. In a bowl, mix 2 tablespoons mustard, brown sugar, 1-1/2 teaspoons salt, 1 teaspoon pepper and stock., In a large Dutch oven, heat 1 tablespoon oil over medium-high heat; saute onion until lightly browned, 4-6 minutes. I found this recipe in a book from Hearts and Tummies Cookbook Co. called "Adaptable Apple." It can almost be a one-dish meal, and the flavors all go well together. My suggestion is to first season the pork chops however you like. The first time I made this I forgot to do that.

4 pork chops, cut 3/4 inches thick (or 1-1/4 lbs total)
1/2 cup water
1/2 small head of cabbage, shredded
2 tablespoons vinegar
1 tablespoon dijon-style mustard
1 1/2 teaspoons sugar
1/8 teaspoon caraway seed
2 apples, cored and cut into thin wedges
1/3 cup raisins

Steps:

  • Trim excess fat from chops and place on unheated broiler pan rack. Broil 5 inches from heat 20 to 25 minutes or until no longer pink, turning once.
  • In a large saucepan, bring water to boil. Add cabbage and cook uncovered for 3 minutes or until almost tender. Drain, return to saucepan.
  • In a small mixing bowl gradually combine vinegar and mustard. Stir in sugar, salt, caraway seed and a dash of pepper. Add apples and raisins, toss to coat. Add to cabbage, toss to mix. Cover and cook 2 to 3 minutes or until apples are crisp-tender and mixture is heated through.
  • Serve chops over cabbage and apple mixture.
