LEMONY FRUIT SALAD
When I was a teenager, I did all the cooking for my family of 10. I came up with this recipe when I was partway through making a different salad and discovered I didn't have all the ingredients.

Steps:
- For dressing, combine the sugar, lemon juice, zest and poppy seeds in a small saucepan. Cook over medium heat for 5-6 minutes or until sugar is dissolved, stirring occasionally. Remove from the heat; cool., In a large bowl, combine the apples, oranges, carrot and raisins. Add dressing and toss to coat. Cover and refrigerate for 4 hours. Serve in a lettuce-lined bowl if desired.

- In a small saucepan, combine the egg, sugar, lemon juice and butter; cook and stir over low heat for 5-7 minutes or until thickened. Cool. , Meanwhile, combine the pineapple, grapes, oranges and marshmallows in a small bowl; set aside. In a small bowl, beat cream and confectioners' sugar until soft peaks form. Fold into fruit mixture. Add cooled dressing. Chill for at least 1 hour.

This came from my grandmother, whose family owned a bakery. My grandmother's was the full-fat version and I didn't want to mess with perfection too much, so I only made a few healthier substitutions. - Pour milk into a large metal bowl; place mixer beaters in the bowl. Cover and refrigerate for at least 2 hours., In a small bowl, combine graham cracker crumbs and butter; set aside 1 tablespoon for topping. Press remaining crumb mixture into a 13-in. x 9-in. baking dish. Chill until set., Meanwhile, in a small bowl, dissolve gelatin in boiling water. Stir in lemon juice; cool., In another bowl, beat the cream cheese, sugar and vanilla until smooth. Add gelatin mixture and mix well. Beat evaporated milk until soft peaks form; fold into cream cheese mixture. Pour over crust. Sprinkle with reserved crumbs. Refrigerate for at least 2 hours before serving. Refrigerate leftovers.

DD#2 needed a quick, light "something" to take to a picnic an hour after she got home from work. I remembered reading a salad recipe with a package of pudding added so I opened the cupboard and started draining and dumping. She came home with an empty bowl and requested I make more for home. That's a good sign I think! (Cooking time is for refrigeration)

- In serving bowl, dump can of undrained pineapple.
- Pour pudding mix over and mix into juices.
- Set aside for 5 minutes to slightly set.
- Meanwhile drain oranges and cherries, patting dry if necessary.
- Mix into pineapple mixture along with marshmallows.
- Gently fold in cool whip.
- Refrigerate at least 30 minutes.

This is a wonderful tasting, easy salad. I forgot I needed to take a dish to a graduation party about 5 years ago, and was trying to figure out what I could do with the ingredients I had on hand. I found this recipe in quick cooking. Everyone raved and wanted the recipe, and I have been making it every since. This is easy to lighten calories by substituting FF SF pudding, light sour cream skim milk.

- Slice peaches into bite size pieces.
- In large bowl combine all fruit.
- Mix together gently, set aside.
- For Sauce:.

Steps:
- Combine fruit in a bowl.
- Use a mixture of fruit-- about 1/2 cup of each.
- For example: cut-up peaches, apricots, apples, melon, orange segments, blueberries, halved seedless grapes, quartered strawberries, etc.
- Combine water, sugar, cornstarch and lemon juice in a small saucepan.
- Stir to dissolve cornstarch.
- Over medium heat, bring to a boil, stirring constantly.
- Cook and stir for 1 minute longer.
- Remove from heat.
- Add lemon zest and vanilla.
- Allow sauce to cool for 15 minutes.
- Pour sauce over fruit.
- Mix well.
- Chill in fridge until serving time.
EASY FROZEN FRUIT SALAD/DESSERT
I have succesfully packed this in lunch boxes, and it has stayed frozen until lunch time, just remember to include a freezer pack.

- In a medium sized bowl, mix together the marshmallow creme and sour cream with a fork. Add the thoroughly drained mixed fruit and the bananas. Place in a 8x8 pan and place in the freezer. FROZEN FRUIT SALAD DESSERT
Like Capital-One, I don't leave home without it. For family or church gatherings, there's always a couple of requests for this oh-so-easy salad/dessert. Be mindful, though...it really freezes up and does take some time to thaw out enough to enjoy the full-bodied flavor. After all the times I've made it, though, I almost always forget to bring it out early as a salad. Sooo, once the meal is over I present it as dessert!!

- Spread evenly in 13x9x2 baking pan.
